Howdy y'all. It's fabulous Friday!
I often use tofu that is a month past the "best by" date and it's no problem. I absolutely wouldn't worry about using it just a day or two after.
Supposed to be fairly nice today too. Should be a good day at the salt races!

Howdy y'all. Been up for a little over an hour. Woke up with a slight cramp in the left hip, just below the groin. Unusual place for me to cramp but I got on up and walked it and it went away pretty quickly. It wasn't all that terrible to begin with but I didn't want to lay there and let it get worse, as it would have!
Fed Lilo and and then I breakfasted on leftover "Trashy Tuna Casserole" that I made for last night's dinner. And there's still just a tad more than half the casserole left!
One regular size package of instant mac and cheese.
One LARGE can (double size) flake light tuna (in water). Yes, this IS double the protein of the "usual" recipe.
Half a bag frozen peas and carrots.
About half a cup diced sweet onion.
One half stick butter.
About a cup (plus or minus) milk. Add more if needed, remember this will dry out some in the oven.
One can condensed cream of mushroom soup.
Salt and pepper to taste.
About a cup, maybe cup and a half (plus or minus, whatever...) crushed potato chips, preferably rippled, as this has more crunch.
Preheat oven to 350.
Prepare a large casserole dish, spraying with cooking spray
Prepare the mac and cheese, as directed, with the MINIMUM cooking time for the macaroni, using the butter and some of the milk. Stir in the peas and carrots, the onion, the tuna, broken up, (no need to drain, there's not THAT much water in there anyway), the condensed soup, the remaining milk, and mix well, adding salt and pepper if desired. I added just a little bit of pepper and allowed for adjusting the salt and pepper after serving, which worked out well.
Pour all of the mixture into the prepared dish and smooth out the top. Sprinkle the crushed potato chips on top evenly. Bake, lightly covered with foil, for half an hour or so, then uncover and bake for an additional 20 to 30 minutes to brown the topping. The casserole should be nice and bubbly.
Remove from oven and let stand for 5 to 10 minutes and serve hot.
Serves a bunch!
Try to limit yourself to only one serving at a time...

Howdy y'all. It's scintillating Sunday! Need to do laundry today, and maybe get out there and plant a blueberry bush that has been in a pot since last year at least. Also need to think about cooking that big bunch of asparagus that arrived in the CSA box Friday, and make a big salad out of the Romaine and the tomatoes.
Finished off the tuna casserole for breakfast. D did eat some of it last night. Quite a bit, in fact, which helped eliminate it a bit faster. I didn't eat any of it last night as I had already consumed some spicy salmon fried rice at a nice restaurant.

Leek pie sounds delicious! Recipe please? I got the blueberry bush (gift from friends) planted near the other blueberry bushes I bought a few years ago, and the first load of laundry is nearly dry. Lunch/snack was some Morningstar Farms Garden Veggie Nuggets, with some sauce I made from Kroger Classic Whip (in lieu of Miracle Whip), sriracha, and a little super hot ghost pepper ketchup (made by a fried) and just a drop or two of sweetener.
It was our first time eating them and we liked them. I will probably buy them again.

Howdy y'all. Off to the Orchid Society meeting soon. My blueberries do OK, but would do much better if the $%^& deer would leave them alone. They like to munch the leaves. If I spray them with stinky fox urine stuff it helps with the deer. I stop before they fruit when I remember to do that though.
Blackberries are blooming nicely right now, so I hope to have enough of those to make a small bowl or jar of refrigerator jam or the like, as I did last year.
As for the NS tuna casserole. Gave it two fair tries. It was one of the dishes MOST DIFFICULT to make into anything anyone would actually want to eat...was surprised it stayed available so long. They dropped the tasty tomato soup but not the icky tuna casserole, and tuna salad, come to that, (at the time anyway)? What were they thinking?

Sweet Spanish or Maui Maui? I think you're more likely to encounter the Sweet Spanish at the grocery.
Then there are some sweet red and sweet white onions but it's hard to tell if they're not marked. Most yellow onions are suitable, some more so than others.
And, after cooking, most all onions are sweet!

Tagging yesterday wasn't too bad. Just a few tags for inside and one BIG pump topper for outside.

