    Zucchini Ravioli with spinach chopped salad :)

    Filling: Ricotta, parmesan, egg, and fresh basil. Seasoned with salt and pepper.
    Topping: Marinara, mozzarella, parmesan, sliced tomatoes, fresh basil
    Salad: spinach, mozzarella, parmesan, tomatoes, carrots, red onions tossed with balsamic vinaigrette

    The base is made from Aldi's German style "spekulatius" spiced biscuits ground up then mixed with melted butter. The cheese cake layer is a mix of cream cheese and cream with a teaspoon of gelatin. Topping is passion fruit pulp (comes in a can). Overall it was yummy but I learnt not to freeze it because when it defrosts the biscuit base goes soggy. I was just in too much of a hurry to eat it!

    Twice Baked Cauliflower...this is delicious. My youngest son hates cauliflower but he had no idea this was not made from potato! Sorry for the half empty bowl but the fam dug into it before I could take a pic!

    Thank you! The kids loved them :)

    Fairly straight forward if you have previously made cheesecakes. I use a butter scoop to create the cheesecake balls, roll them in the graham crackers and then pipe in the raspberry sauce :)

    Make the Graham Cracker Crust
    Bake NY Cheesecake
    Make Raspberry sauce
    After the cheesecake has cooled, scoop out the balls, roll in the crust and place on a tray
    Chill in the fridge for 60 minutes
    Fill with Raspberry sauce


    Raspberry sauce
    • 2 cups Raspberries
    • Juice from 1 lemon
    • 1 tbl sugar
    • 1/2 cup of water

    Add the water, lemon juice and sugar to a pot. Just want to make sure the sugar dissolves and then add the raspberries. Bring to boil and then reduce for 25 minutes. Pour the sauce through a wire strainer to remove the seeds.

    Graham cracker crust and then break it up in a bowl
    • 1.5 cups gram crackers
    • 1/3 cup butter
    • 1/4 cup sugar

    Preheat oven to 350˚
    Mix together and put in 9" deep pie pan
    Cook for 14 minutes

    NY Cheesecake
    • 3 (8 ounce) packages cream cheese, room temperature
    • 4 eggs, room temperature
    • 1 tablespoon vanilla extract
    • 1 Cup of sugar
    • 1 Teaspoon cream of tartar. You can substitute fresh lemon juice if you do not have it.


    In a large bowl, mix together the cream cheese and sugar with an electric mixer until smooth.
    Blend in the eggs, 1 tablespoon of vanilla, and cream of tartar. Pour over the pie crust.
    Bake in preheated oven until the center is set, about 50 minutes. Allow to cool on counter for 1-2 hours.

    I made a low carb version of my grandmother's rice casserole. I believe she got the original recipe off the side of a CheezWhiz jar in the '60s. :D Classic ingredients are: white rice, canned cream of mushroom soup, onions, cubed Velveeta, and Cheez Whiz. I switched it up by combining riced cauliflower, mushroom soup, sliced mushrooms, minced garlic, and a generous amount of shredded sharp cheddar. It came out really well. It's hard to tell from this photo, but the texture was pretty darn close to the original and it tasted amazing! I plugged the ingredients into MFP and a serving works out to be 144 calories, 4 g of net carbs, and 9 grams of fat. Of course, the challenge will be eating only one portion!

    A bit, but given my current eating mode, I barely noticed. All six were gone within a few minutes.
