Well, I cleaned and snapped the green beans from the CSA box. I'll be having some of them as part of my lunch, I think. The supposedly 3/4 pound of green beans weighed in at just over a pound AFTER cleaning and snapping. Now to rinse them and cook.
Well, in a while anyway, at lunchtime...and I think I'll fix a small tuna steak to go with them, and maybe a small baked potato.

I steamed about half the green beans for my lunch, and they went VERY nicely with my tuna steak and small baked potato.
I can't remember the last time I actually sat at a kitchen table snapping beans...must have been 1977 or earlier! Not too terribly tedious for only a pound or so of beans, and I LOVE fresh green beans. But I have NEVER bought fresh green beans at the store. Because it's a pain to shop! And I have to grab handfuls and put them in a bag. And see what they weigh and stuff...I can definitely learn to live with letting someone else select my produce, if they keep doing this well on that.

Howdy y'all. It's marvelous Monday! Looking forward to this week's box, with veggies and fruit! Yellow beans (wax beans?) instead of green beans this week. Some of those may make it to the Christmas dinner table.
I don't mind snapping a pound or so for personal consumption, but wasn't fond of helping to snap a bushel or two with the family back when Mom was canning green beans. That made it too much like work because it WAS work. Thank goodness for having a lot of brothers and sisters to help.
Roger, I might try the scissor trick with the beans.
Oh well, off to the salt races.

From the previous box, I ate all the lettuce. There is still one tomato, which I'll eat tonight. The turnips, potatoes and onion are still here, but some of that may be used on Christmas. J ate most of the cucumber today, with me eating just one slice so I wouldn't be eating cucumber all evening. The zucchini and the bell pepper went into the veggie fried rice that I made for his lunch. Nothing has gone to waste! My plan is for none of this healthy food to go to waste, and it is already inspiring me to eat more veggies, which was the plan.0

Howdy y'all. It's relatively late now, on Christmas Eve. We shut down the fuel center at 6:00 and I left the store at 6:30 to come home and eat the leftover fried rice I made for Jason the other day. Now just sipping water and pondering snapping these yellow beans, but I think I'll wait until tomorrow...

The Burdock Root-Wintergreen is the only thing I have never tried or even seen.
We have two Hams, One Cooks brand from the grocery store and one from a Place in Pennsylvania called Dietrichs in Krumsville Pa., where they make or smoke all their meats and baked goods. You might find their list of foods interesting.

I've seen burdock root at the farmers market but never actually cooked any before. The quantity delivered was larger, in volume, than I expected, but I'll have fun with it. From what I've read it can be eaten raw in salads or stir fried or even in soup. It was just a "one off" that I got for fun. You know how I love to play with my food!
I used to get those Cooks brand half hams every year. Not terribly expensive, but I could make up a nice honey brown sugar glaze for them that would knock your socks off and they came out quite nicely when re-cooked. Now I usually (as this year) buy a Kroger brand spiral sliced half ham that comes with a packet of glaze mix that I jazz up a little to suit my taste. It works, and costs less since I get an employee discount.
I looked at the web site. They have some interesting stuff, including RING BOLOGNA! I love that stuff, and it's hard to find in stores. So hard that I had trouble convincing some of my friends that ring bologna (and rag bologna) are actually REAL things that people do make and eat. I'll keep the site in mind if only for the ring bologna. I didn't see any landjaeger snack sticks there, which I also love, but I don't really need those...I just eat too many and then regret it. LOL! Just about any of those smoked sausage type things with some whole wheat crackers, cheese, and good, spicy mustard...Mmmmmm. I get fat just thinking about that!

Beans are snapped! I think I'll mix the yellow beans and the rest of the green beans from last week. I used Roger's idea of scissors and snipping...er snapping the beans was a ... well... snap!

Christmas dinner:
Duck with orange sauce, honey glazed ham, scalloped potatoes, buttered green and yellow beans, broccoli rice cheese casserole, Parkerhouse style rolls. Cheesecake in a while. Right now I'm finishing my large glass of wine.

Sounds nice, Val! I have enough leftovers to feed Rhode Island, I think...but supper was just a small subset of dinner. I had some of the roasted duck with orange sauce, a spoonful of scalloped potatoes, a nice serving of the green and yellow beans, and a couple of small rolls, along with another bite of cheesecake.
Not NEARLY as much food as at dinner. I have a huge plate of sliced ham left, and a nice, meaty ham bone in the freezer for making ham and beans or ham and black eyed peas. Still about half the duck left after supper. I'm letting D eat most of the broccoli casserole, as I made it mostly for him. It's one of his favorites. He liked the duck well enough but he's more of a ham person.
That's fine with me, as I love roasted duck with orange sauce and it's a rare treat for me.

Howdy y'all. It's sensational Saturday! I have to go do the "day after Christmas" opening today, but only scheduled myself for 6 hours. I'm letting new guy open tomorrow, so it will be his BIG TEST as it will be his first time alone, after his last 4 hours of on the job training this morning.
Leftover ham and some of the scalloped potatoes for breakfast.

Howdy y'all. It's scintillating Sunday! Finished off the roasted duck with orange sauce for breakfast, along with that last spoonful of scalloped potatoes and about half of what remained of the beans. I think the beans will be finished off at lunch or dinner. I plan to stop by the fuel center, ostensibly on a gas and grocery run (not really desperate for either one, but there are a few groceries I need) and see how the new guy is doing on his first solo shift. I'll buy some dark bread and some Swiss cheese and may have a lovely ham and Swiss sandwich for lunch. I don't get that very often either, and D got a tiny jar of some tasty, spicy mustard from his mother as part of his Christmas box but didn't care for it so it was immediately re-gifted to me. It will be great on a ham sandwich! He'll eat the rest of the box, which was a small summer sausage, a small block of cheese and some crackers.
Almost finished with my "juice" that is really a sugar free orange drink mix that tastes more like Tang (remember that?) but provides plenty of vitamin C and at least gives me the illusion of having a big glass of juice.
I'll head to the fuel center and store about halfway into his shift I think. Assuming Lilo vacates my lap by then. LOL!

