    I'm glad he's showing an interest. In the past, it was a real uphill battle. As my daughter recently reminded me, the only way he would help with household stuff was if my ex paid him to do so.

    batch cooking is good, as is a full fruit bowl & bags of unsalted mixed nuts; I just don't keep rubbish food in the house so I can't make a grab for it.

    Eating too much of anything will make you gain weight, though.

    I've heard the name but I've never seen an enchilada. I'll bet Dr Google knows a recipe tho...

    This is absolutely delicious. No meat, just Lentils and seasoning. Dr. Google should be able to help you with a batch size recipe. Again, would be super cheap to made; yet, a fantastic quality meal.

    Time for another batch cooking session. The last of the previous batch of chili is gone as is the goulash. I still have other left-overs... a pan of Costco lasagna and chinese takeaway... so I'm covered for tonight. I bought the tortillas to make enchiladas. Not sure that counts as a batch cook but it'll make the boyz happy, I suspect.

    Mac, I have another batch recipe if you're interested.............it's another Mexican dish with chicken breasts or thighs, rice and black beans........let me know..........I'll be happy to type it out if you want me to. It's another popular one here and makes a 13X9 casserole dish. Hubby and I cut it in half and still have leftovers for a couple of meals.

    I forgot about that, Costco has huge servings at reasonable prices. Just remember as you look through their products, you can make any prepackaged meals they sell at home with better ingredients and it will be less expensive.

    Likely with less sodium as well... but they're in the oven & done within 45 minutes and zero cleanup to prepare...

    Massive, and I do mean massive, batch of tex-mex style chili on the stove simmering. My canning pot is getting a workout. Too bad the bottom is so thin... so easy to burn food...

    Mac, here's that recipe. Just an FYI, I would add another can of beans, I use a can for half the recipe and maybe a little more salsa. Also, I like to cut the chicken breasts into 2 to 3 inch chunks before I freeze them and defrost them just enough so that I can separate them to lay into the casserole. You can freeze them in a single layer so they're easy to separate. Hope that makes sense.

    During my first marriage I used to make various enchiladas with meat/ cheese/ beans.
    Current husband does most of our cooking. He often makes enough for a few days. I do some bean or lentil soups on the stove or crock pot.
    I honor your enterprise :) and wish I had recipes for you.

    I do almost all of the cooking although my son has shown a bit of interest lately. Making bigger batches means a bit less variety but it also means I don't end up overeating because I got super-hungry while making supper. Will it impact my weight? Time will tell. I don't own a scale so I depend on the dietitian's certified scale and I see him monthly.

    I've been baking boneless skinless chicken breasts lately. Like the whole bag at once. Then I've been known to have them over bagged salad, chopped up for chix tacos, thrown onto a bun with some lettuce and cheese, and I even poured a can of black beans over one recently. Just more suggestions.

    Enchiladas were a success. Next time, I will mix the meat & sauces. I thought they would melt & merge in the oven but they stayed separate.

    I think the next batch of enchiladas, I will find a recipe with a bit more kick. I like spicy food and the recipe I tried was a bit bland.

    Canned or fresh jalopenos or similar peppers will work. Be careful handling them if you are sensitive like I am.
