    Howdy y'all. It's wonderful Wednesday! Working a 6 hour close tonight, and the last 4 hours I WILL have the returning guy with me, unlike last night. So I can kind of take it easy and let him do the till while I make sure he still knows how to do all the side work.

    We had a LOT of rain between Monday night and last night. I started looking for gopherwood last night!

    Howdy y'all. It's thrilling Thursday!

    I've completed most of a rather grueling 2 weeks at work, what with the boss's brother dying and one of the other employees on vacation. I've got today off. There are actually a few more days of the other employee's vacation but the boss is back and we're training a returning employee who worked with us last summer so he'll be replacing the one who is permanently leaving next week.

    So, since I have the day off, it's laundry day, and it's barbecue day! I soaked some great northern beans overnight and I've got some thermonuclear baked beans going in a small slow cooker, and some boneless pork ribs, with a little seasoning, going in another slow cooker.

    I've whipped up a decent sized bowl of my dad style, *kitten* kicking (much more *kitten* kicking than what he usually made), barbecue sauce, got ingredients for deviled eggs, potato salad, stir fried cole slaw and some tofu to barbecue for J.

    Dinner will be ready in 8 or 9 hours...

    Breakfast was some baked perch, seasoned with Italian seasoning, salt, pepper, and paprika. High fiber, low carb toast on the side.

    Finishing second cup of tea now, since I've finally got everything going in the kitchen.

    Your breakfast sounds tasty to me Val! You know I'm one of those "eat anything for any meal" type of people because food is food, and it doesn't matter what "official" meal it is.

    My baked beans and ribs are beginning to smell WONDERFUL but dinner is still some hours away, so I'll just have to cope. The last load of laundry is in the dryer, and I may hear the bed calling me for a nap, if only to get further away from the kitchen where I'm smelling the wonderful smells of food! Our office space is right next door to the kitchen, as is the laundry room, and I have to go THROUGH the kitchen to get from one to the other, so it's not been easy to get away from the smell, as yet.

    Glug, glug...that's the sound of me resurfacing! So nice that I am noticed when not around!

    Val, you are correct: Marc and I were out and about camping. Wild yes...woolies, no. It has been quite warm and lovely here. We just got back yesterday afternoon and I am leaving this morning for the weekend again...for a ladies only camping gathering. Staying at a very "fancy" campground (full hook-ups, including cable). This isn't my usual place to "camp" (it is tough to call this camping), but I wanted to meet this group of camping ladies...I'll let you know if it was worth it...after the weekend!

    Going back to the NS decision, I have to wonder what the long-term plan is. As far as demographics and money, don't the younger (18-whatever) folks have less disposable income for unnecessaries/luxuries, like NS? I would think the older folks might be better to go after (but not yet on Social Security/fixed incomes). I guess I will never make it in predicting the future of businesses!

    Enjoy the day folks...and Val, are you now completely, officially retired, or did I read that wrong??

    Howdy y'all. It's fantastic Friday! Working that long middle today. School is out so no telling just yet how busy it will be but we've been pretty busy on weekends so I expect it will be so.

    Had some leftover ribs and baked beans for breakfast. Just a drizzle of my face melting barbecue sauce on the meat.

    Howdy y'all. It's sensational Saturday! Working a short close tonight, just 6:30 to 11:30. Hardly seems worth driving to work for, does it? Fortunately it's a short drive.

    Had some leftover barbecue and baked beans for breakfast. Yum!

    And I've set out some chicken breasts to make chicken marsala soon. Like maybe tomorrow night?

    Ed, 5 hour shifts are kinda nice! Gets you up and moving, and you get to leave before you're tired and cranky. (not that I think you'd be cranky…I do get cranky when I'm tired.)

    NeNe1125 Hi! You're so right, Roger's cartoons are great! Its good to see you here, hope you can hop right into our little discussions more often! How old are your grands? Mine are growing up so fast…the 'babies' are now 11 and 9 years old…time does fly!

