Help! Ideas for intense cardio with limited Ankle mobility

Every day Im always consistently short 1500-2000 mg short on potassium levels and I can only eat so many bananas without passing my sugar goal. after 2 months of steady weight loss, I go to the gym and weigh in after my workout and I gained 2 pounds! and I've been staying strict with my calories and exercise! is it possible I put on 2 pounds of muscle in a week? oh well, I'm thinking to step up the cardio or drop the calories a little more.
