Shrimp Scampi sounds delicious!....we are eating simple fare as we usually do!...turkey kielbasa,oven baked fries,mixed frozen vegetables and a fresh tossed salad....snack later will be an apple, popcorn and a string cheese....you all make my meals sound boring!....1

I"m going to make pizza tonight - even splurging and making a crust, though since I'm trying to adapt down Betty Crocker's recipe to 1/8 of their serving, it's going to be challenging to get the ingredients right. I have a little jarred spaghetti sauce I'm going to use, lean ground hamburger, turkey pepperoni, a little mushroom, a little black olive, and 2 servings carefully weighed out of cheese. I'm going to spread it out in a medium size cast iron skillet.3

Sounds good....I buy fresh dough in Publix deli and measure it out....easiest crust ever lol1 -
We're grilling burgers tonight, with smoked cheese and some sliced avocado. We'll have some coleslaw (a non-mayo coleslaw), and some apple crisp for dessert.1

The recipe for the shrimp scampi involves an entire stick of butter, and that's about right to cook the shrimp in for the three dishes I used, but none of us ate all that butter; we ate the shrimp and left the butter in the dish. I therefore didn't log an entire stick of butter when I entered the recipe; I logged two tablespoons apiece, which was probably a little generous, and the calories came out about the way I felt they should when I got done eating it.1

My mom asked me today what I want for my birthday dinner (yes I’m turning 40 and my mom still makes me a birthday meal with a cake every year.) I really wanted perogies. But I know that would set me back for a looong while. If you don’t know what it is imagine a ravioli but filled with mashed potatoes and cheese and then sautéed in butter and onions. Freaking amazing. 🤤
I decided that instead of over indulging on the meal I would instead pick something more sensible and save the extra calories for my cherry nut cake.3 -
The menu for tonight is BBQ chicken tenders, broccoli with cheese, stuffing, and a salad....pretty easy....evening snack is rice cakes with peanut butter and a banana!....3

Last night I had a craving for Supermacs (like McDs/KFC but better quality and actually filling) so got a Chicken Breast Sandwich and Regular Fries.
I'm still working through leftovers this week (PS. that lovely bowl of fish gratin above, ended up on the floor after a couple of mouthfuls, on our cream rug no less 😭 to say I was devastated is an understatement - luckily there were
2 more portions left)
So for lunch I had some of the Sprout & Blue Cheese soup that I'd made the other week and frozen (good job I am in the office alone this afternoon tonight I will have the last remaining fish gratin portion.
Tomorrow, I'll probably have another portion of the soup for lunch and I will finally get around to eating that other steak with the leftover roasted med veg I made Monday night for dinner.
Then it's time to plan meals for Sat-Fri again.

We went out for lunch and I had a ground beef chimichanga and rice. That will probably, all things considered, set me over on calories tonight, but given that I hadn't had that for several months, I think once in a while can be excused. Dinner tonight is scheduled to be farfalle Florentine, which is farfalle cooked in alfredo sauce with spinach and grilled chicken pieces, and that is always tasty.3

Breakfast for dinner last night - eggs and fried spam on toast, with some arugula and parmesan on top.
No idea what we'll do tonight. Maybe grill up some tuna steaks and have them on buns with a side salad?2 -
I have no idea what's gonna be for dinner coming up. My doctor is now testing me for celiac disease and lactose intolerance. So, I have to minimize dairy and also go on a low FODMAP diet for the next four weeks... And I have nooooo idea what to do
But I am going in for blood work on Monday to test for celiac, so if I'm not positive for that, I suppose I won't have to stay on the low FODMAP diet? I dunno3 -
I’ll tell you I really want pizza for dinner. Maybe if I order a thin crust that will be better but I really am in the mood for some thick crust super greasy meat lovers pizza. Sigh weight loss can suck sometimes. Lol5

@gewel321 for me, if I get a craving like that, I'll go ahead and indulge but try to limit it, accept that for this one day, I'll be over, and enjoy myself. I'll play little tricks with myself, though. I love pizza hut pizza, so when the craving hits that hard, I'll order a personal pan to limit the left overs and keep from the temptation of a 3rd or 4th or even 5th slice!
I made homemade pizza the other night and splurged on extra cheese lol And used a real crust with flour and not a tortilla shell or something like that. So sometimes, I'll finagle the calories around to shave off what I can, and other times, I just acknowledge that you know, I'm human, I can't be perfect, and sometimes a little lenience in the short term is better for me in the long term!
For me personally too, I'll load up on salad before the pizza itself to try to help limit myself to 2 slices of pizza and stay there
Of course, that's just me; I know that foods and cravings are different for different people; pizza, thankfully, I can limit and get back on track. I have other food, though, that just can't be in my diet for now. Hope you find something satisfying either way!5 -
Yeah I’m the same way. Thankfully I was able to get over that and make fish tacos. It was just as yummy and I am satisfied.
I however have no doubt that before the weekend is up I will be having pizza. I’ll just have to limit the amount.2 -

Low FODMAP is more restrictive than celiac. It's possible to eat on it; I made most of my Thanksgiving dinner low FODMAP because Younger Son is trying to figure out what has his gut annoyed all the time. It's essentially a diet where you don't eat proteins that are the top offenders for intolerance, and see if that solves the problem. The main issue I found is that garlic and onions aren't used, and I adore garlic and onions. But you can infuse oil with garlic and onions and use that.