Howdy y'all. It's fabulous Friday! Supposed to be a nice day, with a small chance of rain. As the whole house is going through a second round of what we fondly call "crud" and am on the fourth day or so and taking Mucinex DM 12 hour caplets twice a day to help control the cough. It sorta works, most of the time...

Yay! Friday work is done, lunch is eaten, and nap is pending. Right now Lilo is busy watching J eat his lunch so I need to wait until that is no longer interesting (as in he's done) before we go for our nap. LOL!
My CSA box was at the front door when I got home. My usual 5 bananas, some lettuce, tomatoes, two Pink Lady apples this week, two avocados (*YAY*), 4 green kiwi fruit, a cucumber (they repeat on me, but J likes them), some young, tender, green beans (looking forward to that! They look really nice too), some broccoli crowns, two small/medium red bell peppers, and a HUGE rutabaga, which will be very nice cut up and roasted with spicy seasoning.
I think J is about done so it's almost nap time!

Howdy y'all. It's sensational Saturday! My head didn't explode during the night so I guess I'll survive. Lilo has been fed. I've been fed. Lilo is busy playing with a moth in the kitchen, so my lap is free.
I take it NS will just provide a credit on the next order for the missing item? That was usually what they offered me first, rather than replacing it, as a credit is MUCH easier for them.
I also remember them making some really bizarre substitutions at times. Once I ordered a "Chocolate Lovers" dessert/snack sampler type selection, supposed to all be chocolate snacks and desserts. They were out of one of the items and substituted the old NS sliced ham lunch entree instead.
I thought that was a pretty strange item to sub for a snack/dessert but I didn't actually mind as I LOVED the old NS sliced ham, and it was a package that was actually supposed to be three lunch entrees in one, though it was only counted as one in the packing, so you got a couple of extra lunches or proteins in it. It was a bit salty, but I liked the taste and could use two slices instead of one, with my whole grain, low carb bread to have a WHOLE sandwich for lunch, utilizing the second slice of ham as the protein add-in, and saving the third slice for my breakfast protein add-in the next day. That ham was a good deal. So of course it was discontinued shortly after I joined...like too many of my favorites.
They changed the recipe on the zesty snack mix too, from an original recipe that I really loved, to one coated in some glop that was sort of OK, and still crunchy, supposedly to help keep you full or satisfied longer, but I didn't care so much for the new texture and taste so it ceased to be a favorite snack.
I understand trying to improve the foods and make things more satisfying, but if it ain't broke, don't fix it!
Well, J is off to Asheville for an orchid show, and my head is threatening to explode again. Computer is hard with this cold/flu/whatever bug so I'll likely get back into bed in a bit.

Hi Folks,
Bouncing back in for a few minutes. In one week and two days I hope to be able to spend more time here. As of April 26 (I know...that is one week and 3 days, but then it is the day after my deadline), I will be done - yes completely done - my course work for my doctorate. Woo hoo! No more weekly assignments. I have completed a good portion of my dissertation proposal (one of the things that is keeping me away from your smiling faces). I hope to have that completely done in 1-2 weeks (first draft), and submit that for feedback from my committee. And, if things go as I hope, do my dissertation in one year. Then I can play here lots more! And then just my regular work that I always have...
So, yes, I do miss you folks, miss reading about all the fun and challenging things you share. I learn so much from everyone. Hope to catch up more in a couple of weeks.

Howdy y'all. It's scintillating Sunday! Head still feels like it might explode, so won't stay up too long. Was running a low grade fever when I went to bed. As of last check this morning, no fever but then I DID take some painkiller fever reducer before bed and it might still be working. I do need to try to get some laundry done today. Other than that, I think just more rest and recovery.

Howdy y'all. It's terrific Tuesday! One usually feels better in the morning if sleep went OK. We'll see how it feels later in the day. I've been using a minimum of cough suppressant/expectorant as I HATE how that stuff makes me feel. I only use it when absolutely necessary. Don't understand how young folks can deliberately take that stuff to get high. It doesn't get me high, just feels like I've been run over a couple of times and left to die. I'd generally rather suffer the cold/flu but sometimes you just have to take stuff to get to breathe and get any sleep.
Anyway, off to the rat mines! Supposed to get quite warm today.

