Before I wasn't low carb I would make "puddings" from a banana, unsweetened chocolate, and avocado. I have an immersion mixer so I think I'll make puddings again except with a lower carb fruit.

I have PCOS and at one point when I weighed about the same and had different eating habits, my blood test said I was borderline prediabetic. The doctor gave me Metformin. After gaining weight again I changed my diet and lost the weight gain. My blood sugar is significantly lower and I didn't have to use meds.

Something tells me YMMV, as everyone's bodies respond differently. There's no way someone should ever eat "no carb." There's no medical basis for that, and it's unhealthy. But I can see how cutting out those carbs led to craving sweets-- you're not the first person to experience it.

Yes you have to weigh by grams, ounces, fluid ounces, etc. Measurements like "half a cup" vary because different foods have different masses.
