    Just a quick post about the Rancho Gordo beans. They have a YouTube channel and maybe I will one day make homemade beans… right now I’m not into it …other stuff going on…but I know they’re really good.

    Much much better than canned!

    Big thanks to @Mihani for inspiring me to come up with an actual payment plan to pay off my home! Talked to the bank yesterday and she advised me how to go about it and when I would make my final payment…

    DECEMBER 2027!

    I probably will not retire, but I will cut my hours back to 10*hours a day so that I’m home an hour longer with Lulu in the morning to go for a better walk and come home by 10 after six so we can have dinner together. That’s my plan. I’m really hoping I’m really gonna try to stick with payment plan. I’m really pushing myself to stop spending senselessly and use the money towards my mortgage payments.

    *10 x 3 = 30 STILL FULL TIME!
    So, I don’t lose any benefits!

    I am sorry I have not been on. It has been a very stressful month. I did not do any of my July goals - stretching and adding in yoga. But I have been doing well with weighing and logging my food. Exercise is just routine for me and I've been keeping up with that as well. I have blood work scheduled for Tuesday and a doctor appointment Thursday. All the stress I've been under has my glucose all over the place even though I've been eating great and exercising. I am nervous what the results of my test will show. I hope they are better than I anticipate.

    I am happy to report my ground bees are still with me living in my veggie garden. I've been able to work in the garden around their nest. They will come out and fly around but they don't swarm or attack me. I get so excited when I see them on my plants pollenating.

    Last night I harvested some huge heads of bok choy and cooked it up for dinner. I cooked it in my wok using a little water. For the sauce I used tamari, for seasoning I used garlic, ginger, red pepper flakes and almonds. I make this recipe quite frequently. It is one of my favorites. I will have to see if I can post a picture of it later. I have photos on my phone and am on my laptop now.

    I love all the updates and photos that everyone has been sharing. I hope everyone has a good rest of July and an even better August.

    today's plan

    just egg folded with jam
    broc and potatoes
    salad with beans
    cantaloupe, grapes, nectarines...

    making it ddddddddddddddd licious!

    have hoarders* on in the background (on Netflix) as I move from room to room. All rooms are easy, except for the guest bedroom/office...it's not great...not horrible...it has been worse...but it needs ATTENTION!

    tomorrow my organizer is coming to do a refresh in my whole home...making a phone call to two patio people to give me estimates...things are coming together.

    As much as I would love my dream kitchen, Lulu and I would BOTH benefit from the patio enclosed with screens and windows. More real living area in this tiny place would be a dream come true. I'm excited. Lulu loves looking out at the bunnies and birds...an enclosed patio for her to lookout would be perfect!

    *the only times I have to turn it off is if they are hoarding animals ... or their plumbing was out of order and well, you get my drift.


    ETA: All rooms completed except guest room. Tomorrow, while my gal is working on organizing, I will work on that room. It's easier when you have someone working beside you.

    And the time is 11:45am. Yay!

    That is excellent news on your mortgage, Nanc! You'll have it paid off in no time. I feel like debt is just one more thing dragging me down right now. I paid off credit cards years ago and kept the two I still had paid off monthly, but they crept back up last year with the dog's emergency surgery and then when he died, plus some repairs on my car, dental and medical expenses for myself, etc. etc. etc. Ugh! But I think (hope) that things are more settled now and I can pay off the credit card again in a few months, then work on the equity line that I used to do some of the remodeling on the house. I've paid it down a lot but still a ways to go.

    The screened in porch sounds lovely! Hope it all works out.


    JNettie, hope all goes well with the doc appointment and that you can get stress under control. It's a never-ending battle sometimes. *hugs*

    That bok choy looks scrumptious! I love bok choy. I use it in stir-fry and soups often.

    Spent all day in the office, then my hair appointment that kept getting rescheduled and really needed it cut. So glad to not look like the crazy cat lady from The Simpsons again. Stopped and grabbed greens and mushrooms so I'll make a batch of greens tomorrow. Got home too late and way too tired to deal tonight.

    LOL @ the crazy cat lady image! You could never give off that vibe, but I'm glad you had the chance to get your hair cut, Mihani.

    It is raining out this morning! We need it. Our lawn and fields are brown and crispy. I think Ruby is excited for the rain too. She came in with a big grin, soaking wet, butt wiggling.

    I'm not up for much cooking right now, so we've been getting ready-to-eat bags of salad and topping them off with our baked tofu for dinner. Super simple and healthy for 'fast food'.

    That bok choy looks great, JNettie! Next stir fry I am going to pick some up. I hope your test results are good.

    Organizer is on her way. All my rooms are ready for her except for the guest room which I’m gonna work on when she’s not here or I might work on it today while she’s here I’m not sure.

    First screen Pl. first patio place I called they don’t do screens with Windows which is what I want because one of the monsoons hit and we get wins. I don’t want all that dust flying into my patio windows.

    We've had a couple days of rain and thunderstorms here too, Carla. It cooled things off considerably. I've been doing the bag salads the past few months. They are pretty good as long as you use them up within a couple days.

    Speaking of your lawn and field, what happened with your clean-up project? Did the company you hired finish it yet?

    I got home a little late tonight so I'm putting off making the greens until tomorrow. I just switched cable providers and need to come home early anyway to set that up so I can get it done then. I'm pretty worn out. Lot of time in the office this weekend. I am taking next weekend completely off.

