I think its alright to do that much cardio if your body isn't responding negatively. You should input it into MFP, and eat back some of those calories... because you must be burning at least 1200 from all that cardio (which means your only getting 500 calories from food/day)... Just my take

What if I dont eat back the calories? Originally I decided I wasn't going to work out very much. But I think I will 3 times a week. A) should I always type it into MFP? B) what happens if I dont eat it back?

I am :) ... Yeah it tough, finals week for us here as well I bought these meringue cookies I just snack on those when i get stressed

Try things like beef/lamb a little more fatty but shouldn't be high in carbs? (might want to google it though :) )

I hear so much about the whole "starvation mode" thing. If I go under by 500 will it result in this?

I think it depends on how hard your working out. Generally if its just cardio I dont think you NEED anything. But it probably doesn't hurt to have a little something (an apple) to help your body :). I find when I workout at night I have a terrible time sleeping but to each his own!
