    And I was up til 'tomorrow' ie, 2am this morning! When will I learn?
    Heading to the shower then my big burrito followed by the gym, Costco for gasoline, Kroger for sparkling water and more lg flour tortilla's, then I may treat self to a pedi at the place next to Publix...while there I'll hit Publix for lottery ticket and a salad. Those salads look pricy, but it makes 3 salads for me which makes it quite reasonable. And I'm lazy so no prep on my part other than to make a batch of my FF, low sodium, salad dressing which works out to be about 45 calories for 2 tablespoons!
    Not only did I get a downpour here in the afternoon, but again at around 11 last night! Almost afraid to go look at the rain gauge!! (not really).
    Need to look at email to see if anything actually Needs attention also....gonna be busy today, and its Jack Chat evening so I have to be done by 4p.

    That is a nice & tasty looking plate of food. I would be removing the Red & Green peppers as I do not eat them, however I am used to doing that with a lot of the NS dinner entrees.

    Is the gas at CostCo so low in price that it makes the trip worth the savings ? The Closest CostCo location to me does not have gas.

    Did You send for the coupon for the free Poland Springs flavored Sparkling water 8 pack ?

    I did some weeding as I walked back to the house this morning, Yesterdays rain made it easy.

    One thing I have noticed is that many commercial Fat Free foods are loaded with Sugar or Sodium.

    Howdy y'all. It's terrific Tuesday! 74 with an expected high of 90 and 20% chance of precipitation.

    With the pouring rain, needless to say, I didn't stop at Kroger yesterday afternoon so might get out to the store today. We'll see.

    The 20% chance of rain seems to have become 100% for You based on what You said :(

    There is always the next day, I do have two umbrellas one large heavy on and one light folding on from the Dollar Tree a while back that is smaller and much, much lighter. I always wonder how they can do things like that so cheaply and everybody along the pipeline to the store and in the store makes money.

    Before I forget I did see Four Deer crossing the street ahead of me as I was walking.
    Noodles in an Asian style sauce with dry fried tofu and veggies.
    That dish looks tasty and I see Broccoli, if You had not mentioned Tofu I might have guessed that the white triangles were thin chicken breast fillets.

    Howdy all y'all. It's wonderful Wednesday! 75 with an expected high of 91 and 20% chance of precipitation. Might get out to Ingles or Publix today, and maybe Aldi (mangoes for $49 each!) but we'll see.

    Might start some laundry too. Dishwasher is running now. Need to clean out yesterday's cat bowls.

    Valerie, I must say the plantain peels looked great! How was the slow cooker vegetable curry you made the other day?

    I got to the grocery (just Ingles) and bought what was necessary. I also bought two cans of young jackfruit to play with and see if I can make something like sloppy Joes or barbecue without it being too meatlike, so that J may enjoy it. We'll see how that works out. Have you used yours yet, Valerie?

    The jackfruit was purchased on a whim, when I happened to spot it in the canned meat substitute section at Ingles today. I had read of it and watched a number of videos detailing ways to make meat-like dishes with it, such as sloppy Joes, tacos, etc, but had never seen the canned young jackfruit before. It was on a "two-for" sale as a new item so I bought two cans. One of them was in tonight's dinner and the other will likely be used for a similar dinner another night.

    I decided to be very daring and use it in an untried dinner meal kit which normally called for chicken. I had intended to try that meal kit with dry fried tofu but supposedly the jackfruit would also soak up flavor from whatever sauce you put it in.

    As the jackfruit didn't really have much protein, I also decided to add a can of black beans to the dish, to increase the protein. Surprisingly, the jackfruit isn't particularly high in carbs either, which made me happy.

    After draining and rinsing the jackfruit, I cut it into slightly smaller pieces. J commented that it looks an awful lot like chicken and seemed very skeptical about actually eating it. I have to admit it did look very chicken like, or perhaps very strange mushroom like. But it was neither and I proceeded to make the meal kit, following the instructions on the box, but using the jackfruit and black beans instead of chicken.

    We were both very pleasantly surprised by the resulting dinner!

