    I used a low carb tortilla folded in half to make a cheese quesadilla which I then used as the crust for my 2" thick sausage, pepperoni and jalapeño pizza. If you can't tell, this was very cheesy.

    @zoemc01 - does that Oppsie bread really hold all that weight of the sandwich? I've used Cloud bread, but that is just silly trying to actually use it like a bun.

    Yes it held up great. Maybe the psyllium husk powder gave it some extra stability.

    Here's the recipe

    Makes six pieces

    3 eggs
    120g cream cheese
    Pinch salt
    1/2 tablespoon Psyllium husk powder
    1/2 teaspoon baking powder

    Pre heat oven 150 degrees C
    Separate the eggs

    Blend the cream cheese, yolks and powders together to make a smooth soft paste.

    Whisk the egg whites with a pinch of salt until super stiff.

    Gently mix half of the egg white into the yolk mix to soften the mixture.

    Then extra gently mix the remaining egg white in being careful not to mix out all the air.

    Line a tray with baking/wax sheet and spoon on 6 blobs and then carefully spread them into little circles the size of a bun base.

    Place them on the centre tray in the oven (no fan) for 25 minutes until just starting to go golden.

    Watch near then end so you don't over cook them.

    Meatball soup made with chicken bone broth, cabbage, onion and celery. The meatballs were half beef and half pork and were dropped into the broth like dumplings, so all the meat fat stays in the pot. I kept the tomatoes whole so that they could be left out of the bowl for lower carb eaters

    Today's simple lunch...tuna salad with cheese crisps. First time I've made them ahead and reheated them. 15 seconds in the microwave was perfect and they are sturdy enough to hold the tuns salad!

    @nomorepuke I'm not sure where to buy fish eggs but probably at an Asian supermarket? Look to see if there's a new place by you! They're popping up everywhere now. It's called poke, or poke bowl.

    No,picture as eaten - this was delicious.

    Stuffed mushrooms with Boursin

    Put some mushrooms in a plastic bag with one tab of olive oil - shake
    Put mushrooms on a baking tray for 10 mins in a medium/hot oven
    Remove mushroms tails, chop and mix wirh some Boursin (or similar) and black pepper
    Put stuffing of Boursin and mushrooms tails back in mushrooms
    Another 5/8 mins in oven
    The smell is unbelievable and it is low carb.

    No picture. 5 oz salmon, brussel sprouts. Baby spinach salad with olive garden dressing. Added some mayo to male salmon salad for lunch tomorrow. I'd I can stick to it, my macros are right on point got tomorrow.

    Low carb post workout breakfast

    Pancake mix: 1 scoop vanilla whey protein, 1 egg, dash of cinnamon and vanilla extract, couple of ounces of water and half and half. Topped with 4 raspberries, few slices of banana and sugar free maple syrup.

    Ohhhh, they all sound and look delicious.

    I should have taken a picture of my dinner tonight. We had the best pan fried then baked Salmon. I fried it in olive oil on top the stove then finished it up in the oven. It was restaurant quality delicious. I think Hubby and I were both craving those omega 3 fatty acids because we both went back for seconds. I stacked the salmon on lettuce, tomato and bacon with a creamy dill sauce.

    I should learn to take pictures.

    Radishes prepared in butter truly taste like fried potatoes! And I despise radishes!!!!! My hubby is trying to lower his carbs but loves his taters so I decided to try the radish thing. He is pleasantly surprised! He won't stay out of them long enough to get a pic but here's the link:
