Made my first keto bread today and omg it's so good. Threw some roast beef and turkey on it and added a slice of cheese. And then had some kalamata olives on the side. Sooo good.7 -
Chicken Fajita Bake with Mexican Cauliflower Rice with one who avocado and some sour cream

Been feeling sick with a headache all day - think I'm coming down with something. Hubby worked a long day (I worked a half day) and he came home and made this amazing salad for dinner featuring some farmers marinated feta we bought from the cheese maker at a local fair. I think I'm in love. It was amazing.

Omg so I'm OBSESSED with this Asian-Latin fusion restaurant near my job I visit it weekly but haven't since starting to eat keto again. I was really craving their nachos which is Korean BBQ pulled pork with standard nacho ingredients (pico de gallo, queso, corn, jalepanos, lettuce, cilantro, etc) but I didn't want the fried wontons it comes with. I called and asked how much it would be to get a double serving but without the chips and to my surprise the entire price was not doubled it was only a few bucks extra for the extra protein and queso. Likely not in the keto range with all the corn and tomatoes, probably some sugar in the BBQ sauce, and very high in protein versus fat but man oh man is it hitting the flavor spot I needed and is still low carb and satisfied my craving to get me through the rest of the week without going full blown with the chips. I'll see in a day or two how it effects my ketone levels. If it doesn't have an adverse affect I may have to have this weekly...at the very least.

There is seriously unlimited info on the internet about BPC, just Google it. My recipe is fresh brewed coffee, 1 Tbsp grassfed butter, 2-3 tsp heavy whipping cream, dash or two of cinnamon, 1-2 Tbsp MCT oil, both granulated plain Stevia and liquid English Toffee flavored Stevia.0 -

Went to a restaurant called Lazy Dog and they had this seasonal dish, slow braised lamb shank. Never had lamb before but it did not disappoint!! Fall off the bone tender, served with sautéed spinach and cauliflower mash!
(I took a few bites before I took a picture lol )

Homemade wild salmon cakes
Eggplant rolltini stuffed with:
- kale
- spinach
- mushroom
- cottage cheese/Greek yogurt
Grilled lime shrimp salad

Egg-drop soup with:

Slow Carb Chili (mostly a huge pot roast in the slow cooker, but towards the end I chop it up, add a little black beans, chopped onion, green pepper, tomato paste and lots of chili powder). We had it with Pepper Jack cheese melted on top. It was epic.

I have finally did it!! I have concocted the perfect keto pancake recipe! Super stoked because these taste like real pancakes. Not eggy crepes, not rubbery hard saucers, not dry bread crumbs.
But real, fluffy "no way this can't be low carb" pancakes.
20g fat, 1 g total carbs, 39g protein

I was a little worried about my ketostix today but still dark pink! Yay! This chili is mostly beef anyway.0 -
@MyriiStorm One scoop of your favorite protein powder
I use dymatize Iso100 (cinnamon bun is amazing, smooth banana is good as well)
1 tbsp oat fiber (gives pancakes volume and density.. I ordered it from netrition.com)
2 tbsp heavy whipping cream
1 tsp baking powder
2 eggs
1 tbsp water
Mix well. Cook on medium high heat until you see bubbles start to form. Flip, and cook literally for 5 seconds. Done!
I add a tbsp of butter on top and usually top it with peanut butter or almond butter but hubby ate it all last night3 -

I bought the duck at a Chinese butcher ready roasted. I just cooked the other elements. I have never cooked duck at home but will give it a go. It is so much fattier than chicken - a world apart!1

I took one of my favorite pasta recipes and made it using spaghetti squash. Cajun Shrimp Alfredo. I used 2 whole spaghetti squash and multipled the rest of the ingredients by 1.5. Took out green onion and added one red and yellow pepper. It made 5 servings but you could easily get 6+.

Dinner tonight. Grilled some chicken breasts outside, then spread them with that ginger goat cheese. Side of green beans.

The stuffed peppers I made tonight were a big hit. Even my six year old devoured hers.7 -
Nothing very exciting to look at, but it tastes delicious! Grilled these yesterday, today its leftover cheeseburgers.
I still need some veggies for the day. Maybe I'll have a small salad. I'm exhausted. Feels like a Friday! After nine here and just getting home.

I wish I had thought to take a pic but I'm old and don't think that way....but last night I made Scotch Eggs with pork and beef and I coated them in ground pork rinds with a little coconut flour. I deep fried to crisp up the rinds then finished them off in the oven and I made a Hollandaise sauce with coconut milk to go on them. They were pretty tasty. I think overall I need more seasoning (I didn't follow a recipe) but I highly recommend them...really easy to make.1
