    Romaine Lettuce:

    I always get organic at Sprouts Farmer's Market...now it's 2.69 a head and the outer leaves are awful and not worth the price. The other day I was in Costco...and decided to pick up their organic six-pack of Romaine hearts...beautiful. Nothing went to waste. I prepped all six ... chopped, spun in a lettuce spinner, and used tea towels in large 2,Tupperware to keep dry and fresh. Totally worth it.

    Just thought I would mention it. I also prepped six small containers of jasmine rice. I have bought frozen rice before...it's not the same as when you make it at home.

    Right now, I am using canned beans, but that is one of my goals this summer...to make homemade beans. So much better taste and price wise.

    I splurged on Prime Day and bought the Aero Garden...I will let you know how it works. Want it for herbs…mostly mint cilantro and basil

    Magic - I like your goals for your 75th birthday! My middle sister who has struggled with weight all her life finally has lost weight. She walks 3 miles 5 times a week and eats healthy. She is the baker at a vegan restaurant. Kinda curious. How is your coworker and her diet? How exciting the Aero garden!

    Mihani - let me know how the baked beans turns out. Brooks made me a big pot of black beans and I had them today for lunch.

    Carla - how were the dogs when you got home?

    Well, I turned 65 today. Got up early and walked dogs 1.5 miles, had a spinach, lemon, banana, ginger protein shake. Then swam 650 m for my 65th. It was a new pb for me since Covid. Going to go get my hair cut and styled late afternoon and then Brooks is taking me out to dinner. On Saturday, one of his BD gifts is he arranged a beginner's private lesson of pickle ball with another couple...good friends of ours. I have never played but heard it is a lot easier on the knees than tennis. I never had knee problems with tennis but Brooks had terrible pain (probably from trashing his knees skiing when he was young)....so I quit playing tennis for him and took swimming lessons and then did the senior triathlons. I don't regret it at all because I think tennis is hard on the body when you get older and I love swimming and the water. Sunday we are going to do the same hike again with friends. Brooks is taking a bigger backpack to put CB in if he gets tired. He does not think the stroller will work when we are on the trails.

    Slept! Alert the media. Just shy of 5 hours and that's a win for me.

    Did not have the broc and potato when I got home...just was not in the mood. Stuck to my plan otherwise.

    Update on coworker’s diet…

    Today, one of her customers told her she looked like she was losing weight! So she’s riding really high at the moment! ! . But she’s running around telling me she’s starving to death.

    So annoying !

    Meanwhile I had my oatmeal and berries and soy milk for breakfast sitting at my desk in a bowl and enjoyed every bit of it. NOT STARVING! ❤️❤️❤️

    More on my coworkers diet here we go I’m dictating this, so let’s see if it works so she has lost 15 pounds. People are starting to notice and she’s gloating. You know there’s nothing more annoying than somebody that’s gloating about the diet and then points out that somebody else is eating poorly and that’s just what she did today and I pointed it out and then she had something nasty to say to me.

    It’s all fun and games right now as the diet is still fresh and she’s still losing but when she has to maintain this using at 800 to a thousand calorie diet it’s not gonna go well and I know that so I just have to bite my tongue and wait till the whole thing reverses itself

    hmmmm....

    not doing so great food-wise...it's when I get home from work...so many times I feel defeated? Not sure if that's the right word...but really, this job is for me to make ends meet...my career was in education...which I loved. anyway, it's a mind game for me...and I need to work on it...

    iced coffee...using cold brew from Trader Joe's, add water, ice, nut pod, into the vitamix and voila...one of those fancy iced coffees from starbum's and it cost a buck maybe.

    Nanc, I love broccoli roasted. Sprinkle with coconut aminos and no salt seasoning and roast until starting to brown a bit but still has a bite. I love it cold leftover. But... I'm a little weird. LOL

    Got my new laptop configured and turned off all the intrusive crap they load them up with now. My old one was taking days to do updates and was lagging all the time.