    So tonight is salad with beans and tomatoes and grapes. Forgot I grabbed a couple red garnet sweet potatoes so I'll get those cooked tomorrow as well.

    Found a company that encloses patios with screens and windows. Hopefully I can afford both . If not, I will just take the screens.

    Tomorrow he is coming over for estimate.

    Extremely reputable contractor…LLC and all that . Been in business since 1982. I found him on ROSIE ON THE HOUSE!

    Organizing went great. She comes over next Monday again and we’re going to tackle a huge project. It’s to move all my pictures on to a scanner, recommended by Wayne Fox on YouTube!

    This has been a trying day. But, I'm done for now. Going to do my cooking and relax, get to bed early so I can put in a couple extra long days tomorrow and Thursday. Have plans with friends after work on Friday.

    Glad the organizing went well, Nanc.

    B - oats with all the usual goodies
    L - skipped it
    D - greens with onions and mushrooms, wild rice blend, some of the sweet potatoes (assuming I get off the computer and get cooking!)

    Work day here. Testing software updates and working on some documentation. It is a cool day here with on and off rain so I don't mind sitting at my pc.

    dinner tonight, another salad in a bag topped with baked tofu. Then after that I think we'll do our fajita bowl, maybe with the veggies done on the grill for a change.

    So, my linen closet in the hall substitutes as my pantry...I do not have a pantry in my kitchen...and not enough cabinets...so I gave the linen closet to my organizer to have at it.

    She organized everything so well...I have a lot of vegan boxed broth and noodles or pasta...so tonight I made soup

    broth: sprouts vegan veg broth 2 cups, low sod tamari-splash, Gochujang-vegan Korean chili paste1Tbs, and 1/2 tsp toasted sesame oil, if that...it was a small amount.

    veggies: broc, spinach

    1/8th block cubed tofu firm cooked in the broth.

    Lotus brand rice ramen...one block.

    turned out delish...will make again tomorrow and add bok choy.

    Carla, we had 3 days of rain and a huge thunderstorm night before last. So loud it made me jumpy. Sure cooled things off though.

    Donna, hope all went well and you can check in soon to let us know how you are doing.

    My greens turned out great last night and I have enough to get me through rest of the week. I will be so glad when this week is over and my boss leaves on vacation. Next week is catch-up week.

    July is almost over and I still haven't managed to get into a consistent routine with exercise. Doing better but not 100% for sure.

    Heading to work extra early today and planning a couple long days.

    Nanc, great idea to sacrifice the linen closet for a pantry. I miss having a pantry! I made a makeshift one in the garage.

    I'm putting in more hours at work. It all goes directly to the cabin fund and everything helps.

    Tonight another salad in a bag with baked tofu on top. So easy and we are both enjoying it.

    Have you seen any more promising cabins, Carla? Ha... we are in synch again, but losing your post sucks. I have a pantry cabinet that holds a lot, but I still have to keep canisters of things like oats, flour, etc. on top of the fridge. I want to put in wall to wall cabinets along one wall of the dining room with some shelving mixed in for display. That's my dream project. Had too much else to do here and need to pay off the equity line from all the other remodeling before I can think about it.

    I'm off to eat a salad and chill for a bit before an early bedtime. Going to be a busy couple days until the boss heads out on vacation.

    I have been MIA due to poisoning myself. Went out and had a corn, potato and polblano chowder forgetting most chowder is made with flour. If there was any doubt I have Celiac’s disease it is gone. I have been very good since I was diagnosed last July. I had horrible stomach pain 2 hours after and then sick for next 3 days. It was so different than stomach flu. Full blown allergic reaction. I still feel kinda shaky after that. Took Benadryl, Pepcid, Prilosec, Tylenol and zofran plus lots of liquids and probiotics.

    I spent hours scouring the real estate site for something else I like. I've given up on that. I found the one I want. If it isn't that one, then I guess we keep setting aside money and look again next spring when there's more on the market. This place was affordable for being right on the ocean because it is in a remote location, and because it has a little basement suite that is rented out to help out with the cost. It is also on a tiny lot and doesn't have a garage. Perfect for a summer place since we don't want to put in a bunch of time maintaining a 2nd property.

    Our roadblock right now is that we can't get a mortgage in Canada. You have to work in Canada to have a credit report in Canada and can't use your US credit info. So the workaround for us to put down a lot more to start and then get a line of credit to pay off fast. Not feasible right now for the minimum we wanted to put down and the interest rate on HELOCs right now. 9-10%!

    Time for me to do another round of deep cleaning. I did a good job of cleaning things before my cousin stayed here but it is time again, plus all of this organizing talk around here has me getting into the mood for it.

    I am finally out of the Ezekiel english muffins I brought home. Now to not bring them home again. Or at the very least, to only bring 1 package home! yeesh!

    First time since 2017 November that I will be eating dinner at home when working!

    So happy I made the decision to change sooner than later!

    Oh, and dinner will be more of my soup!

    Carla, that's too bad about the cabin. The picture sure looks lovely. Definitely a good idea to wait until you find another one you really want, otherwise you would regret it.

    I ran to the grocery on the way home for more bags o' salad and greens, and got ezekiel muffins! Haha!

    Happy for you, Nanc! Those hours sound great and will give you so much more time with Lulu.

    This has been a really stressful and crazy month starting with the ransomware and ending with the craziness of getting the boss off on his vacation Saturday. Starting tomorrow at 4:00 I'm going to focus on ME for the next week. I'll still be busy at work of course, but it is less chaotic when he's away.
