I was thinking the exact same thing, because my schedule is somewhat like yours. I usually take a day off on Sunday. If you love working out there is no stopping you especially if you enjoy the cardio.

Yeah drinking water is hard for me also, but I manage to drink 8 cups a day.

Yeah I am looking into some leg exercises, and running has become one thing that I look forward to everyday so its not really a biggie.

Keep on going, try not to weigh yourself everyday at least keep 10 days between you and the scale. Also weigh yourself first thing in the morning and try using the same scale.
