    Low in calories and absolutely delicious! We started off last night with a tomato, red onion and small amount of blue cheese, drizzled with balsamic vinegar and a touch of olive oil. 👏💃👍

    Happy to continue with Game on Challenge - I'd recommend it to everyone -it's not as stressful as it sounds! :)

    Sunday 23 June: 12,500 wandering round a local stately house and gardens, also did 50 lengths swimming. We did have an afternoon tea, but I was very restrained and only had a toasted teacake (with butter!!), whilst people around me went for a scone and jam and lovely looking cakes! o:)

    Looking forward to the end of the school year, so I can start spending time on more interesting things, rather than marking, writing reports and teaching!

    I have been AWOL because sometimes having autism makes me completely non-social.. The nature of my job is that I have to talk to my coworkers, patients, and insurance companies and I just haven't even felt like checking in for days.

    Autism is an odd thing. My mind perceives things differently than yours (or most of yours). Because of that, I have to work hard at being social. And harder at not offending people. This week I just have not been able to get my act all the way together to be a good team mate and I apologize.

    The BIG change in my life - learnt just a few days ago that I'm PREGNANT! I'm over the moon! We've been TTC, to give my 4yo a chance at having a sibling, for sometime now. When I turned 40 in Jan this year I wondered if I should give up on that dream. And now this!

    I'm waiting for the first sonogram in a few days, which will tell me that everything looks okay. But that will probably mean I can't do this challenge now since my weight chart will be on an upward trend, albeit at a sensible rate. Fingers crossed!

    BTW, you guys are literally the first to know!! :blush:

    What fabulous news! Congratulations :) you’ve been working hard to be fit and healthy and I have no doubt it will prove to benefit you through this pregnancy. Don’t stress about the scale but keep up your good habits!

    In the interest of this week’s challenge I have a topic/question. In a different group that I’m in a member brought up how disappointed they were over their stress eating. A few members piped up, including myself, that we too are stress eaters. I realized though that other than keeping binge foods out of the house I had very little to offer as a potential solution or alternative. So here goes, for those that do or have stress ate what do you do instead, alternatively what hasn’t worked for you?

    Stress eater and drinker here. In fact the stress drinking was probably even more detrimental to my weight. I find that keeping on top of my calorie tracking works because I can see that my calories are within in goal and a binge would blow it. I will try to mindfully grab a big glass of water and drink it slowly. I go outside, or play something with my kids.

    Basically I try to find things to distract me long enough to feel calmer. Moving my body helps.

    Chicken Breasts with Artichoke-Olive Sauce - looks absolutely delicious and I can make healthy. Looking forward to trying!

    Here is the recipe and I made a riff off of it:

    Changes made- added an assortment of olives in the mixture and instead of stuffing the chicken breast, I did a roulade and used a meat clamp. I put it directly in the air fryer instead of browning it on the stove (was worried about flavor), it was delicious! However, not like browning in olive oil, but a great alternative while watching calories.


    MEDITERRANEAN STUFFED CHICKEN BREASTS
    COURSE: MAIN COURSE PREP TIME: 10 MINUTESCOOK TIME: 25 MINUTESTOTAL TIME: 35 MINUTES SERVINGS: 4 PEOPLE AUTHOR: KATIE BERRY
    Tender chicken breasts are stuffed with sundried tomatoes, marinated artichoke hearts, and nutty Parmesan cheese in this easy recipe that's company-worthy.
    INGREDIENTS
    INGREDIENTS
    4 boneless skinless chicken breasts
    1/2 cup marinated artichoke hearts chopped
    4 oz. sun-dried tomatoes chopped
    1 cup Parmesan cheese grated
    Extra-virgin olive oil
    Salt and pepper
    INSTRUCTIONS
    Preheat the oven to 400° F / 200° C / gas mark 6.
    Combine the artichoke hearts, sun-dried tomatoes, and grated Parmesan in a small bowl.
    Cut a pocket in each chicken breast without cutting all the way through the back. Use your finger to widen the pocket.
    Divide the cheese mixture equally between the chicken breasts, using a spoon to stuff them. Use toothpicks to seal the seams well, overlapping the edges if possible. Season with salt and pepper on both sides.
    Heat an oven-safe skillet over medium heat. Add oil and brown the chicken on both sides. Transfer the skillet to the oven and bake for 20 minutes, or until golden brown and a thermometer inserted in the center reads 165°F / 74°C.
    Let the chicken rest for 5 minutes then remove toothpicks and serve.
    NOTES
    Make-ahead tip: Make the stuffing and stuff the chicken breasts ahead of time if you like. Just be sure to remove them from the refrigerator when you preheat the oven so they have a chance to reach room temperature.

    See my problem with losing posts is that I am using my phone and it usually happens when I’m in bed and very nearly asleep. I’ll hit the screen with my thumb and it manages to swipe the page away. Happens all the time lol. I guess that’s a clue to post earlier in the day.

    So today I am off work to take my son for his eye exam. With his type of juvenile arthritis there is a high risk of eye inflammation which can be quite damaging so every three months for the next five years at least he will see a paediatric ophtalmologist for a very in-depth examination. Takes several hours and he ends up with huge dilated pupils for several days lol. It’s about an hour away which is very lucky because there are only 3 of these specialists in Southestern Ontario so if I lived elsewhere I could be looking at hotel stays and hours and hours of travel.

    So that’s what’s on board for me today. Not likely to get many steps but we shall see.
