Tonight's dinner: Eduardo's version of the black bean 'n pumpkin chili, made with Kabocha squash rather than pumpkin, but the difference between the two is practically non-existent. A couple of other minor differences in Eduardo's recipe, including the addition of some jalapeño chil pepper...

I'd venture to say this would probably come out great actually using canned pumpkin, even though Eduardo really doesn't approve of that stuff, preferring to make his own pumpkin or other winter squash purée.

    Hi Ed
That soup (Chilli) looks Delicious. I wish I was more into cooking rather than looking for the easy way :)
Breakfast Today will be a couple of Dollar Store Blueberry Waffles in a little while, and the already eaten Banana and NS Coffee Protein Shake.
    Is anybody out there?

Howdy y'all. It's terrific Tuesday! I should have picked up my scrip at Publix yesterday, before the rain started. Guess I'll have to get wet today and go get it.

The remaining chili will probably be lunch today. Can't wait to see what (besides the inevitable turkey soup) Eduardo comes up with for other turkey leftovers from the freezer!

Lilo has been fed. Now it's time for me!
    Hi Again
The Forecast rain started as I was on the outbound leg of this morning walk. I managed to go one Block before it started with the stray drops of rain, during the walk the rain slowly increased to a light drizzle and then a real light rain. The Heavy rain is in the near future for today and another round of rain tomorrow. We do need it and the forecast is for 1 to 2 inches total.

That reminds I need to pull the oldest Turkey from the Freezer, I have two 2 day packages from earlier this fill I want to use up before I get into the frozen leftovers from Thanksgiving.

    Stay Dry

I'm here! Came back to see if anybody posted!
Give Eduardo a hug, he's out done himself with creative left over meals!! :)
Heading for a few games on my iPad while I'm snuggled in my warm jammies and then long nights sleep.
I got the stuff I needed at Whole Foods, including a lot of chicken fried tofu...well, about 2 meals worth anyhow! :)
Wonder if Roger got back out for more walking? Can't believe how long those raspberries are producing!! Would have never guessed they'd still be bearing end of Nov. in NJ, no less! WOW!!

    Ok,,
    Later...

    Hi Valerie
I am amazed too how long the berries are producing and that there were ripe berries despite that we have had overnight frosts. Earlier I brought in the hanging basket we made with Geraniums in it and put it one the window ledge of the unheated enclosed porch and it seems to like it as it now blooming nicely. The porch does stay warmer than the Outside due to heat through the wall of the house.

It was not so much getting back out walking that was planned as walking to be walking as it was Walking to the Doctors for the three month checkup. BP was 120 over 68. Would You like to venture a guess who forgot to fast before the visit, Oh well Blood work during the February 27, 2017 visit :)

    Hi Folks,

Eduardo (not Edweirdo!) has some great leftover turkey ideas. "Lee-Annardo" is not a chef, and not really great at creating those things. Ed - you are lucky to have Eduardo with you!

Having a difficult time wrapping my head and the rest of me around exercising - and good eating. Just off of my eating by a little bit, but at this age there is not so much room for "error" as there was when I was younger. I need someone to get inside my head and get me back on track. Any headwords out there?

Okeydoke...time to get moving. I have to do a good bit of driving today (observing a student and then back to the office for meetings, then finally home...all travel on the NJ Turnpike). Thank goodness my local library has free audiobooks.

I got nothing, so to speak. I just go and do it. I get out walking before I start my day here at home. Then I Work at staying on the NS Plan or NS Plan Plus extra fruit depending on whether I need to lose or maintain. If it were easy none of would be here :)

I eat a Banana before going out exercising and then have a NS Protein Shake on my return and then later on a Breakfast Entree. Sometimes it is a NS entree or low cost Waffles and Pancakes from the Dollar Store or Use 1% milk from the same place on cereal or I have a reduced Sugar Quaker Oatmeal.

Be safe driving around in the rain, I Saw where it is forecast to be heavy later today.

Our Library had (has?) audio books however on tape as they were not a lot of use to me. When I drove further I used Old Time Radio on Tape that Would buy that way or transfer to tape from records.

The mayor of Beppu, a city famed for its hot springs, issued a challenge on social media last week: if his YouTube video hit a million views, he would build a ‘spamusement park’ in the city.

A week later, the video hash 1.8million views, so the park will be going ahead.

It will feature hot tubs that patrons can soak in - as they fly down a rollercoaster wearing only a towel.

Mayor Yasuhiro Nagano announced on Facebook that the video hit the million-mark four days after it was released.

I ate half the leftover turkey chili for lunch. I could have eaten all of it, but I saved some for dinner.

I made J a pot of the same recipe, but substituting a second can of beans in lieu of the turkey, and it came out just as delicious! He likes it and he doesn't notice the squash puree mixed in at the start. He DOES know I was making it with that, so it's not being totally sneaky. So I found ONE way to get him to eat winter squash and like it. LOL. And I made his pot even spicier than I had made mine.