    I am making the baked beans tonight but it's going to be late when they get done darn it. I started soaking the beans this morning and they are simmering now. But then they have to bake for an hour covered and another half hour uncovered! Hopefully they will be in the oven by 6:00. I need to go get started on the rest of the recipe since the beans are almost done.

    Happy Birthday Donna! Where did you go for dinner?

    I am struggling with stress and not feeling it this past week. Trying to keep it steady. I was going to the office tomorrow but I may just stay home and work from here. Friday was craaaazy and I got nothing done that I intended to work on.

    Got sidetracked from this post with cooking. Beans are safely in the oven so I should be able to eat by 7:30. I am considering making cornbread as well. I love cornbread with beans, or really just cornbread in general.

    I hate when I take the time to actually make recipes and they turn out disappointing. The beans are good but won't be a favorite. I like beans tangy with a little heat. These are too sweet for my taste. I will probably use the leftovers to top salads. It's a big batch so I will be eating them for days. The cornbread was also disappointing. Too sweet and cakey. I like cornbread more savory and "corny" so I think the ratio of cornmeal to flour isn't right for me.

    I recall that fatfreevegan has a very simple cornbread that I made once for her stuffing recipe and I liked the cornbread so much I had trouble not eating it before I made the stuffing! I will try making that version again and see if it is as good as I remember.

    Haven't quite decided what I'm doing today. I would prefer to stay home and work here but I'll see whether my boss wants me at the office.

    Plan for today...
    B - ezekiel toast with a smidge of PB, cantaloupe
    L - leftover beans and cornbread
    D - big ol' salad

    Hair appointment late afternoon and a visit with family after.

    Morning! I have tried the broc in the air fryer and wasn't much a fan, but thanks for the tip. My favorite is stir-fried but I am ok with steamed with cheese sauce...so I guess I will do that these four days. Hope you don't have to go into the office today, @Mihani Oh, and sorry bout the recipes not during out so great. I agree with you, that is very disappointing!

    Lots of stuff to do in the house today...so that's where you'll find me.

    hello ladies

    I can't think of much to post but I need to get back into the habit!

    We grilled some processed vegan hotdogs on the BBQ yesterday and had them with some less than stellar buns. I was up most of the night with the hot dog repeating on me and my heart rate was fast and beating harder than normal. Joe has had that before after a faux meat dinner. So. no more junk like that. It wasn't great anyway.

    The hot weather is too much for me. I am rethinking our tropical getaway plans! Instead of going south for the winter, I think we need to go further north for the summer!

    I'm thinking light foods today. Salad with some beans and fruit for dessert.

    Carla, yikes that's scary about the reaction to the faux meat. Hope you are feeling better now.

    My hair appt got rescheduled because of a water issue at the salon. Stayed home and worked, then got together with the family for a while and had fun.

    So back to the grind today, but at least I had a little fun this weekend. I should try to do that more often.

    I didn't get around to making the pot of greens with mushrooms and onions. I will get that done tonight.

    Got lots done yesterday...so going to try and repeat that today since so much needs tending.

    Sorry bout the faux hot dogs, Carla. I have a pack of Field Roast Stadium dogs in the freezer. Uh oh!

    Yeah, for family time, Mihani...you really need that time away from W O R K! That's for sure.

    Lulu gets a groom today...thank goodness. The temps are ... well, it's Summer in the desert, so that's what you get...Desert Summer Temps. And her hair is not that long, but she gets Summer grooms and feels so much better. It's just that her groomer is so popular, we had to wait forever to get an appointment. Today, I am booking the next one.

    exactly as yesterday...

    No farmer's market...actually, I got the plums at Costco...they just needed time to ripen on the counter 1/2 of them...1/2 in the fridge and then I put the other 1/2 out to ripen...it's a big box. Really sweet and yummy. The cherries were from Costco. Will buy from Sprouts next time...they were not that great. Peaches and Nectarines should be really sweet now, so I think I will opt for those instead of cherries.

