Eating after working out

How often do you weigh yourself?
I usually weigh in about once a week. However, I haven't weighed myself since Christmas because i know I gained some back and don't want to discourage myself. I've been working hard and eating right again for about the last week or so and plan on weighing myself next week.

What do you do on the pads?
Do you run, walk, dance, march, or whatever? I generally march or dance without lifting my feet because I have had 2 knee surgeries and am afraid of the stress jogging might put on my knee.

What happens if you don't eat enough calories?
I find myself falling constantly 300 - 500 below my allotted calories. Most times I'm just NOT hungry. Is this bad for me?