Anyone with kids who "don't like pumpkin/winter squash" would probably be happy to eat this chili if they weren't aware that it contained that ingredient. They'd never notice.

Hi! Yes, its 12 hours late!
Did a few morning chores, had a great lunch with M...the rain, like it was wearing a watch quit when they said it would...cloudy/overcast, but not raining. Tomorrow is going to be all day rain, so I did my weekly shopping after M's lunch. Glad its done... I just wasn't keen on trying to navigate a shopping cart and an umbrella, etc and loading the bags into the trunk, and hold the umbrella..?? Really??
I have 1 ¾ inches rain in my gauge this morning! At first I thought I was not seeing it right, but really is 1 ¾ inches!!!

Ed, folks with 'littles' learn to hide all kinds of food and feed unsuspecting mouths. What they don't know doesn't hurt them...and is usually GOOD for them. Greens can be run thru the blender with spaghetti sauce...and they never know! Same for carrots, peas, etc. :) Pumpkin or squash in chili sounds wonderfully sneaky!

Lee-Ann, exercise and how to motivate oneself is beyond me. I do know, Monday at my Chiro's visit she fussed at me for not exercising like I used to...like I should. So, I guess like you, I'd best get this worked out!!! And, yes these last 3-4 weeks have been without exercise or even much movement..and a lot of little, and some not so little 'allowances' in my diet. You know, poor me...here have ______. FWIW It is now over 1.5 hours Since I filled the Yeti Insulated Coffee cup at the 7-Eleven and it is still warm enough to drink despite that I added a little ice when I filled it so I could start drinking right away. Cold Coffee is something I never have been able to drink.

I hope You like the Video Link in my previous post.

Exercise is something I never really cared for. Now I get Antsy if I don't get out early, Why I do not know.

I was OK when I was doing Physical labor and then when when I stopped doing that is when I packed on the Poundage :( I had built up poor eating habits when they they did not have much effect on my weight and they continued after my caloric expenditure went down.

I do not blame You for not wanting to shop in the rain. I turned down my brothers offer to go grocery shopping with him in the rain for the same reason.

    Howdy y'all. It's wonderful Wednesday!

Finished off the leftover "pumpkin" black bean turkey chili for dinner last night. Still some of the vegan version I made for J left though. He may have that for lunch if he stays home for lunch. If not, then it may be his dinner. Not sure if he's working from home all day or going in for the afternoon. I do know he needs to go in to leave a device on his desk for someone else to pick up.

Eduardo has the rest of my kabocha squash going now in a slow cooker with some broth, spices, and lite coconut milk to make vegan curried kabocha squash soup. I don't expect J to eat any of this, and it's only incidentally vegan since it's using vegan chicken flavored vegetable broth instead of real chicken broth.

So far today Eduardo has not pulled any turkey out of the freezer. We'll see if that lasts and I actually get a day off from leftover turkey. LOL. So far the ride has been fun, and I haven't minded the leftover turkey at all, and I'm sure if any of it makes it to the table today, I'll enjoy it. There should be enough squash soup to cover my lunch and dinner though, so turkey may not be necessary.

Several tornado's in area. All well here, my kids and grands (except for DS1) have all been in the direct line of the tornado's in their areas.
Jack will be traveling home thru a good bit of these areas...he should have interesting ride home. Howdy y'all. It's thrilling Thursday! Looks like our little bit of rain is done, but we appreciate what we got.

Finished off the curried kabocha squash soup at breakfast, with a little bit of hummus, and a few pita crisps.

Eduardo already has some turkey soup going in the biggest crockpot, using up the leftover broth from the freezer, the rest of the very small dice celery (looks like no cream of celery soup from the celery), and some peas and carrots, with a little black pepper and a sprinkle of extra ground rosemary. All that's lacking is the noodles, which will be added later, shortly before lunchtime.

It's already smelling rather nice. Looking forward to lunch!

    Hi Again
That is good news. I also figured out that Your trees survived the winds too.

I have seen pictures of Traffic Signals bouncing all over in Hurricanes and I imagine this was similar. When You said blown off of the lines are they the type type that are suspended from a wire over the intersection or what We have in this area where the line is really short as they hang from the Arms of a metal pole?

We had a High wind storm one labor day holiday and the trip to a family dinner was full of trees down and completely blocked street.

I know You are happy to see the rain. Ours was not torrential it was steady which is most like better as it has more time to soak in.

    Have a Nice Day

    Hi All,

Glad to say I got out for a nice walk this morning. Temp in the 50s. Great for November. Finally will pull apart the carcass of the turkey breast from T'giving. I know...6 days late! But it is still good, so I think we will be safe. The turkey chili looks like something I could do. I can just imagine something like that in the crock pot after work. Yum!

Working from home today. Closing my study tomorrow, plus grading my students' work today. The semester ends in about 1 1/2 weeks, so I have to finish up. And then winter break...yeah!

