Stop trying to rush weight loss. Let it happen as it happens, otherwise you will not be doing it for long term success and that's a worse defeat than losing slowly. Slow and steady is the way to go.

Sodium does not affect how much you lose. All it does is simply retain water a bit longer. Water weight isn't really weight, it's just water. I know this may sound counterproductive, but drinking more water will lower the extra sodium. Good luck.

I'm pretty sure I eat more than 2500 on days I work out. I eat around 1200-1700 on resting days (days that I just sit around like a couch potato, depending on what my stomach can handle).

I eat exactly the same stuff I ate when I was much bigger. I am still overweight, but my ticker shows what progress I've made by simply adding cardio and weights to my daily routine.
