Scrambled eggs in the microwave? I do scrambled egg whites in the microwave when I want something quick, throw a bit of peppers and onions and a bit of shredded cheese. The other day I made it into a wrap. Messy but with a bit of lite mayo, soooo yummy! I'm assuming you have a small fridge/microwave.

I've been looking up recipes for roasted butternut squash, it looks yummy and a good way to cut down on calories as opposed to having potatoes. I'm not sure I could get as wild as trying cauliflower just yet though, lol.

I'm not a bean eater. I used to love canned beans, terrible I know, but it was another thing we grew up eating. I don't eat them anymore, holy sodium. I do like green and yellow beans, but I only like them fresh, I don't like them cooked.