    PS Mihani you inspired me to make a 5 1/2 year plan...I hope to pay the house off by then and retire. Lulu will be 11 by Dec 31, 2028...she deserves me full-time.

    We usually get the Field Roast brand but were in a different grocery store than we normally shop and now that I think about it, I don't think FR has the same side effects.

    Love your retirement plans, ladies!

    I followed through with my eating plan yesterday and we enjoyed a wonderful salad for dinner. We had romaine and red leaf lettuce for the base, then topped it off with tomatoes, a ton of strawberries, toasted tamari pumpkin seeds, and baked tofu. I made the Island Vinaigrette dressing that is our go-to.

    We'll do a repeat of that again tonight for dinner, and I have some cantaloup to use up so I'll make another thick smoothie in a cantaloup bowl for my breakfast.

    We are thinking about getting a summer cabin in Canada near where my parent's summer place is. It would be nice to be able to spend more time with them and to be on the ocean. I've always dreamed about a place on the ocean! It is both exciting and nerve-wracking as we get closer to potentially putting in an offer. Wish us luck!

    Magic - yay Lulu getting groomed. My dogs are shaved down for the summer. CB stays so clean and easy to bath.

    Carla - that is so exciting about the cabin!!!!! Yay.

    We did the 3.0 mile hike across the land bridge yesterday. Got up at 6:00 a .m. to be on the trail by 7:00. It was hot at 08:30 and CB pooped out but we were ready! y620nqi42agq.jpeg
    He did not get so overheated this time. Cleo is the trooper.

    I went out for lunch at my favorite Vietnamese restaurant for vegetarian pho with tofu. So incredibly good. Only ate 1/2. Rest for tomorrow.

    Thank you for the BD wishes. Went to LaFonda on Main for spinach/mushroom enchiladas. Yum. They only had outdoor seating and I melted. Brooks took this bd pic of me.

    Tomorrow I have double cataract surgery. Send me prayers and positive wishes. I feel my sister jinxed me by saying she would never have both eyes done at once. Brooks has given anesthesia for this surgeon a lot and has never witnessed or heard about a complication with cataract surgery. My cataracts are not bad and will be easy to take out....it is the distance lens I am excited about. Not having to wear glasses.

    Nanc, I'm sure Lulu loves being cooler with her new 'do. I think it would be nice for Ruby in the summer, but for now we are just trimming her long leg fur so that doesn't attract so many sticks and plant matter.

    Mihani, it is a red wine vinaigrette. Is your new laptop all set up? Getting everything working properly is always a bit annoying.

    1/2 cup raw cashews, soaked
    1/3 cup of water, or more for desired consistency
    2 Tbsp olive brine
    2 Tbsp red wine vinegar
    1 Tbsp lemon juice
    1 Tbsp coconut aminos
    1 garlic glove
    1/2 tsp oregano
    1/2 tsp mustard powder
    1/2 tsp onion powder
    1/4 tsp salt
    1/8 to 1/4 tsp black pepper
    Add to blender and blend until smooth.

    I'm feeling pretty good about my food for the last two days. I never feel gross after having a big salad for dinner, and with the tofu and crunchy bits it is satisfying.

    Joe and I did split a pear cider with our meal. I don't think you can get them in the USA but they are divine! Okanagan Harvest Pear in a black and yellow can. If you ever see them get them and tell me where! We had them while in Canada. My cousin got my parents on to them and then we tried them while there on vacation.

    We're having red lentil cauli curry for dinner tonight. It isn't exactly summery, but we haven't had cauliflower in a while and we'll have it with some salad.

    Home purchase fell through :( I'm so disappointed and incredibly frustrated about why it didn't work out. Some hard lessons have been learned. Suffice to say that Joe and I have new goals that we are motivated to see through!

    Awww, Carla that sucks about the cabin. Sorry. That dressing sounds right up my alley I copied it, thanks! I used to drink the hard ciders and lemonade sometimes but they upset my stomach. :( Oh, and thanks for sending that shout-out to Spring. I always forget about the @ thing.

