    Pumpkin Tomato Soup
    Ingredients
    1 Tbsp. unsalted butter
    4 cloves garlic, minced
    1/4 cup tomato paste
    1/2 tsp. crushed red pepper flakes
    4 cup low-sodium chicken broth (I like Pacific, which is only 50mg sodium per cup)
    1 (15-oz.) can pure pumpkin puree
    1/3 cup grated Parmesan
    3/4 tsp Kosher salt (you can reduce for lower sodium)
    3 Tbsp heavy cream
    Chopped fresh basil leaves, for serving

    In a medium saucepan over medium-high heat, melt butter. Add garlic and red pepper flakes and cook, stirring, until garlic is fragrant and light golden, about 1 minute.
    Add tomato paste and cook, stirring, until lightly toasted, about 1 minute more. Add broth, pumpkin puree, Parmesan, and 3/4 teaspoon salt. Bring to a boil, then reduce heat to medium and simmer, stirring occasionally, until soup is slightly thickened and flavors are melded, about 5 minutes. Stir in cream. Sprinkle with basil.

    @Cornanda yay you!!! Congrats on the loss!!! I make that dressing as well, I love it :-). I actually put in more Dijon than is called for, I just like the extra kick.

    @trooworld I am so happy for you that your BFF is here for the weekend! It sounds like you have a jampacked weekend going on! So much fun, you might need a nap after the weekend is over :-).

    Now I am officially ready for winter, all the summer things are put away and winter things are brought out :-). I did some heavy lifting over the last couple of days and my back was done. I came in my house and splayed out on the living room floor, on my back, closed my eyes and just relaxed. I could hear the dogs playing tug beside me and I was just thinking how grateful I was that they could now entertain themselves and play together. Then BAM!! Ty took her little butt and sat right on my face. Thank heavens she is in heat and is wearing an LBD (little black diaper)🤣🤣🤣. That got me to open my eyes in a hurry lol. Busy day tomorrow, I am going to take that core balance and stretch class at the gym in the morning, then I am taking Ty swimming and then my whole family is going to my daughter and son-in-law's for potluck dinner!

    @laurelfit57 - My brother made the pumpkins; he's very creative. The soup is great, and it's pretty easy to make.

    I'm single and retired, so free time is ALL the time, now! But to answer your question: Websurf; cardio peddling; read (ancient civilizations and mythology, self-help, spirituality, health and fitness); learning Spanish; watch Netflix and BritBox... and I tutor middle-school students online through "Learn To Be".

    Quiet weekend here. DD is going away for a few days and I will be watching her cat. Did some prep for the cat space. My mums from last weekend are planted and I'm enjoying them. DS scored free tickets for Jaguars/Packers today- we are Packer fans. He asked DH to go with him, so they should have a nice day together.

    @Digger61, thank you for being our spotlight person this month! I respect how you stick to your low-carb/protein goals in spite of spending so much time in your truck. I’m sure it would be easier, but at times, it would be tempting to stop at a truck stop and fill up on junk food. Keep up the great work! :)

    Good morning! Our ladies' tea yesterday was so lovely, and I’m giving huge props to our pastor for how he set this all up for the ladies in our church. The room was decorated beautifully, with the tables all decorated with members' china. The men were in dress pants and white shirts and were excellent waiters. We had live music and a lovely woman who talked to us about the trials of life and how God is always with us no matter what life throws at us. :) Today, we have our pastor's appreciation, and we will present the pastor with a gift basket full of stuff for him, his wife, and their sweet autistic son. I think the timing is perfect! :)

    What is your favorite thing to do with your free time? Why?

    Everyone knows my love for the jigsaw puzzle! :D I have always liked doing them, but my passion took off during Covid to pass the time since I wasn't going into the office every day. I rarely do anything under 2000 pieces and have done two 5000-piece puzzles that were awesome and still in my collection to be done again one day. I’m home a lot these days, taking care of my husband and doing puzzles to help pass the time while I watch TV or listen to a podcast helps keep me sane. :)

    I am stressed and getting over sick atm and I've been catching myself eating my emotions the last few days. Trying to use meditation to relax a bit. I'm going to also try some chair yoga. This may be the sick but I am rocking back and forth between not eating and eating EVERYTHING.

    My favorite willpower tip. It's just a little mental dance I do when I feel like I MUST eat something. I remind myself that when I HAVE to go without food for a medical test or procedure, I have no problem doing it. Which means there really is no reason that I can't delay eating (or eat something healthier) even when there's no looming medical test involved. I just tell myself that the food will still be there when it's appropriate to eat it. Cravings are like stray cats: they go away if you don't feed them.

    @micaroo4 I love that tip, and I know it works because I’ve done it. Hunger really will fade. We just need to give it a second. :D


    Good morning, and happy Monday! I woke up with a renewed determination to have a great week with food and exercise. Today, I’m starting a new workout program where I will do weight training three days a week and rebounding workouts four days a week. I also have to get it together and stop snacking in the afternoons! I think the culprit is the coffee, which leads to me wanting a little snack. It has to stop!! :s Today, Joe and I are going to go vote. He has been driving me nuts, worried he won't get to vote, so having that done will be peace of mind for us both. I also need to get gas, wash my car, and pick up a prescription. My sister just told me that they opened up a Hallmark store, and if Joe feels up to it, we might have a look. I always loved those stores! :)
