Since it is meatloaf you could separate the meatloaf into muffin tins and you have perfect portions as leftovers also! We used 1 1/2 lb turkey last time and that made 12 flat topped "muffins" It also cooks a little quicker!

I am envious! My husband supports me to a point. He doesn't have much weight to lose but he could definitely lose some body fat (the beer belly that he got without ever drinking) and show some muscle definition again! Hubby would rather play video games or watch football than workout with me :(