    Is anyone else having trouble signing in or getting screens about technical difficulties lately?

    My greens with onions and mushrooms turned out soooo good. I used garlic, cumin, turmeric, black pepper and no salt seasoning this time. I made some soba noodles and mixed them into the greens when I served them up. Very nice. I really have to stick with this habit of making big batches of greens a couple times a week. I've found that after about 3 days they are less than appealing so it's going to have to be done more than once a week.

    No unusual sign in problems for me on MFP lately, Mihani. Your greens & mushrooms sound good! And if they last 3 days that seems pretty good to me, though I can see how that is a drag when you get home tired after a long day at the office.

    Carla, yeah I wish they would last longer so I only had to cook once a week but oh well. Maybe I can start freezing part of the greens I make and build up a supply that I can use in the later part of the week. I'll try it this weekend and see if they still taste as good after being frozen.

    Carla - I think it means there is a better cabin out there for you. I am sure it was dissapointing but make a dream list of all the things you want in a cabin.

    Mihani - your mushrooms and greens sound delicious! I am making black bean soup tomorrow. My favorite. How long do beans last? Brooks made some instant pot beans two weeks ago but I don't think he froze them. Hate to use canned. xxb7or0bh27j.jpeg

    Magic - It must be frustrating to see your co-worker starving herself on this diet. I feel made for her because we all know what happens with starvation type diets. The hormones and metabolism are wrecked and she will gain the weight back plus some....even if she is on an appetite suppressant .....I don't think you can take those forever?

    My big whopping goal is 2 lb loss for the rest of the month. It will make it an even 50 lbs weight loss. Before covid I was doing those senior triathlons. After I got Covid and was inactive I gained 40 lbs back. I feel like a new woman having the hiatal hernia fixed. I am on a 2 week break from doing more than walking after cataract removal. It was amazing. Thank you for positive thoughts and prayers. I have 20/20 vision in my L eye and 20/15 in my R eye. Post op check up yesterday, everything was good. I haven't told my sister yet. Don't want to jinx myself. I will wait until 2 weeks post op. I still have a blurriness in both eyes especially after I do all the eye drops. I hope it goes away. I feel like I have contacts in only better. I keep reaching for my glasses in the morning to put them on.

    Brooks bought me Ranier cherries for my BD. My favorite fruit. The best came out in July and my mother always bought them for me on my BD. They used to be called Royal Ann cherries. She wanted to name me Annie after one of her sisters but my older sisters voted for Donna Lee as my father's name was Don Leroy and I was his last chance for a boy. Maybe that is why I grew up to be tomboy. hahaha.

    Bisky, I am not sure about beans. I feel like things start to taste a little less appealing by day 4. By day 5, I figure I'm taking my life in my own hands. LOL

    That is awesome that your hernia surgery has you feeling so much better. Yay! And then the better eyesight to boot! I am going to have to do that at some point. My doc said he saw some beginnings of cataracts.

    I seem to recall having some ranier cherries once. They were good!

    Finally got around to cleaning out my freezer for real last night since garbage collection was today. I had to throw out a lot of stuff I made and froze too long ago, and a bunch of frozen veggies and entrees that were well past best by date. This weekend I am going to clean out and reorganize the pantry. No more buying frozen or shelf foods until I use up some of the stuff I already have! Salad veggies, fruit, plus greens, mushrooms, onions for cooking only.

    Not going to cook this weekend. Too much going on at the office and my boss is heading out on vacation after next week so we have a LOT to do. So I'll cook a grain and use the frozen veggies that didn't get thrown out, canned beans, and buy bag salads. That will get me through next week and then I can maybe do a marathon cook and prep and freeze next weekend.

    Has anyone tried the Rancho Gordo beans? They have a "big box" option with a whole bunch of different beans. Tempted to buy that and cook them up then freeze for later use. Homemade beans are definitely better but I never do it because of the time and effort. I used to do that with dried beans and they were really good in recipes after being cooked and frozen. Any other suggestions for where to buy dry beans?