    Speaking of camping...........I got back last night from my first camp out of the season on Hermit Island. The weather was great. This is my campsite with my Jeep and the body of water on the other side of the trees is
    the Atlantic Ocean. Beautiful weekend, lots of fun. Going out again next weekend to Vermont for two nights, likely in the Jeep too. Raining pretty hard right now, glad I'm not out there now. Have a good Sunday all!

    Happy Rainy Monday,
    It's cold and wet here this morning, getting ready to go to work. It's going to be a rugged day there as I've all ready seen the preview. The BBQ at the Rally was a huge hit........the guy that won the smoker last year in a raffle brought his and we had small chicken dinner one night and then prepared ribs and chicken for lunch on Saturday. Everyone raved about how good it was, so my friend and I are BBQ Rock Stars of our club currently. I'm watching the weather in the Vemont/NH border area for my next trip at the end of the week. A more somber affair this time as I'm going to my Daughter's memorial service. Have a good Monday all!

    Howdy y'all It's magnificent Monday! Closing tonight (6 hours) so not too bad. May go back to bed in a bit for a nap. Lilo is fed but hasn't yet discovered that and is busy with her important nap time in my lap. I have a headache that I strongly suspect is weather related, so may take a pill for that shortly too.

    If my chicken is thawed enough I may go ahead and make some slow cooker chicken marsala so I'll just have to warm it up for a few meals. If not, I will make the dish tomorrow, slow cooker or regular, and still just have to warm it up for a few meals.

    Cenandra! So good to see you here! I can't find my way around MFP (even t hough I used it forever for logging food), and couldn't find you!
    Early morning folks...please say hi to a NS friend...Cenendra! We were on one of the NS forums together...but clearly, I am bad at finding folks here!

    Don, nice looking Jeep and campground! Looks like a great place to go. You are a better man than I...I like the luxuries of a bed I don't have to get up from in the middle of the night to be able to use an indoor toilet (albeit it marine style one). Especially in the rain...been there, done that!

    Had a lovely week of different camping locations. Marc and I spent a night in a NJ state park, the only ones there, no hook ups, very treed and quiet. And then found the pesky, tiny tick stuck to me days later...based on its size, it is one that would carry Lyme disease. So I am probably going to check with the doc later today about an antibiotic. Then over the weekend I was camping in PA with ladies only. It was a hoot!

    Ed and Kat, we had an old treadle Singer machine when I was growing up. I don't recall it ever working, but I definitely played with the treadle. And I know my grandmother was an excellent seamstress, so it was well used.

    Rainy here too. I can use the lousy weather...I have lots of work to do! If it were decent outside, I might be tempted to run away in the truck camper.

    Well, my chicken breasts were thawed so I went ahead with making slow cooker chicken marsala. It's all in the cooker now, set on high so that around noon to one, it should be ready. All I should need to do is make a noodle or mashed potato to go with it and thicken up the sauce a bit, after adjusting seasoning to taste.

    Garlic, chicken, pepper, olive oil, rosemary, marjoram, Spike(tm) seasoning, salted marsala cooking wine, and a couple of handfuls of mushroom slices. It might need more salt and pepper but that can be adjusted at table or when thickening the sauce at the end.

    Finally woke up early enough to post!
    Roger ........ Thinking of you and hoping you are getting dried out.
    Kat..........this is the first year that my knees have not allowed me to garden. I'm not even able to get on the john Deere and I love to cut our 3 acres. I'm getting better...walking 10 minutes a day on flat ground. I will get back my flowers!
    Don......so sorry for the loss of your daughter. I can not even imagine that kind of pain. Prayers for your family.