Will catchup tomorrow. Hopefully the weather will be good enough tomorrow to do an outdoors walk again. Take care all,

Hi! Watching noon news, etc...like finishing my 'breakfast?'. Its a late, lazy morning! (sautéd greens, onion, mushroom, garlic, with just enough veg broth to keep from burning. Then tossed in a cup of garbanzo beans. I'd also made a great little gravy. so a bit of that went on my greens) and half a red grapefruit.
    The gravy is:
1 cup broth, 1T tahini, 1T lite soy sauce, 2T bezan, (chickpea flour), cook, stirring for about 2 minutes til it thickens, and then add black pepper to taste). This has to be the easiest gravy ever, and its tasty!

I ended up with 2.5 inches of rain total Monday night - Thursday morning.

The stop lights Roger, were on a line, not a short wire from a pole. I'll bed it would have been a sight to see. I've seen those lights swing and bounce in just 'regular' wind...

Lee-Ann, I know you're looking forward to 'winter break'!!! Probably every bit as much as your students. :)

Ed your 'crock' lunch will be, or considering the time, was a wonderful, tasty meal!

Yesterday at Publix, I picked up Follow Your Heart American cheese, and another block of sliced Smoked Gouda. I'd gotten shredded pizza, and parm from Whole Foods... I feel positively 'wealthy' with something that is so cheese like...I love it.

Going now to visit the recumbent bike. (my aim is to actually use it :) ) We'll see.

    Hi Lee-Ann
FWIW We pulled the Turkey Apart Thanksgiving and Portioned it up into Vacuum Bags and the freezer by Saturday. I did the Breast meat earlier since that is what I eat and we did my Brothers dark meat later as that is the part he likes.
It works out good that was since that way there is not wasted unwanted part of a Turkey or Chicken :)

Hopefully You get a break between Semesters, Christmas Vacation maybe?

    Enjoy the Day

The lunch was delicious and there is soup left, of course, as it's just about impossible to make just one bowl of turkey soup at a time. I used the largest hunk of breast meat that I had frozen for it, all the broth, plus some added chicken broth, peas, carrots, onion, garlic, herbs.

The Superman serial DVD set I ordered is HERE:

Dinner was a repeat of lunch. Eduardo made some really rocking turkey noodle soup.

One big bowl left in the fridge.

Eduardo is somewhat appalled because Eddie bought a "ready to cook" pork and beef meatloaf at Kroger today, on a whim, as it was on the "sell quickly because tomorrow is the last sale date" rack and looked like it might be good.

The deli there does make pretty good meatloaf for lunch, and I'm wondering if this is the same meatloaf, just to cook at home. At any rate I'll find out tomorrow. Eduardo will, of course, probably insist on cooking it in the same style as my mother's meatloaf, with the same ketchup gravy, possibly even rolling it in additional crumbs prior to browning it. I think it will be good regardless of cooking method chosen. And Eduardo doesn't even have to do the hard part, which is mixing up all the ingredients!

Finished the first Superman serial. Superman successfully defeated the Spider Lady and she died in the process. Too bad for her, eh?

Starting on the second Superman serial now!

    Hi All,
Here's hoping Eddie and Eduardo enjoy the meatloaf. I would just be careful about the sodium. It seems that can be pretty high in many pre-made food items.
I also have figured out what is happening here. As a professor once told a class I took..."dilatory tactics." In other words, doing anything to avoid what really needs to be done. Using the elliptical or outside walking, but saying hi to you folks - that would be the classic example of "dilatory tactics." There is validity in what I am doing, but the timing is suspicious (during my best exercise time as far as when I would typically like to do it). Who says I don't use my education?
Time to avoid the avoidance of exercise. Take care all,

Howdy y'all. It's fabulous Friday! Finished off the turkey noodle soup for breakfast. It makes a very tasty breakfast too!

Looked at the meatloaf in the fridge and wondered whether I should cook it for lunch or hold off until dinner. I'm sure I could come up with something else for lunch. Like...grilled cheese, or scrambled eggs. But the meatloaf is a possibility. It would just take more time to cook than any of the other at home options, at least an hour to an hour and a half of cook time.

I'll decide later on lunch. :)

Sink cleared. Might make that pecan pie for J later today.

    Hi Ed
Thank You for that link. I just ordered it (them?) from Amazon.
$10.69 with tax seemed reasonable to me.

I actually liked the ShopRite Pre-cooked Meatloaf too. I haven't seen it in a while either however, They also did a Salisbury Steak.

Not exactly a huge spoiler that Superman was triumphant :)

    Ah, Decisions decisions...

Pecan Pie sounds tasty too. Not exactly low calorie however so not for me until I get past the Christmas & New Years holiday meals :(

    Have a Nice Day

    Hi Lee-Ann
I have to agree, much of the Prepared foods seem to be high in sodium.

I avoid avoiding exercise by doing it before anything else...

    Enjoy the Day

    Hi
Out the door today it was showing 40 degrees a significant cooling off from yesterday. I walked 7K steps so far.

Yesterday I found a few more ripe Raspberries. They just keep ripening from the fruit that set before it got colder :)

    Have a Great Friday
    Roger
