The February challenge starts tomorrow, right? I have been posting in the January thread since this was January week 5. Was I supposed to post here as well? Sorry for the confusion; I saw team members from January already posting on here.
@Bm00re2u No, you're supposed to be posting in January until tomorrow. I have been posting in both as an example for new members.
Thank you for clearing that up! I didn't want to seem like I wasn't participating, so good to know!1 -

GOOD MORNING TEAM SLIMSONS!
TODAY BEGINS ANOTHER MONTH OF WEIGHTLOSS CHALLENGE!
My duty as the Co-captain for this team is to keep everyone motivated as they continue this journey, as there will be ups and there will be downs. The victory will not always come from the scale but keep in mind other changes that happens to your body so as we start off this month Challenge let's take a look back at a few of NSVs (Non-Scale Victories) we had posted in January's Challenge. I want each of you to reflect back to this post when you're having a difficult time and BE ENCOURAGED:
January's Team Slimsons NSVs

NSV: I got myself onto the exercise bike just as I wanted this morning, after the kids were off to school! This is big for me!

"Last year I saw a beautiful coat at Target. It was deeply discounted. I loved it but it don't for me in the arms area well. I knew I was staring my journey that year so I wanted to lose enough weight sure the winter to wear it. Well today was that day! It fits perfectly in that area. Now the bottom is rather roomy! I love it!"

"I did have a fun NSV today. One of the reasons I decided to lose weight is because I couldn't keep up with my co-workers on a business trip in Oct. We had to walk everywhere and I was huffing and puffing trying to keep up. Well, today when I was was walking with one of my co-workers in the new building they asked ME to slow down. It made me feel really good."

"NSV today: only had water tonight, no after dinner snacking, after school/work snack wasn’t something from a box or machine, exercised on fitness blender tonight (first exercise in a long time that wasn’t just walking the dogs)"

"A sort of NSV: I just crossed out of the morbidly obese BMI range. That’s motivating! I’ve set my next small goal for 25 lbs, that will be my next BMI range change. Can’t wait!"
HAVE A JOYOUS DAY!

Hi team!
My name is Dave, and this is my first time in a challenge. I’m currently 260.2 (started at 405, many years ago) and would like to get to 210. I’ve been kind of struggling lately, bouncing between 250 and 260 and so I’m looking for a little motivation. Hoping to contribute to the team!

Headache all day. Haven’t been feeling right the past few days. I’ve been waiting for my hormones to get all crazy from my diet change, it always happens. Seems it has. Just keep pushing through, things will balance out again in a few months. 🧘♀️2 -

@CindyJNC1963 I'm dying to find out how it went...
I went to the store today and found everything .....even the swerve. I plan to try it out tomorrow ....I will let you know.
Remember, the last step is patience, let the pressure release naturally after it cooks, 10-15 mins or so, it's worth it, trust me. Makes the meat so much more tender
It went pretty well except for one snafu that was my fault. I decided to saute in a pan instead of the Instant Pot because I didn't see the saute option at first. I ended up burning one side and it smoked up the house so badly that it set off all the fire alarms. It took forever to get them to shut off. After lots of open windows and fans plus talking to the alarm company ...all was well. The meal was GREAT!!! I did let the pressure release naturally and the meat was really tender. The only change I made was I didn't use a full teaspoon of cayenne pepper. I sauteed some zucchini and onions to go with the beef. I will definitely make it again. Thanks for the recipe!!