    Howdy imaginary internet friends! It's terrific Tuesday! I'm off work today, and am pondering a Trader Joe's run, as the bottom part of my wine cellar refrigerator is down to just ONE BOTTLE and can hold eleven more. The one bottle in there is a $60 bottle of California Pinot Noir that was a recent gift from a friend, and it's waiting (but not too long) for a really SPECIAL meal before I open it up. For me if the wine costs much more than about $10 I am eyeing it warily as I have serious doubts about the quality being THAT much better to make it worth the cost of my buying it, but gifts are always gratefully accepted. This same friend also sent me a $40 bottle of California Chardonnay that is in the top, cooler part of my wine cellar refrigerator, also awaiting a SPECIAL meal, though it nearly got opened to go with chicken marsala. Maybe I'll make some pork marsala soon and crack it open then.

    Needless to say, I do want more from TJ's than just wine, as I have a short list of other things to pick up there and almost always find interesting things that are either new or forgotten so spend more than I intended to, but I love most of their stuff.

    Lunch today will be leftover chicken marsala. Dinner tonight will probably be plain old hamburger steak, definitely NOT worthy of a $60 bottle of Pinot Noir. Might get a little bit of laundry done today too.

    Well, I made the TJ's run. Nothing terribly expensive, and one item on J's wish list wasn't there. Maybe it's seasonal or maybe they just don't make it any more, but I'll leave it on the list for now. I got three grinder bottles of their South African Smoke seasoning as our friend G, who introduced us to it, says it's only available in the Spring. I also got one grinder bottle of their smoked ghost peppers which should be GREAT on certain foods as long as one doesn't mind melting one's face. ;) As anyone can see from the wine selection, I'm certainly not a wine snob...

    I know...it's not early morning. Can I just say I am early for tomorrow?

    Ed, how was the chicken marsala? Do you just put it in the crock pot with some marsala wine? Maybe some mushrooms? If that would work...it sounds easy and tasty.

    Roger...we were lucky, no flooding where I live. But I saw the link yo posted about the fish. Wow! And how is your basement? Dried out?

    Nene, I am n to sure I met you before. Nice to see you here (or are you the same person with a different name from the NS site?).

    Val, I know what you mean about missing exercising...I have not done a walk in several days. Marc and I did a 7 mile hike last week...and that was my last walk! I was ready to go today, then when I went out, it was raining!

    Don...how's everything there?

    For me? Hoping to get out on a camping trip by Thursday. Although most of my students have finished for the semester, I still have office hours (tweaking syllabi, etc.) to do. Plus I have my own course work to do...it is a shame work interferes with camping!

    There are about as many ways of making chicken marsala as there are people who cook it. My "usual" way is to cut the chicken breast into bite size pieces, dredge them in seasoned flour (salt, pepper, whatever herbs I'm using this time, usually at least rosemary and maybe marjoram too), fry them in a little bit of olive oil or butter, just until browned and done, then set them aside while browning garlic and cooking the mushrooms, just until soft. Then I add marsala wine and, perhaps, chicken broth and reduce it, thicken it, and add the chicken back in.

    For the slow cooker version, I went MUCH easier. I put two large, whole chicken breasts (boneless and skinless) on top of a few cloves of minced garlic, on the bottom of a lightly sprayed, two quart slow cooker. then sprinkled the chicken with my herbs and pepper. No salt since I was using salted cooking wine, which I then poured around the chicken edges and between, to not quite cover the chicken. Tossed in a couple handfuls of sliced white mushrooms and turned it on high for just over 3 hours.

    When it was done, I removed the chicken and set it aside while I thickened the sauce in the cooker, then served the chicken with the sauce on top of it.

