I've nothing to post here, YET! But I wanted to say a big THANK YOU to all of you who did post your pictures. LCHF works for me but has always been so boring and you all have given me ideas galore. Not to mention the low carb foods I didn't even know existed -- like those zero carb noodles. Whodathunk?0

@ettaterrell sadly I can not take credit for those. The place I but my garden stuff at is a whole deli/butcher/produce place and they sell these already assembled. I know the pinwheel are flank steak with provolone and italian seasoning0

@ettaterrell I start with a red curry paste (Mae Ploy brand, but usually grab whatever I can find at the Asian market) so I cheat a bit. I don't tend to measure stuff (which is why i get I trouble with my logging if I get too creative in the kitchen). But, I started with a chicken stock base, added fresh ginger, garlic, lemongrass and red chilli peppers, a splash of lime juice and fish sauce and some coconut cream. Then I just tossed in my prawns and some straw mushrooms.
I use the same ingredients to make my Red Thai Chicken soup, but I thin it out with more stock and coconut cream.1 -
