Pimento cheese is a spreadable concoction found mainly in the south. Cheddar cheese whipped up with a few pieces of mild red peppers and mayonnaise. In the lite version it’s low fat Mayo I think. Easy to measure out of the store bought tub.
I’ve only got 1200-1350 calories to play with and I ate out at lunch. So Wasa and lite cheese tonight. I was over my allowance for the day anyway …My maintenance maximum is 1600 calories which is difficult at best. However my appetite could easily do 2000+.

Yesterday, as I expected, I was out of energy and really really didn't want to eat dinner - especially not the planned spicy red curry soup with tofu (on rice noodles :)) = delicious but just not a bed time meal :) Instead I had a bowl of oatmeal (in the tub! That is something I've never done before!) That was good - but a bit more than maybe I wanted/needed.
Wasa crackers with spreadable cheese would have been much better.
And…I think/hope…Wasa crackers wouldn't be likely to trigger a great binge 🤞
Funny how your dinner the other night has completely turned around in my head, Yooly :) Thank you for this idea (and thank you too, PAV - since I don't think I'll find pimento cheese nearby - nor would I trust myself with the open tub. I'd be scooping like mad) :)1 -
But Laughing Cow cheese requires opening the box with that annoying string thingy. Then you have to individually unwrap each little triangle of cheese. Tub of pimento cheese lite requires opening and spreading. When I’m lazy - I’m really lazy. Or perhaps I don’t care enough about the “meal” to make any effort.

Pimento cheese is usually served as a white bread (think Wonder bread!) sandwich.

It looks good - and so freakin' dangerous. My "tablespoon" would quickly turn into manyspoon :)

Dinner tonight asparagus lightly fried in olive oil - grocery store is loaded with inexpensive asparagus these days - clearly in season somewhere!, extra firm tofu slices and Thai sweet chili dipping sauce. Funny dinner - most of the calories are from the oil and dipping sauce :) but it is tasty!

Individual cheese that takes time to open removed from the fridge one at a time sounds like a good move to me!

Well - hubby was at the grocery store and guess what? Pimento cheese was on sale. Buy one get one free! So of course we now have four tubs of pimento cheese. Luckily they have a fairly long expiration date and will keep.
Marriage is a lovely thing fraught with complications. Such as who stocks the fridge……2 -

Hubby is very supportive! The tubs are LITE pimento cheese - so we’re all good 👍.
He tries but absolutely cannot resist food sales!
After 50 years I’ve learned to work around his good intentions as best I can. So I am measuring pimento cheese by tablespoons.

Speadable Cheese and crackers is a fav go to when I am not in a fuss n muss mood (and I am able to moderate it... fortunately.) Also cheesesticks & fruit.
Currently on a tear with chilled tangerines because they are so juicy.
Yes, Asparagus in season... love it fresh…best time of year. We serve for the holiday meals through Mothers Day. By Fathers day, berries are in season.

I'm definitely looking for the Laughing Cow jalapeno this weekend - and WASA crackers :)
Probably more asparagus too…and ??? what oh what to add to next week's menu.Yooly, it has been so long since I had to full time live in a space where I share food with someone else that I do not have full control/responsibility for - probably not since childhood :) - that I cannot imagine developing my own discipline around such tempations :)
My housemate had his own fridge/freezer/section of shelves but that was "HIS" food so I wasn't tempted.

Well..... 500 Cal "breakfast" today. Coffee (38g grounds in almost boiling hot water 🤪) Grapes 191g, egg whites 100g, white bread in little pieces 61g, and 2x18g of jalapeno jack: one slice with the grapes and one on the "egg white muffinoid"🤪

Just returned from the grocery store. No WASA but I picked up a package of Ryvita sesame crispbreads - very close I think and some Laughing Cow cheese. Messed that up though!!! I had the jalapeno in my hand - but somehow managed to end up at home with the regular AND it is pretty dear! $4.99 a package. Your husband would have better sense than to buy this, Yooly. PAV!!!! I'm surprised you would consider this.
But even the regular is pretty tasty. Just had 2 slices of Ryvita with 2 triangles of cheese and a glass of wine. But when I entered it I discovered I'm almost 1000 calories under today. So - back for another slice and triangle.
And I forgot grapes. They would have been perfect with this. All I have in the kitchen is a pair of green bananas. :(1 -
Superstore 535g package $10.79 ($20.17/kg) but I have yet to buy it at more than $9.99.
Costco 800g package but avail in plain only $15.99 instacart price ($19.99/kg). I remember seeing it at $12.99 in store and I think last time I bought it at $9.99 for the 800g package.
It is only supposed to be a LITTLE bit of cheese, right ;-)

They do make Laughing Cow lite. I’ve only seen the little circle boxes here.
