    Hi there!

    500ml cream
    250ml full cream milk
    3 tablespoons unsweetend cocoa powder
    2 teaspoons vanilla
    3-4 tablespoons Swerve (or to taste)

    And then, before churning in an ice cream maker, add 1 tablespoon vegetable glycerin (an edible brand), to keep it from getting rock hard. And the at the last 3 minutes of churning, add 2 tablespoons Vodka, to prevent it from getting icey.

    Makes 6 servings with 7-8g-ish carbs p serving.

    I'm having my first low-carb dinner party tomorrow to celebrate a friend's anniversary. Fortunately, the celebratory couple are Paleo people, so they won't freak. This meal looks so beautiful that I think I will make exactly these sides---the bacon wrapped asparagus and the grilled mushrooms. I'm going to serve it alongside marinated pork loin slices with red pepper pesto. Thanks for the inspiration!

    This is usually burger and fries night so I replaced it with a turkey burger with pepper jack cheese and homemade keto friendly cheese its.

    This thread is so great. We decided to go on a low carb diet about a week ago. It's a huge change for me because I lived on pasta...like dinner was a whole box of pasta. So many good ideas coming from seeing what everyone else is eating. I'm getting real tired of eating chicken salad for lunch every day. Lol

    Was at someone else's house for lunch, so I had to improvise and fix something from their fridge that still fell within my goals... so I managed this LOL Gotta say though, it was pretty dang tasty!!

    Toasted bread topped with Melted Cheese, Bacon Crumbles and 3 "Soft" Boiled Eggs

    Cal 380, Carbs 14g, Protein 26g, Fat 24g

    I love being able to improvise and still eat well :)
    And yes, I like the yolks runny and love'me some pepper, as you can tell LOL :)

    Wow so many inspirational meals. I can not wait to try...I made fried salmon and then sauted the romaine with olive oil and splash of lemon juice in the same pan.
