It sounds like your iron was probably pretty low. Low iron leads to feelings of tiredness and weakness. Since you started focusing on your protein intake, your iron started to go up!

This may be true, but you can't eat them whole. Our bodies can't break down a whole flax seed. It's kind of like corn. You can tell the day after when you've had corn if you know what I mean... :-) Ground flax seed is best.

I'll have to look into that book. Never heard of it before. There is going to be a ton of debate around here on whether or not red meat or meat in general is good for you or not. What dietary guidelines are you referring to that are 2,000 calories? The ones on food? 2000 doesn't apply to everyone.