    Easy and tasty! Chicken marsala is one of my "go to" dishes when I want something that looks and sounds fancy, but is really easy to make. It's also one of my favorite dishes so I sometimes make it just because! :)

    Pre-dinner tonight: Stilton with ginger and mango, buttery flavored crackers, wine. J had a pink moscato with raspberry, I had Chamisal Vineyards 2013 Edna Valley Califa Chardonnay, Estate Bottled, which was a gift from a good friend. Delicious, fruity, and quite pleasantly dry! Still half the bottle left but I have doubts whether it will survive the evening...And I still have to figure out just what I can reciprocate with, but I'll eventually come up with something. :)

    Dinner tonight:
    Baked tilapia, seasoned with salt, pepper, rosemary, Spike(tm) and paprika. (shared with the boarder, D, who just can't DEAL with a lot of mushrooms in a dish, like chicken marsala, which I refuse to make without the signature mushrooms!)
    Crispy Potato Stix, from frozen. A few leftover peas and carrots from the other night.

    For J:
    Baked egg and cheese frittata.

    Good Morning Folks (ahhhh, still morning!),

    I was getting ready to go out walking, then heard what sounds like a tap-tap-tapping on my window pane. I have done enough rainy walks and no longer want to do them. That, plus I am getting lazy, so I may just wait it out. I am not going to any office today and no pressure to do work right now, so I can go later (if I am not lazy then!).

    Ed, the marsala dinner sounds quick and relish. I am thinking I will give it a try. One question: do you buy marsala cooking wine, or do you get the real stuff (drinking wine)? I have heard you should use the same quality for cooking as for drinking, but I am not an expert on either.

    Roger, good strategy having breakfast before the bagel shop. Me? I'd have to skip the shop altogether! And going back a few days to my earlier comment about whether NS is a luxury, I agree with you that good health is a necessity, not a luxury. What I see as the luxury is the meter to get there...NS. It worked for me, but it also cost a bit of money to do that.

    Don, out riding and camping right now? Rain up there?

    Val, funny about getting up early unnecessarily for the work you no longer had to do. Are you used to that yet? I spent last weekend with a group of ladies camping, most of whom were retired. The retirees kept telling me how much they love being retired. Sounds wonderful!

    Cenandra, good to see you back here. You maintenance longevity is inspiring. In many ways maintenance is so much more challenging than the losing. And thanks for the links to the other threads. I may stumble over there.

    Try to stay dry folks. Lots of home work (not homework) to do today...too many camping trips and work keeping me from the house!

    Hi Everyone, Happy Thursday.
    I'm out of work through the end of the week and running around trying to get things reads for my trip to Vermont early tomorrow morning. I'm taking the Jeep and camping on the Connecticut River on the NH side on Friday and Saturday night, so I need to get my gear together today so I can get up and take off. I ran into a problem with the driver's door on my new Jeep, so it's going in to get fixed this morning under warranty. I need to mow the grass before I go and I'm planning to do that while my car is in the shop. I'm going to my Daughter's memorial service on Saturday and so I'm not really looking at this as a joy ride. I'm planning to meet my sister in Vermont for breakfast tomorrow morning before heading north to where I'll be staying. They have wifi where I'm going so I should be "on the grid".     Howdy y'all. It's thrilling Thursday! Off today so I have a boneless half ham in the slow cooker with a little honey drizzle, some rosemary and black pepper. That will be several future meals. But while it's cooking I'll just eat up other things, like the pork chops I have in the toaster oven.

    Been up for a while but distracted by the usual, though I managed to avoid Lilo Lap Time so far.

    Val, I think at one time or another I've eaten all of those melons (well, not all at once) but regardless I'd say life is too short to not just GO FOR IT and buy one of each!

    I've done it both ways, and it's all good. Marsala is not one of my favorite drinking wines so it's very rare for me to actually buy the drinking version, though I have in the past done so, just for cooking. The problem is that you then have to use it up within a week or so, once opened, and it's quite a bit of wine to be cooking with if you're not drinking it! Leftover wine left long enough can make a fantastic vinegar though, but the timing on that can be tricky too.

    In all fairness, one CAN fudge when making chicken marsala and use just about any other white wine, but to me that's not REALLY chicken marsala, is it? It would be chicken chardonnay or chicken pinot grigiot or chicken sauvignon blanc, or whatever...so I've mostly bought the cooking wine in recent years. I use some of it for the chicken marsala, some for a nice sauce for fish or pork, and it gets used up over a reasonably short period.

