    I've been craving chili lately maybe because of the gloomy rainy weather? Underneath all the cheese is a dallop of sour cream and guacamole. It took literally 15 minutes to throw together :yum:

    Had to bump this thread because it is one of my favorites, and I think it needs to keep going. Those who are new need to see just how amazing this food can be!

    The original recipe called for half a cup of flour and over a lb of potatoes! So I decided to play a bit and see what I could come up with.

    5 1/2 c chicken broth
    2c chopped fresh cauliflower
    1c chopped dill pickles (I admit I used the jar of baby pickles sitting in my fridge)
    1/2 c butter
    1/2 c sour cream
    6oz extra sharp cheddar cheese
    2c. Pickle juice
    1 1/2 tsp old bay seasoning
    1/2 tsp pepper
    1/2 tsp salt


    So what I ended up using was my jar of baby dills chopping them all up and using the juice from that jar.
    I added the cheese to replace the flour.
    The cauliflower replaced the potatoes.

    Large pot boil the broth, cauliflower and butter.
    Add in the sour cream and cheese
    Add the pickles, spices and pickle juice let cook for 5 more minutes then serve!

    I'd likely chop the cauliflower smaller next time, but this is a definite keeper!

    Holy Crap! I need to hire you as my cook! Looks Amazing!!! Certainly 2 things I'm going to see about working in. The soup sounds great especially with cooler weather on it's way.

    Philly Bacon Bombs
    Honestly I never wrote down my recipe for that one I don't think....
    By memory:
    1lb ground beef
    Three cloves garlic
    1 green pepper chopped
    2 lg white onions cut top and bottom peel skin off and carefully pull apart into sections for stuffing. Chop remaining centers to add to meat.
    Baby Bella mushrooms chopped
    1 c pork rinds crushed
    1 egg

    Mozzarella cheese
    Bacon slices

    Combine all ingredients minus the mozzarella and onion sections. Mix well by hand.

    Take a piece of mozzarella
    Surround with meat mixture.
    Use two equal sections of onion to surround the meat then use two slices of bacon to wrap. You can use toothpicks to secure.

    Bake in oven around 375 to 425 until meat temps read 170 by thermometer don't aim center! That's cheese not meat in there!

    I added mushrooms, and enough garlic to scare off the vampires this weekend!

    Courgetti, canned tomatoes with garlic, and grated cheese. Higher carb for one meal than I'd usually go (about 10g total) but tomatoes make me so happy.
