    I made salmon patties with canned salmon and an egg, topped with sliced marble cheese, avocado, mustard, mayo and baby spinach. They were delicious! Can't post cause I'm on android! :( you'll just have to use your imagination!

    Not quite keto as made, but I had a lot of extra calories left for dinner and I'm using the rest of them for non-carb things. So I went a little wild with the edamame. :)

    Twist on a Rueben Sandwich: Sauerkraut, Thousand Island Dressing, (Not Pastrami) Pork Chops and skipped the rye bread to keep it keto. This is an easy one. Pork Chops seasoned with “Slap Ya Mama” seasoning and pan fried in bacon grease. Hot pan - flipped every two minutes - for a total of eight minutes or until they are done to your satisfaction. The sauerkraut is cold straight from the jar stored in my frig. The thousand island is my low carb, very high fat keto friendly ingredient dressing that kicks up the fat as well as the flavor. I <3 eating fat and I <3 keto.

    Substituted lettuce topped with keto thousand island for your slaw. I loved the red cabbage as a wrap. It was sturdy enough to hold all the goodies and gave the bite great crunch. This going to be a staple for left over pulled pork.

    Tuna cake with a roasted red pepper mayo.
    Tuna cake is canned tuna, eggs, 1/4 cup almond flour with a squeeze of lemon juice, some dill and green onion. Fried in butter. Sauce is mayo, garlic and half a red pepper I roasted in the oven all blended in my magic bullet.

    I keep seeing people posting about their air fryers. I never deep fry stuff because it uses a lot of oil, and it's messy, and then I guess you can re-use the oil in some cases, but eventually you have to dispose of it. And the fryer is such a kitchen speciality item, I think it would be sitting around a lot, which means it would be stored in the basement, and I would forget about it, and then it would be just taking up a lot of space.

    But if you cook for multiple people on a regular basis, then I guess a fryer might get more action and it would be worth it, particularly if your people love fried things.

    Anyway, what brand air fryer do you have. Do you use it a lot? I've got a Ronco countertop rotisserie oven which I heart so much. Chicken is what it does best, but you can cook all kinds of stuff with it. But I'm flirting with the idea of a fryer of some kind.
