What a coincidence! I made lamb burgers with zucchini and roasted red pepper sauce, topped with Parmesan cheese. Lamb mince is so filling! This is the first time I have used lamb mince and it is so satisfying and tasty.
For dessert I had a snooze.

That cheeseburger casserole was a big hit at our house. Thanks for finding the recipe. It will be a standard around here. So tasty, I used bison instead of beef, we like the flavor better.1 -

Here's what I made for supper tonight....
Grilled Stuffed Chili Rellenos with Chicken and Cheese with a side of sliced Roma tomato.
Best part, I only used 2 dishes --- my George Foreman grill and a plate LOL

Last night was a 12 oz ribeye with a nice salad and a size of creamy twice baked cauliflower with cheese and bacon on top. No pic. Sorry both hands were busy eating.2

My newest recipe find...
Twice Baked Cauliflower...this is delicious. My youngest son hates cauliflower but he had no idea this was not made from potato! Sorry for the half empty bowl but the fam dug into it before I could take a pic!

Made with Hatch green chillies, tomatoes from the garden, red peppers, and pork loin chops. Colby Jack cheese got sprinkled over it all.
Hubby loved it too. I let him have his hominy with it.
