    Chicken taco salad: grilled, season chicken thigh meat, lettuce, onion, Avocado, salsa, 2% Greek Yogurt, light cheese

    Chicken-like-salad-oid-ish!

    300g 0% greek, 30g colemans hot english mustard, 111g plucked and cleaned rotisserie chicken sold for more money cold and 2days old than when it is sold hot and fresh (but then there would exist the drama of taking apart the chicken in front of an audience who shouldn't eat any), 200g matchstick carrots, 30g thinly sliced onion, 40g spicy green olives. Errr... mix everything together and eat! Crackers 26.4g /124Cal assisted the consumption. They were kept to a deliberate minimum. Not the greatest but not a terrible combo. carrot/yogurt was a bit too sweet might have been better with PC instead of liberte.

    Sounds interesting, PAV. Did you match stick those carrots yourself????

    The past couple nights I've had pan fried tofu... I've cooked it very slowly with just a spray in the pan ... And some soy sauce and a stirfry sauce that my daughter-in-law's mom has in the fridge. Last night it was with a whole assortment of vegetables tonight it was with mashed potatoes... Strange combination but The Boy Requested. Oh my goodness is good to be with him. ❤️❤️❤️

    Aw Laurie, I bet is so lovely having your Boy with you!

    Has been great having Ben back from Taiwain -but jeepers, forgot how untidy he is! He is back to Uni soon - trying to be ultra patient!

    Pulled chicken in harrisa with rice tonight, spinach type salad and toasted pine nuts …..

    Oh Oh Oh: chicken harissa rice sounds awesome!

    pine nuts sound expensive! because they are not very hard to eat and they are not very spicy, thus they are too easy to down in quantity! And being high fat they are high calories... plus money wise too they're not the cheapest.

    but really funny because I can certainly eat way more calories when going pine nuts > candied pistachios or peanuts > walnuts > cashews > pistachios > peanuts > almonds > filberts > slivered almonds (a bit approximate; but there's definitely a hierarchy!)

    What's YOUR hierarchy of nut doom?

    Nut hierarchy hmmmm. Garlic flavored macadamias > pecans > honey roasted peanuts> pistachios >pepitas ( not really a nut but tasty)>almonds> cashews>walnuts> Brazil nuts. Although honestly, I’ll happily overeat any nuts. I’m that way with cheese too.

    How come all the tasty foods have sooooo many calories?

    Supper today was a big salad with thin sliced steak. There was low fat ice cream afterward. Had some extra calories to play with from the gym this morning.

    I had a chicken smoked sausage chopped up and sauteed with leftover baby potatoes and diced onions and yellow peppers. Super tasty and filling.

    Mmmm, agree on nuts. And cheese.

    Brazil nuts, garlic, cranberry added for struggle with bladder/gut health management. Cheese for pure yum of it.

    Love all nuts … stick to any plain, but ooh laa la….honey, roasted, salted or spiced does it too!

    See I forgot pecans! Thankfully I seldom get them by themselves. The more common ones around are peanuts/almonds/cashews obviously. But yeah... the honey roasted or varieties and things get dicey! pistachios in chocolate or caramelised in sugar (CCCGG brings those).. not good I tell ya!

    That’s one thing that grow well here - pecans! Loads of pecan farms/producers here. Pecan trees growing in parks. We have happy squirrels. 🐿️

    Today was a small salad 🥗 , plain sweet potato 🍠 and a chunk of pork loin made in the air fryer. Later a big bowl of microwave plain popcorn 🍿 too.

    Not sure how my instant pudding purchase changed to pie mix but there is a very slight chance I got suckered in by "sale" pricing, again!!!🤑🤯🤷‍♂️

    Had a go at making spinach, basil & ricotta ravioli today - was fun, but faffy! …. Some burst 🙄served ‘em drizzled with some olive oil, toasted pine nuts, topped with some Parmesan cheese & served it with some green salad… was nice, worth the effort? Yeah think so! 😋

    Faffy - that describes it exactly. Hubby’s sainted Sicilian grandmother taught me to make ravioli. Even bought me a hand crank pasta machine to roll out the dough. Her recipe was finely ground beef, spinach, Parmesan cheese topped with a good tomato sauce. I once lost my mind and handmade ravioli for 20 young airmen. Like 350 ravioli! I did it in shifts and froze the ravioli until needed.

    You’ve inspired me to try it again - but in much more moderate quantities.

    Store bought fresh pasta just isn’t the same! Gotta make it by hand yourself - whole different taste. 👅

    I think I did enjoymaking ‘em …and I think they burst because I overcrowded ‘em once in the water to boil, stopped happening when put less in … maybe??

    I agree @Yoolypr …I don’t think shop bought ones do taste as good, But making for 20 hungry airmen … think I’d pass there and buy!

    I used pasta machine - as find it whilst cleaning out that part of the kitchen ….. took an age to put it together as old and no instruction manual ! 🙄😵‍💫

    Tonight is OH’s Chicken Tikka Masala with his chapatti & rice 😍

    You really have to crimp those homemade ravioli well. And gently boil otherwise they do explode. I’ve made lasagna with homemade dough and the same filling. Kind of deconstructed ravioli. I generously use a thin tomato sauce and bake - it takes less bake time than store lasagna noodles. And much less FAFFY!

    Had a half of a roast beef sub at a local place for lunch. About 300 calories. Tonight will be a salad topped with surimi.

    Fish smeared with wild garlic pesto that I found in freezer, breadcrumbed with roasted cherry tomatoes and green peas. Was nice, bit of proscuitto ham on top would have been nicer.

    Tonight I pan fried some cut up chicken, basil, parmesan meatballs from Costco with peppers and onion. When it was all cooked I added a serving of marinara sauce to warm through, then topped it all with a serving of parm form the green lidded shaker.
