What's Cookin?

Hey Pix - I did know some of that and I ended up deleting the whole album and re-uploading the photos at least so I could post the new ones and it's still f'ed up! I'm not a fan of photobucket anyway because it seems really slow and buggy. It often freezes on me when I'm trying to edit photos.
Anyone know any other, possible better, photo share sites? I've heard of flickr but no others.0 -
Pix - the chili is simply gorgeous - especially with the corn bread wedge!
This is a pork loin roast rolled with a filling of chili cran-apple relish, glazed turnips and carrots (Cook's Illustrated), and a simple sautee of crimini mushrooms and green onions.
The relish recipe can be found here (The soup is wonderful too!): http://www.foodnetwork.com/recipes/rachael-ray/pumpkin-soup-with-chili-cran-apple-relish-recipe/index.html
The relish was extra from the soup recipe and was simply awesome with the pork! The turnips and carrots were excellent and easy to do - the whole dish is done on the stovetop in a skillet.0 -
Nikki--can you believe I have never eaten a turnip? Crazy, I know, but now I'm thinking I might have to give them a try. That makes me think of all the veggies I have never tried. I should get on that.

The shepard's pie (Robin Miller's Quick Fix Meals) was just meh. Maybe less than meh. I would not make it again. It had a distinct canned tomato taste (the sweetie picked this weeks' recipes--honestly, it isn't something I ever would have made, just didn't sound good). There are a lot of recipes that sound really good and use more fresh ingredients, this just wasn't it. The balsamic roasted brussel sprouts, on the other hand, were fab-u-lous. Just brussel sprouts, olive oil, and balsamic vinegar with salt and pepper, tossed and roasted. Yum.0 -
Love the chili pic!
I make Taste's of Home Shepherds pie and love it! Except I add peas too...
I just had a turnip for the first time here recently... Not impressed but not bad... Is there much nutritional value in them?0 -

Ok, it isn't cooked, but this is one of my favorite breakfasts lately. Plain Green yogurt with 1 Tbsp. each of wheat germ and honey and 100 grams of strawberries. Next time I need to mix up the berries. Blackberries sound good.

Lunch today. Grilled cheese and my homemade version of Whole Food's Broccoli Crunch Salad. It is not a low cal salad by any means (I'm over today, should have just had it for dinner and not at lunch and dinner), but leaving out the cashews wouldn't bother me a bit and if I am just making it for me I cut way back on the bacon. I haven't tried it with turkey bacon. I'm not a huge turkey bacon fan, so I think if I ever make it when I know I need to be skimpy with the calories I would just do broccoli and grapes with the dressing. The grapes are what does it for me anyway.0 -

I would like to eat raw broccoli.... Can't stand the crunch! Maybe if I pulverize it!0
-
Lovely pics, Pix! Are you getting decent berries this time of year?
Grilled cheese is always so comfort-foody. I'm not a fan of turkey bacon either, and if I recall correctly, there isn't much difference in calories between lovely real bacon and turkey bacon. The difference in the macronutrient ratio with the turkey having more protein and less fat or something. A couple of slices of real bacon pack a big flavor punch, with only 30 calories/slice. Cutting back a bit, as you suggested might be perfect! The grapes look awesome there!
Fallenangel - I don't see why you couldn't do that kind of salad with steamed (firm) and cooled broccoli. It'd be less "crunchy", but that's what you're looking for, after all.0 -
Gnudi (spinach and ricotta dumplings) with Marinara....

Loves--I'm usually with you on the raw broccoli. The crunch doesn't bother me, I just don't like the taste. For some reason I like it in this salad though. It's the only way I eat it raw. And Nikki, you are so right on the bacon. Fake just isn't worth it.

Beef, chicken, and veggie fajitas. No, this is not the new camera, obviously, I just remembered to take a last minute cell phone picture before it was all gone. I could eat fajitas every night. If you ever find Claude's Fajita Marinade, buy it, it rocks. Spicy and smokey without being too salty. Only one store here has it, so every now and then I go there and buy every bottle on the shelf (yes, I'm that person). Their brisket marinade isn't worth mentioning, but somehow they got it right with the fajita one. Anyway, this is whole wheat tortillas (Target brand is good, none of that fat free/low carb crap, just whole wheat), flank steak, chicken, carrots, yellow squash, green bell pepper, onion, and vegetarian refried beans (i.e., lard free) with salsa and sour cream.0 -
Cooking Lights Herbed Chicken and Dumplings....not the traditional Chicken and Umplings my family makes, but a good soup!

The beignets I made Christmas day and breakfast today for brother and I...it is a hash but with egg on top! Cajun flavors...he ate it all!0 -
The hash looks great! And... Well... You already know I have a thing for beignets!0

Ok I'm a dork, but here are my pretzel "Sparklers" Why wave fire around when you can eat chocolate?!0 -
The sparklers look fun, Loves.
Garlic Girl--The hash does look good. At first I though it was huevos rancheros. I know you like Louisiana flavors; if you can, see if you can find a recipe for Eggs in Purgatory. I know it was in the River Road cookbook, but it's probably online somewhere. You would love it.

Lime Marinated Salmon (Cooking Light) with roasted brussel sprouts and carrots. The fish was nice, just a soy/ginger/lime marinade. It was supposed to be broiled but I did it in my grill pan.0 -
I made this for my brother, Peruvian Chicken with Aji Verde Sauce. In the restaurants they serve with fries so I baked fries for him. He loved how spicy the sauce was...jalapeno is in it.0 -
Sorry my pictures are not great.0

Looks great though! And I love salmon! Can't wait til I can get back over to Central Market.... They always have such a good selection!0

Chicken and wild rice salad (with fig vinegarette) from Cooking Light. I've posted it before, but I got a much better picture today. It is seriously good.

Chicken Marbella and roasted fingerling potatoes with thyme. Honestly, this dish is amazing. It has olives, capers, prunes, wine, vinegar, brown sugar and oregano. All of the sweet and the tart blend together in the oven and prunes practically melt. Even Mr. Pickey liked it and my baby at tons of chicken. Oh, and did I mention that you prep it the night before and just pop it in the oven for an hour? Yeah. Make this.0 -
OMG! Delicious! Slurp slurp!0
