Yeah, I haven't lost that much weight yet and I can already tell I'm going to have lots of extra skin for my arms. They're already pretty droopy. I'm hoping at least some of it will tighten up over time. Toning/building muscle should help a little.

I usually weigh myself on my cheap bathroom scale daily, which will mostly be the same. It only shows if there's more than like a .1 or .2 difference. However, my Aria scale is a lot more accurate and I use it once a week to log my progress. My bathroom scale I basically just use to check normal fluctuations.

It depends on how you buy your rice. For instance, I buy the large bags of rice. They still have nutrition information on them and I just weigh it and track it that way. The same thing should be true for smaller bags or boxes. How are you buying your rice?

I usually eat cereal or oatmeal. Usually oatmeal only in the fall/winter. You get quick oats that microwave in 2 minutes and you can add any toppings you want (spices, fruit, nuts, etc). I recently discovered adding frozen fruit before microwaving, which is actually really good as well.

I know I'm late to the game here, but if it fits in your calories for the day you can eat it. If I'm low on calories and desperate for something sweet, I normally eat chocolate rice cakes or 1-2 frozen chocolate mint cookies. However, some days I save calories for bigger desserts.

I'd say play around with your calories. As others have said, you may be eating back too many exercise calories, so either cut back or stop doing that. I have a similar problem! However, my waist is shrinking but my thighs and butt refuse to cooperate! I have to wear a belt non-stop and have the waist all scrunched up, which is super uncomfortable. I've also been able to wear mostly medium shirts but still wear a size 15 pants. I look like a ridiculous pear.

1200 calories a day is the minimum for women. However, while doing that much exercise, you may want to eat more than that. Hopefully someone else can clear that up for you.

For most people, it isn't realistic to lose more than 2lbs a week unless you have a substantial amount of weight to lose. You didn't share your stats so on that part I really can't be more helpful.
