    We had jambalaya tonight. Just a box mix that I bulk up heavily with turkey smoked sausage, cooked chicken and lots of peppers/onions.

    Ah jambalaya! I’ve been obsessed with Cajun/creole food since our trip to New Orleans in November. So much flavor….

    All the numbers are just too much for me right now lol.

    Tonight I am making some grilled chicken breasts, stuffing, and sweet carrots. Simple and tasty.

    Later this week I am making a crockpot beef stroganoff with lots of mushrooms and a side of broccoli.

    Oh my goodness! St. Patrick :) I will eat green soup in your honour.

    For me the veggies help a lot. But I swear my brain hamsters sometimes want to reject them outright because they want to eat what they want to eat and if I fill up on veggies the tummy will not so easily accomodate cake/bread and other assorted treats.

    Well: I had been munching on terry chocolate orange, so low calories left.

    Nuked 756g compliments vegetables for soup. Initially was going to dump out the noodles and use the flavoring from some ho ya Tom yum noodle bowls (Thai chef tastes better) but decided to gamble and use my "extra broth to go" order of hot and sour seafood soup from the pho place that was sitting all sealed up at the back of the fridge.

    Wow tasty and salty. Nuked extra for food safety 😛 heart rate actually went up while eating.... which is probably not good 💩😡

    sale of the week - hothouse english cukes… so big, chunky salads… lunch was a lot of 'keep on chewing!' lol

    — had to scale back on the amount desired of meats, cheese & sourdough bread & butter. those things add up fast!! whereas a huge cuke 30 cals? sometimes just does not feel fair.

    also picked up ground turkey… not sure how I'll use, but glad for some variety, was down to a couple chickens. Maybe some meatballs.

    check out "specs" (calories, proteins, etc) on 0% greek yogurt… in which cucumbers can be dipped, or added…. savoury "tzatziki"…. with garlic possibly added :) Cold cuts have issues… but check out calories on ham and turkey cold cuts. Also broiled without skin actual birds and/or porc cuts such as tenderloin, and, of course, less fatty fish and shellfish… all pretty low cal. Hmmm…. greek yogurt might not work in quantity or as well with super low carbohydrate restrictions.

    Ok, might buy some tzatziki to try... have a new Trader Joes finally arrived to check out. On the hunt for lower eggs, SIL said the walmart food market bundle had dropped. When we checked last week, prices were still $9 and up... saw $14. Just. Can. Not.

    We had a lovely lunch at a Claim Jumper (snagged their picture) steakhouse today.

    Chose the jambalaya (thinking veggies, seafood equates to a healthy choice), ditched the big cup of rice and instead added a cup of seasonal veggies.

    It was really good but when i tracked later at home, discovered nutrition profile for calories & fats were double the salmon or steak options. Live and learn.

    I have no regrets, I was just surprised - my estimation was way off for both types of meals.

    Yup - restaurant meals are always surprises! With a chain restaurant you can usually access nutrition info online before you go (or before ordering). I try to stick with places that post calories, no rolls, eliminate sauces if possible and no fried stuff. Or I’ll eat half and box up the rest.
    Of course my calorie limit is so low it’s ridiculous. Old and short but love good food! It’s a daily battle with my head and gut…..

    Don't buy tzatziki. Commercial made with sour cream and high fat content and calories

    Greek yogurt 0% for me. 2%? Whatever you eat normally? Cucumber (preferably salted and left to strain the water). Garlic (powder). Pepper. Done :)

    I made the best food already this week.

    Lunches are a wrap with bean salad, avocado, feta, and mixed greens. Then on the side is a bake Korean sweet potato.

    Dinner was a red lentil dhal with bell pepper and carrots. Served it over a mix of rice and cauliflower rice and a side of mini naan.

    Kinda high in fiber and my stomach was telling me that last night lol.

    I was going through my stash of legumes and have a package of red lentils - was pondering how to use... now to browse recipes. Tips appreciated @Athijade - would say the whole day sounds yummy!

    Maybe I need to give lentils another try? I’ve had them several ways over the years but it’s always been a meh experience. Something about the the texture? Or imagining that pasta or beans would have been better?

    Had a half of a roast beef sandwich at the local sub shop today. It’s about 350 calories and worth it! I generally try to avoid lots of bread to control carbs. A leftover from my days as a type 2 medicated diabetic. It’s been controlled and in remission - no meds- once I lost weight.
    I logged the carbs and managed the numbers today.

    I went down a similar road today. I black been veggie burger on a kaiser. With cheese. I have been craving a burger type thing for days and finally picked up the fixings. Was worth every bite. But certainly used up a good chunk of today's calories. Somewhere in the 600-625 calorie range. Absurd really. But the rest of the day has been moderate. (not over yet though!)

    Had McDonald's last night. Feel horrible this morning. Why do I keep doing this to myself? I know it makes me feel bad, yet I go on and order it anyway. So frustrating!

    Tonight I am making burrito bowls. Rice, pinto beans, chicken, bell peppers, onion, corn, salsa, guac, and sour cream. Depending on calories I may add a serving of tortilla chips on the side.

    Right now I am nursing a cup of tea and a big bottle of water. Will have my 2 dates with PB in a few. Lunch will be a salad with mixed greens, romaine, mini bell peppers, cherry tomatoes, cucumbers, chicken, and fried onions. Don't know what salad dressing yet. I have a poppy seed and a balsamic.

    Trying to focus on fiber and protein along with lowering my added sugar (I say as I add a teaspoon of sugar to my tea). I go have a flavored yogurt every night, but I figure that is better then ice cream. At least the yogurt has protein and live cultures in it.

    Well the Wasa crackers came out of a box and the pimento cheese was lite. It comes in a tub from the grocery store at 70 calories for two tablespoons. So less calories than really good cheese. I went with quantity over quality.