Good Morning Folks,
Well, I want to sleep later, but I just keep waking up no later than 5. I keep promising Marc I won't get up so early (so I am not so tired early at night)...but I guess I just have to accept I am a morning person.
Still playing boomerang with these 5 pounds. And I am not winning at it! My exercise is walking, but I have let slack off horribly. I went from 1 hour every morning to 1/2 hour about 3-4 times a week...in the warm weather. I also still recall my success at doing P90X. But those days (years) are past. I have to build back up, since my work has kept me so busy sitting and reading.
Looks to be warm here, but maybe a bit rainy later. Better get moving early.

Howdy y'all. It's sensational Saturday! Been awake since about ten after four, though I did try to doze a bit longer after a brief bathroom visit. Lilo didn't help by getting up in my face and purring, though she did eventually settle back down. I finally gave it up and got out of bed at 5:00.
Lilo has been fed, I've been fed, the leftover pot roast from last night's dinner has been converted into beef stew which will likely be today's lunch AND dinner. I put one cup of a nice, very dark red California wine into the slow cooker with all the rest of food when I started it yesterday, and it made a really, delicious, dark and tasty gravy, after cooking several hours with all the rest of the liquids and dry ingredients.
The rest of the bottle of wine was served with dinner and was all consumed by the end of the evening.
Today is going to be a lazy day. Because I deserve one.

Hi All,
Cool, rainy day here, but got in 2 miles for a walk before the rain started in a steady state...just a drizzle a few hours back when I was out walking. Last night was a tough one...the Seder, with LOTS of food. I don't recall there being so many good great tasting Passover desserts. I have been making several Passover chocolate chip cakes, a recipe that goes back a couple of generations in the family. The good news is that I have been baking so many of them (and giving them to my kids, including sending one to the west coast), that I think I am now a bit tired of the flavor. So I am no longer interested in eating the cake right now.
Val, you and I definitely have to work back to getting our muscles tone. Roger, you are correct that sitting around is generally so bad for health! Maybe Val and I can have a friendly challenge to "bulk up."

Howdy y'all. It's scintillating Sunday! As usual, couldn't sleep very late, but best to stay close to the weekly work schedule anyway so it's easier to get up obscenely early tomorrow.
If J had come home yesterday, as he supposedly planned, I'd be doing laundry today, but he stayed another night. I, of course, anticipated that this would be the case (one DOES learn something from living with someone for 21+ years) and watered the plants that he'd said would "be ok until he came home on Saturday" and will water the indoor solarium today.
Laundry isn't that much without his clothing that's with him, so I'll wait. I could use another fairly lazy day anyway.

Tell me...are we in spring yet? At 44 degrees outside right now, I am willing to wait a few hours for a walk. It is supposed to get into the mid to upper 60s later...still, is this spring??
Roger, thanks for the Passover food history lesson. I will have to check the brands the next time I am at the market. I made one last cake for my youngest daughter. My husband broke into her cake the other day, and now it is almost gone. She wasn't too happy about getting a "used" cake. Hers is now in the freezer, awaiting her arrival to take it!

I decided to make a "big" grocery run this morning, since I didn't really have anything else to do. I would have eventually picked up everything, a few items at a time, shopping before coming home from work, but don't like to take the time for a "big" run after work, as I want to get home, eat lunch, and take my afternoon nap.
I had a pretty full cart, but a large chunk of that was paper goods. An 8 pack of mega rolls of paper towels fills about a third of the cart by itself. Add TP and some paper plates, plastic glasses, and you're halfway full.
Still have wine (for me, but I've actually got plenty on hand...just want to fill the wine rack) and Mountain Dew Throwback (for J. I don't drink that nasty stuff. Blech!) but I can pick them up after work tomorrow. There wasn't enough of the Dew to get the "3-for" discount today and it was too early to buy wine on a Sunday. I think I want to go to Trader Joe's for the wine anyway.
So...if I feel like getting BACK out this afternoon, may make the TJ's run but I doubt it.
I will probably make lunch in a bit and then ponder a nap!

Ahhh, car washing! I have very fond memories of car wash water fights with my siblings as I was growing up. Today? Car washes are much more utilitarian. Actually, tomorrow I plan to do a long work day at home starting around 7-ish, then, when it warms up to about 80 (please!), I am looking to get out and wash the truck camper. I have been doing inside cleaning and sanitizing the water system. Camping season is here, and I want to go!0