Stirfries with meat and some of the approved vegetables, using a garlic infused oil at the start, would be tasty. Eggs are fine, so you can do all sorts of omelets and quiches. And potatoes are fine, so you can have a grilled chop and mashed potatoes, if you use lactose-free milk to mash with.

I have been researching a lot since yesterday when she told me to go on the low FODMAP diet, but it's all so overwhelming. Especially since 90% of the stuff I have in the house is high FODMAP foods, because they are things I'm supposed to eat with my liver/diabetes stuff. So, this is going to be a real challenge. And then watching gluten on top of it? Yeesh... But, I still have the number for my dietician, and if I start to notice an improvement with my issues, I'll give her a call so she can really help me set up a good idea of what to do.
I'm gonna start on Monday, I think. That way I have time to make a game plan and can get groceries since I have so much stuff to get rid of.
I'm kinda hoping it's more of a lactose thing, that would be so much easier to control it'll be a lot easier to get dairy free cheese/milks than to have to limit so many of the vegetables and fruits that I eat now, along with having to swap out pastas for gluten free ones (which taste fine, but I don't care for the texture as much). At least I can keep brown rice in the mix, since we eat a lot of that with stuff.
Garlic and onions will be hard... I cook with a lot of that.3 -

Made a lighter version of the fish gratin this evening replaced the cream with light philadelphia, couldn't get artichokes in the supermarket so went for celeriac instead. Sauce tasted more or less the same, just slightly less rich. Made some celeriac mash with the leftover veg and roasted the last of my kalettes.
Tomorrow I am in the office so I'm taking some leftover chicken thigh chilli and some tortilla chips for lunch and I am headed to a friends after work for a Burns' night supper - haggis, neeps (turnip) and tatties (potatoes).3 -
I'm really feeling hard done by because the gym isn't safe. It's open, but I just don't feel safe going there, and then there's the cost of training that we really can't do right yet, as he's only working part time til June. But I can't help thinking that the plateau would lift if I could lift weights, and I'd feel so much physically better. No, I can't do it at home, because I have loose joints and the machines keep me from hyperextending and going sideways and such. (sigh)
I've been having additional trouble with evening hunger. I'm trying a heavier snack before bed to see if that helps at all, but it's really frustrating to be sabotaging myself like this.5 -

Celery Root. It's like a big root vegetable - has the peppery taste of celery but not the stringy texture.
It's good for stews and mash.2 -

I've been too tired to cook much this last week. Work has been crazy (under a proposal deadline...tomorrow), so I've been spending every free minute either sleeping or working on modelling health outcomes. All of my grand cooking plans have fallen by the wayside. I love having a freezer and pantry full of home-made, ready to go food for times like these. Last night we had some roasted cauliflower, smoked pulled pork from the freezer, and a salad. Tonight I think we're finally having our steak with pierogies and home-canned green beans.
I got some lamb at the store this week, and found a lamb and chickpea stew that sounded pretty good. I might toss it in the crock pot tomorrow. The bao has also been pushed back several days, but will be a fun end of week treat (we'll use the freezer pork in it instead of mushrooms this time, for a twist). I also have a ton of tomatoes I have to use up, so there might be some sort of tomatoey curry in the future as well.1 -

I've got a bunch of chicken breasts cooking sous vide right now. The immersion circulator is my partner's kitchen gadget but it was pretty easy to set up and get to temp! My plan is to cook them sous vide then just sear them in a pan right before I eat. If this works out well, I think I'll do this once every week or two for lunches and dinners while my person works late.1

The legs were AMAZING!....I put 6 chicken legs in a zip lock bag with 1/2 tsp olive oil per leg....sloshed them around....mixed chili powder,garlic powder,smoked paprika, salt and pepper and poured in the bag and squeezed them around until all coated...put in fryer at 380 degrees for 30 minutes....crispy and temp 180 degrees internally.....really good!1 -

Does sous vide mean brought to temp and then seared to brown?....sounds like a great idea....I hope this air fryer makes us eat more chicken!0
