    I've gone and added some Skyr into the bowl I will be having tonight! So it is a Skyrpudding? :wink:

    Salad (cucumber, onion, radish, tomato, mixed leaf lettuce, oregano, lemon pepper, pickled onions, vinegar) and PC Veggie Lasagna.

    Way too many calories in total but good for commercially prepared and frozen.

    It is good...have you tried their eggplant parmigiana frozen pasta - that is pretty tasty too - but, again, too many calories.

  • Tonight was cashew chicken with rice. They also had a pork egg roll, but cabbage and I are not friends anymore, so I didn't.

    Today it will be turkey meatloaf, braised cabbage, new potatoes. Meatloaf was made in a muffin pan so it can easily be portioned. 😋

    If you like it you should be livid with me for suggesting it - those fried breaded eggplant bits (more breading than eggplant) are wicked (ly good).

    Muffin pan is a great idea, Yooly. Inspires me to maybe make some little lentil pies! (I'm running low on gumption lately, so I hope this idea makes it beyond the keyboard)

    Yup - good old non stick muffin pan. I make meatballs, meatloaf, thanksgiving stuffing in muffin tin. I’ve begun doing casseroles portions in it too.

    I need to do that cause I have trouble portioning meatloaf. For some reason my brain doesn't like cutting a slice in half.

    Also.... turkey. Does it taste super different to make meatloaf from turkey then lean beef? I have never tried it mostly because I worry I won't like it lol.

    In a recipe like meatloaf with seasoning, ground turkey replaces ground beef well. Pretty much anything you’d use ground beef for can be replaced with ground turkey/chicken. It’s somewhat drier. There is obviously a bit different texture and taste but I don’t find it objectionable. Give it a try when it’s on sale!

    Beautiful - I mean like absolutely perfect! - spring day here. So my morning walk kinda stole my "cooking" time...lol.

    As a result there will be no little lentil loaves made today, instead supper will be pretty basic - boiled baby potatoes, green beans and those veggies sausages that I can't give up. Maybe I'll stop trying? :D

    This no-brainer dinner is really filling. Thinking it should be my go-to supper until it gets too hot to boil potatoes.

    I'm going to stick to the no tracking. It seems to be working pretty well - so long as I keep checking in here, this thread especially, I think I can keep myself on track with minimal effort. My problem days are not because I didn't track the 4 pecan tarts/or whatever other nonsense I decided to eat. We shall see. I'm not too determined about the tracking/not tracking - but it just feels so luxurious no to!

    I still have my scale out to make sure I'm eating reasonable portions of the high calorie foods in my diet - cheese, nuts and hummus.

    I might track a few sample days just to check my protein levels? Or not. :)

    Did I mention that today’s braised cabbage was made in a tomato adobo sauce? Hot enough to curl your hair but tasty. 👅

    Thank you, PAV. If I'm "on" I seem to be okay and don't really have that "maximization" urge. If I'm not "on" it all goes crazy. I'm trying to figure out how to avoid that.

    In a week or two maybe I will/should build in 400 bonus calories for "luxury" items? I can "track" that :) It feels pretty generous. But not yet - I'd just like to get going first.

    Head of cabbage quartered and lightly braised, onions, garlic, can of stewed tomatoes and a very small can of chipotle peppers in adobo. Mix, toss in the oven. Bake until cabbage is tender. 🌶🌶🌶🌶 Zoweee!

    Today will be a wild ride food wise. An author who I am working with - who I haven't seen in 5 or 6 years - is coming by to make some final decisions on the layout of his book. He just emailed that his wonderful wife who is an amazing cook will be joining us. They are bringing lunch! They are from India!! It will be glorious!!!

    I'm going to have to walk a lot later today :)

    Yes, my food touched this evening!…in fact, it was all mixed together and delicious!…4 1/2 oz. of Tyson grilled chicken strips, 1/2 c. canned Mexi corn, 1/2 c. canned, rinsed, and drained black beans, diced green peppers and onions,garlic, and fajita seasoning….all in a skillet and simmered until veggies were done….could have added rice but there was plenty without!

    Lots of walkies today...think I'll hit 25,000 steps before the day is out. Feeling it though - haven't walked this much for a few months!

    Lunch was delicious - and probably pretty low on the calorie front. They are smart/healthy eaters - everything seems pretty low fat. Left all the leftovers with me - so same for dinner (and two dinners into the freezer): plain cooked quinoa, a very light lentil/spinach dal type regional dish (I think it is called varan bhaat), and a mushroom/tomato dish curry type dish - very light seasoning with poppyseeds - not even sure what it is called. And - they are paying me! woohoo. Life was smiling on me today :)

    Making spaghetti today. Using the Rao's sauce from the store and adding ground beef, spinach, and zucchini to it. Will also serve it with some roasted asparagus. One of my favorite registered dietitians on TikTok showed it in a vid so thought I would give it a shot. Get my pasta and lots of veggies. I consider that a win!

    Came across a recipe for Brazilian picadillo today. Ground meat (turkey for me), olives, capers, tomatoes, onions, garlic and many spices. Served over rice which I’ll sub with riced cauliflower. There’s a few raisins too but I may skip those as hubby is not a fan.

    Laurie- I think lentils/beans might work instead of the meat. It’s a kind of Brazilian chili so it should be okay vegan style too.

    Of course it does sound as if my newly Canadian minted (previously Syrian refugees) downstairs neighbors have noticed that I'm here! Maybe I generate more sounds than I think I do! 🙀🤷🏻‍♂️😹

    I have evidence they noticed because they sent me a welcome message on WhatsApp! 🤣😹
