    I have finally did it!! I have concocted the perfect keto pancake recipe! Super stoked because these taste like real pancakes. Not eggy crepes, not rubbery hard saucers, not dry bread crumbs.
    But real, fluffy "no way this can't be low carb" pancakes.

    20g fat, 1 g total carbs, 39g protein

    Slow Carb Chili (mostly a huge pot roast in the slow cooker, but towards the end I chop it up, add a little black beans, chopped onion, green pepper, tomato paste and lots of chili powder). We had it with Pepper Jack cheese melted on top. It was epic. t7su3b65evqh.jpg

    I was a little worried about my ketostix today but still dark pink! Yay! This chili is mostly beef anyway. :)

    @MyriiStorm One scoop of your favorite protein powder
    I use dymatize Iso100 (cinnamon bun is amazing, smooth banana is good as well)
    1 tbsp oat fiber (gives pancakes volume and density.. I ordered it from netrition.com)
    2 tbsp heavy whipping cream
    1 tsp baking powder
    2 eggs
    1 tbsp water

    Mix well. Cook on medium high heat until you see bubbles start to form. Flip, and cook literally for 5 seconds. Done!
    I add a tbsp of butter on top and usually top it with peanut butter or almond butter but hubby ate it all last night :disappointed:

    I bought the duck at a Chinese butcher ready roasted. I just cooked the other elements. I have never cooked duck at home but will give it a go. It is so much fattier than chicken - a world apart!

    I took one of my favorite pasta recipes and made it using spaghetti squash. Cajun Shrimp Alfredo. I used 2 whole spaghetti squash and multipled the rest of the ingredients by 1.5. Took out green onion and added one red and yellow pepper. It made 5 servings but you could easily get 6+.

    Nothing very exciting to look at, but it tastes delicious! Grilled these yesterday, today its leftover cheeseburgers.

    I still need some veggies for the day. Maybe I'll have a small salad. I'm exhausted. Feels like a Friday! After nine here and just getting home.

    I wish I had thought to take a pic but I'm old and don't think that way....but last night I made Scotch Eggs with pork and beef and I coated them in ground pork rinds with a little coconut flour. I deep fried to crisp up the rinds then finished them off in the oven and I made a Hollandaise sauce with coconut milk to go on them. They were pretty tasty. I think overall I need more seasoning (I didn't follow a recipe) but I highly recommend them...really easy to make.