Howdy y'all. It's wonderful Wednesday! Supposed to be 90% chance of rain today. Sigh...or is that SOUPposed?
It's tag day, maybe, the holidays mess that up sometimes. Tag day might not be until Saturday again, like last week. One never knows.
Finished off the last of the sliced ham for breakfast. All that is left now is the ham bone that will need to be taken out of the freezer, if I remember, tomorrow morning to thaw up for making of New Year dinner black eyed peas!
I've got collards. I've got smoked, sliced hog jowl for trimming, dicing, and mixing in. And, of course, I can make corn bread. If I make some great northern beans (vegetarian) and fry the cornbread, and do the collards vegetarian, J may even partake.

Tag day sometimes moves because of a holiday, but it was this morning and there wasn't a whole lot to it. The tag fairy DID have to change ONE of the tags on top of the pumps, but it wasn't really raining yet when that happened. Later, though...I was wondering where I could find some gopher wood!

CSA box arrived! The avocados will have to soften up for two or three days before I can make Guacamole (or anything else edible) from them. The bananas are also not quite ready for prime time, but hopefully some will ripen just a tad faster than the others so I don't suddenly find myself with 5 VERY RIPE bananas. If I do, then I guess it's banana bread time!
I'll probably snip, clean, and freeze the yellow beans tomorrow. The kale should be fine for a few days, maybe even a week. The lettuce will be salads for a few days. I think it will hold long enough for me to let the tomatoes redden up a bit more.
I already ate one of the tangelos. Delicious!
And yesterday I roasted some of the first week's turnips, with other veggies, shaken in a bag with salt, pepper, olive oil and other seasoning, then roasted until done to my satisfaction. They went very nicely with a piece of pan fried grouper.
J has been out of town so much (his father is having some problems) that I haven't been able to use up the veggies and fruit as quickly as planned, since it's just ME eating most of them. I may send some of the fruit back with him in a couple of days. He's here for a few, so I'm planning to use some more up while he's here! I'm working on using up the more perishable stuff and altering the box for next week to have more stuff that holds well. Nothing has yet gone to waste, and my plan is that nothing will! I'm eating more fruit and veggies than I have in a long time and it feels good.

Those "baby" bananas have to get kinda brown before I really like them. Even the big ones are best when they get a lot of brown spots on them, and the little ones need MORE brown spots.
New year food was a success. J even ate a bite of greens! I did make them vegetarian for him. He had his Great Northern beans. D and I had black eyed pea, ham, and hog jowl soup. Everyone had fried potatoes, onion, and bell pepper. And I confess I had TWO servings of the corn casserole/spoonbread casserole/corn pudding/whatever your family calls that thing...but then it was the first time I've made that thing in YEARS. J and I both love it, and it's dangerous!
Going for a long nap now. Dishes are all in the dishwasher and it's running.

Howdy y'all. It's sensational Saturday! 35 degrees out there, and I'll be out in it shortly as I have to work my sixth day this week. But it's only for 5 3/4 hours so that's not too bad I guess. At least it's not supposed to rain!
Had another bowl of my ham and black eyed pea soup for breakfast. One bowl left to have, which will probably be lunch. I didn't have any more of the corn casserole for breakfast, but I wanted to! There is one decent serving left and I am really planning to leave that one for J if I can manage to not pounce on it for lunch. Maybe I'll grab some cornbread at work to have with that last bowl of soup instead. LOL!
I think it needs to be years again before I make that corn casserole...unless, perhaps, I'm taking it to a party where I have no doubt it would be entirely consumed. I gave one of my cousins a point to the recipe (very easy) when she needed something to bring to a tailgate party. She doubled it and said it was a real hit.

I do not recall ever having the corn casserole You mention. In NJ we have had Jimmy Buffs Italian Hot Dogs since
I was a kid.
A Jimmy Buff Italian hot dog goes on a quarter of a large roll of Italian "Pizza" bread (sort of a fat pita).
The dog is cooked in Hot Oils and then topped with sauteed onions, peppers and potatoes.
You can also order a double, which is two dogs on a half a "Pizza" roll.
Or you can order Italian Sausage Sandwich which is made the same but with delicious Italian Sausage instead of Hot Dogs.
They are greasy but so good.

Those hot dogs look amazing! I happen to have some Italian sausage links in the freezer but don't need to eat them any time real soon. New year food is all eaten up. I do have a small tur-duc-hen roll that I cooked yesterday to eat up, stuffed with cajun sausage. It should be good. I'll likely snip the yellow beans in a while and clean them to have some with a nice slice of the tur-duc-hen roll for tonight's dinner. Maybe finish off last week's broccoli share and start on this week's lettuce, to have a salad with that.

I also use Greek yogurt in lieu of the sour cream. The dish I use for the casserole always takes quite a bit longer to set in the middle, over an hour, despite their "35 to 40 minutes" in the directions. Perhaps they use a larger, more shallow dish. I don't know...and the Autry Foods corn muffin mix has their own variation on it, using cream cheese rather than sour cream, but it sounds about as tasty. Spoonbread is kind of a southern thing. There are a lot of recipes for it. Fried hot water cornbread is another, and has a somewhat spoonbread like texture in the middle, if done correctly.