    Having said THAT, though, I have also done various wine sauces made using whatever wine I was planning to drink with the meal. Just like Julia Child, a little wine for the dish, and a little wine for the chef!

    You just have to remember that the cooking wine is very salty (so that it keeps a bit better than drinking wine) and it's best to not salt the dish at all until after cooking if using that.

    Ed, thanks for the wine cooking lesson. I picked up the chicken, mushrooms, and a battle of sweet marsala wine yesterday. According to the wine store fellow, sweet is the desired type (vs dry) for chicken marsala. I see tonight's dinner!

    Don, it does sound like the next few days will be a mix of emotions for you. I am sending my thoughts to you during the memorial service for your daughter.

    Val, I guess there is something to be said not to be a big sports fan! I had no idea of all the competing events going on. I do know my husband has been keeping up with the French Open (tennis) and is still going on...add that to your list!

    Roger, yes I am in NJ (and I do apologize for that!). We have had rain off and on this week. I am waiting for us to get out of the rain doldrums! Val mentioned apps for walking. I use Map My Walk at times, but it tracks as I walk. I did not know I could run my finger around a map to get the mileage (there are times I don't start the app). They are definitely free.

    Cenandra, good morning to you. Still working my way around here. I will try to use your links...one of these days...for the other threads.

    Sweet would be correct for making chicken marsala. You can use dry, but you would then want to add a little sugar to the dish to compensate for the lack of sweetness. The dish should not be SWEEEEEEEEEEEEET but should have enough sweetness to compensate for the slight sour the dry wine can sometimes impart when cooked. Since you're using drinking wine, you may want to put some salt in the dish while cooking, leaving room to adjust at the end of course...

    Hi Folks,
    FYI (to Ed), the chicken marsala was delicious! My husband...who insisted he didn't want dinners...had 2 servings. So easy in the crock pot.
    If anyone else here is not a cook - much like I am not - this is a seriously easy way to make a great dinner. I added a bit of corn starch mixed into cold wine during the last half hour of cooking just to thicken the sauce. I will try variation of this in the future.

    Howdy imaginary internet friends! It's sensational Saturday! I've been up for a while but distracted by breakfast, feeding Lilo, and paying bills.

    Working a six hour middle today, so it shouldn't be TOO bad. It was very busy yesterday, and is supposed to be around 90 degrees today so that may slow it down a bit. Still working on my slow cooked honey rosemary ham from the other day, and still enjoying it.

    I'm so glad that worked out for you. Mine are always "variations" as I don't necessarily use the same herbs, or the same type of mushrooms, nor do I measure out my herbs, wine, and/or chicken broth, etc. It's always good, though. My chicken marsala is, of course, all eaten up by now. I also make the same recipe with pork and it can be made with veal, except I don't buy veal. I will eat it if placed in front of me, but don't choose it myself.

    Another great crockpot recipe, using chicken is coq au vin. That one I make using boneless, skinless chicken thighs, as it uses red wine, which is a bit robust in flavor for chicken breasts. The beef version of that one is beef bourguignon, or beef burgundy, with very similar ingredients but beef instead of chicken. All of these include mushrooms. Needless to say most of my favorites include mushrooms, LOTS of mushrooms, though I'm not crazy enough to scavenge my own, as I'd like to eat them more than once, thanks...

    I truly believe that anyone can become a good cook with a little effort and a well stocked kitchen, food AND appliances, that is. Now a truly great cook can get by without most of the appliances but I'm not quite ready to try to achieve that much greatness.

    Val, I had to giggle about your friend being appalled at eating the weeds. I've eaten weeds most of my adult life, with the caveat, of course, that one only eats weeds one is VERY SURE OF. She may not even realize that many garden favorites were once weeds too!
