Substitutions for cornmeal or corn muffin mix
I have a casserole recipe. It is an original recipe. It is: Ground beef cooked with peppers and onions, a layer of pepper jack cheese, a layer of black beans, and a cornbread topping I usually just use corn muffin mix for the topping, but I would like to find a healthier substitution and I am looking for suggestions.

I want to build more muscle AND burn fat. I strength train 3 days a week and do cardio daily. I used to keep a deep calorie deficit, but I find that to be ineffective now that I am strength training so much. Should I eat a calorie surplus on my training days and/or avoid cardio?
