    I am a snacky kind of person so to keep my food intake in check I prepare the whole day intake beforehand and work out carbs/calories. I put the whole lot on a tray and keep it in the fridge - it is quite satisfying to see all the food I can have for my only meal.

    I have my meal at 4 pm but spread it out until 7 pm. Yesterday I had pork chop, Brussels sprouts, a big egg salad, some broccoli and Stilton soup, a Muller yoghurt, two Kallo rice crackers with creamed cheese and my daily 2 tabs of olive oil. This totalled 50 grms carbs and 1600 calories and I did an hour in the gym. I feel more in control that way and my weight is dropping off slowly but surely.

    Carbquick is a baking mix for everyone counting carbs...It's made from wheat and has 90% less carbs than flour...I make waffles, pizza and biscuits with mine and there are lots of other recipes I haven't tried yet...I like the taste :)

    Pan fried salmon cooked with butter and creme fraiche on a bed of baby spinach leaves. Simples.

    No picture asmeal already eaten.

    Stuffed mushrooms with Boursin

    Put some mushrooms in a plastic bag with one tab of olive oil - shake
    Put mushrooms on a baking tray for 10 mins in a medium/hot oven. Take out of oven.
    Remove mushroms tails, chop and mix wirh some Boursin (or similar) and black pepper
    Put stuffing of Boursin and mushrooms tails back in mushrooms
    Another 5/8 mins in oven
    The smell is unbelievable and it is low carb.

    Today's meal was almost the same as yesterday...Eggs and cheese on toast with Peanut butter toast and hot chocolate and smartfood popcorn :smile:
