Looking at your photos, I would almost say 1.5, let alone 3, per week is too much. I don't know what your goals are so I can only speculate, but I would think you are on a fast track to losing too much lean mass at that rate.

Every Sunday when I shop I buy the bulk chicken breast packs for 1.99/lb (check BJ's, ALDI, Sav-a-lot). Cook up all 5lbs at once, cut up into pieces, and put it into the fridge. You can use it for almost anything, salads, pasta, chicken salad, stir-fry, etc. It only takes about 20 mins a week to do this.
