Meat & Potatoes Girl

Hi everyone! Just looking for some food tips for someone who, well, doesn't really like veggies (gasp!). Not all veggies, but there's not many that I like. I was brought up on meat and potatoes! I will eat: onions, peppers, mushrooms, and simple salads like garden salads or spinach salads. I like carrots and turnips in stews, and will actually munch on carrots, but it's not something I ever snack on. I'm always looking for recipes but find that so many of them are not something me (or my husband and little) will eat. I've been eating lots of stirfry lately, and I love them but one cannot live on stirfy alone....
Please don't judge me

You sound like my wife. I use www.mccormick.com to find a bunch of new recipes for veggies. Even ones that my wife typically won't eat. It's all in how you prepare them. I like to try one to two new recipes a week to see if its something I would fit into my routine.
Other good snacks: greek yogurt, nuts, cheese, protein bars, and fruits. Personally, i tend to eat larger meals and don't snack as much.0 -
Have you tried roasting vegetables with a little olive, salt and pepper? Yummy0

Nothing wrong with meat and potatoes as long as it is lean meat and no high calorie toppings on the potato. Eating Well has a good Sloppy Joe recipe with onion, peppers, mushrooms and lean ground beef you might like.0

Some good tips. I think I'm going to drink my veggies. Once a day...choke it down...then back to my meat and potatoes.0

I love how active these boards are. I left my question open, went down to have some coffee with my co-workers (granted, I was gone longer than I should have been), came back and saw a bunch of great responses. Love this place0

I was the same way about vegetables now I practically roast everything - mushrooms, carrots, onions, radishes, asparagus, artichokes, green beans - even potatoes0

turnips, carrots, leafy greens, potatoes, onions, peppers and mushrooms is pretty decent variety. Do you also eat beans?0

I'm not a bean eater. I used to love canned beans, terrible I know, but it was another thing we grew up eating. I don't eat them anymore, holy sodium. I do like green and yellow beans, but I only like them fresh, I don't like them cooked.0

I must try this roasting you all speak of.

Nothing wrong with fresh beans. I eat canned beans all the time.0 -
nothing wrong with meat and potatos. but it is harder to feel full on just those.
grown ups eat their vegetables. popeye eats his vegetables. be like popeye. except dont get into as many bar fights.0 -
Do you like soups? My husband doesn't care for vegetables but will eat lentil, leek and potato, broth.0

Cut a cabbage head into I inch thick slices. Brush each side with a mixture of olive oil, salt, pepper, and smashed garlic. Line a cookie sheet with foil and then parchment. Lay the cabbage on it and roast 20 minutes at 400 degrees. Turn them over with a spatula and roast for 20 more minutes. Tastes like garlic bread. Drooling!!!0

Nothing wrong with sodium, unless you have hypertension. In fact, if you are active, you need more sodium than the average individual as sodium is one of the components of electrolytes. I commonly eat 5000mg a day, but I also workout hard for an hour. And considering the health benefits of beans, I wouldn't stress it.0 -
I roast and or saute mine- I use bacon grease and garlic.
these two things make a huge difference.0 -

Oh don't do that. While I love roasted cabbage don't give unrealistic expectations. It will not taste like garlic bread.0 -

I like potato based soups, and some noodle. I've really never ventured into making them though. But it's something I may be trying soon, as I've been looking up recipes like a fiend these last few days. Seriously, obsessed.
It's not so much stressing over sodium, it's how it makes me feel. Extremely bloated. No one wants to be around me after having too much sodium!

Roasting veg tends to bring out the sweetness in the veg, and for many people, that is the attraction for this cooking method. I lovelovelove roasted cauliflower, butternut or acorn squash, brussel sprouts - they taste completely different from the way my mom used to make them, which was to boil the snot out of them (or into them).0
-
I've been looking up recipes for roasted butternut squash, it looks yummy and a good way to cut down on calories as opposed to having potatoes. I'm not sure I could get as wild as trying cauliflower just yet though, lol.0
-
PS - I'm thinking cubed, roasted butternut squash with some cinnamon. Anyone know if this would still be good for lunch the next day? I don't know if anyone else would eat it at home.0

I like meat and potatoes too! I usually make a roast in a crock pot with potatoes and carrots. I also like to bake in the oven chicken (boneless skinless), chicken stock, yellow squash & zucchini. Roasting veggies is good too! I've gotten into eating a raw bell pepper and raw baby carrots for lunch each day. Fills me up and lets me eat other stuff since it's low in calories. I'm always looking for ways to add more veggies:)0

I got myself an Idaho boy who lived on meat and potatoes and fast food. We've come really far!
Do you like to grill? Throw some asparagus on along with your meat. Broccolini is better than regular broccoli to both of us. Saute in a pan, add some garlic, sesame oil and seeds. Another surprising one that he likes is brussles sprouts- I cut off the bottoms, slice in half, and roast with salt pepper garlic.
Another thing you could try is spaghetti squash or zuchinni noodles. I don't usually eat them alone, but I'll take just a half portion of pasta, and mix the zuchinni noodles in. This bulks up the portion (sometimes I'm a volume eater), saves calories for other things, and gets another veggie in.0 -

This!
Just dont drown them in oil, but a little fat sprayed on them is good.
You can get powdered roast garlic, stick a bit of that one them. Hoenstly, it will totally revolutionize your veggie habits!
Also, try making a slow simmered minestrone or provencal soup. Stick a dollop of good tomato pesto in there and some butter beans.

You guys are wonderful. Seriously, love this place I'm actually looking FORWARD to trying new things. I'm going to buy some pre-cubed butternut squash today and try that first. And soup! I want to try making soup. And roasting veggies! I feel like since starting this only a week ago, I feel enthusiastic instead of feeling like I'm restricting myself. Thanks everyone!0

For what it's worth, mashed cauliflower is delicious (I put some cream cheese or laughing cow in it). And I love mashed carrots or spinach mashed potatoes too (need to do that again!).0