    The meal kit made a very tasty sauce and would, I think, have been splendid with chicken, or tofu, come to that. Reasonably spicy but not enough to melt anyone's face. We would probably have enjoyed a bit more spicy heat, but I wanted to give it a fair test with no alteration other than the meat substitute(s) and I did.

    I would have to give this meal kit a good solid 5 out of 5 for a box mix. Would a fully home made version be better? Probably, but I don't know that I could have made one that was better, and this was very easy to prepare.

    The jackfruit, while not really having the texture of chicken, at least not prepared the way I did, was quite nice, and picked up the flavor of the sauce beautifully. I can see how, if one dried it out a bit, it could very easily be a more convincing chicken or pork substitute, and may try that sometime for fun, but since J doesn't WANT a meat substitute that tries too hard to be really meat like, it was perfect.

    It's actually right there next to the canned meats at our Ingles. Your stores may have it there or it may be over in the "natural" foods section, or possibly both. I've seen some items displayed in both places at the same time occasionally, but that's rare, as shelf space is usually at a premium and there isn't room for a lot of duplication.

The bulk of the carbs, mostly of the not so good variety, was in my quarter of the sauce mix plus rice, but not terribly bad for a dinner serving.     The jackfruit wasn't what I would consider REALLY expensive, but it wasn't cheap either. I expect I could get it (or another brand) for less at one of the local Asian farmer's markets. I just have to be sure I get the YOUNG or GREEN jackfruit packed in brine, and not the mature jackfruit seed nodes packed in syrup. I'm sure they would be delicious packed in syrup, but I don't need that! I have eaten mature jackfruit nodes and they are delicious, fresh from the jackfruit, but it is very messy and sticky to get them out and you get latex from the mature fruit all over the sink, your hands, and the knife. Worth it once, but I think I'll just stick to more easily accessible fruits for the most part.

    Messy hmm... Was the clean up hard due to the Latex ?

    I thank you Ed for your 'courage' in using the Jackfruit! I've even seen them 'whole, fresh' at my Kroger on occasion.
    Will have to eat the bbq Jackfruit I bought. Its good thru 2019 so I haven't been in a hurry. My only issue, and its because of my BP would be the 800+ grams of sodium. BUT, I can work around that...
    I was really pleased with the crock pot curry. Only next time I HAVE to half the recipe...I ate curry for 6 days, and there was more, (not a whole lot but at least a lunch and a dinner) that I put down the garbage disposal. It was nicely spiced, like a mild curry...so Ed would need to bump up the heat, but I'd rather add heat to a recipe than it start way too spicy.
    I will look for the boxed meals...Obviously not the Butter Chicken, and yes I saw milk on the list of ingredients that you used to make the Jackfruit but its ingredient #6, which means it was very minimal...also telling is there was no cholesterol...plants do not have cholesterol!!
    Pizza...ok, here goes another war in my life which right now is knee deep in conflict...but I like thick crust pizza! Its always been my choice.
    About to say good bye, and head to the gym...I NEED my gym time these days. And I will most likely come straight home...I have enough food, drink, fruit and veg's. So I'm good. I will do a Kroger run tomorrow. My dry cleaning is in the Kroger shopping center and will be ready for pickup, and I need 2 Amy's frozen dinners....they're on sale, 2/$7.00. At least one of them will go to the north country, I'm doing a Sat-Sun morning sleep over with my grands so their parents can to to a concert. So, if you don't hear from me by Tues. I'm probably in jail. LOL! jk!!!

    Ok, need to get my shoes on and get to the gym. Then I'm coming home and make a bean, rice, avocado and tomato big burrito for my lunch along with a salad. Not sure about dinner...it might be a good night to try the jackfruit!?!

    Oh, skip later. Roger I read the article you linked recently about Chicago, maybe giving families $500 a month. You know if you lived under a bridge, had no phone, and ate in soup kitchens...that might work. But who the Hell can exist on $500 a month, part of which, if I read the article correctly would be taxable. To state, to fed's, ????City taxes? I see the $500 flying out the window ...........
    I think this article raised my BP at least 20 points. The ignorance of well off government cookie cutter employes...gaaaaah!! I have no qualms over a minimum for standard of living, and that adjusted on location, and other parameters...but its the word LIVING that has me chewing nails...
