    Orange pork. They had theirs with broccoli and I had mine with rice. I wish I could eat vegetables.

    Can you tolerate any kinds of vegetables?......you still cook amazing food!

    I can eat the alliums: Onions, garlic, green onions, leeks, etc. I can eat garden peas and snow peas, but they aren't something I would eat a huge amount of at a time. Carrots are okay but I am not fond of them either raw or cooked; like peas, I tend to be good with them in a stew or soup, but not steamed as a side dish. I can eat the nightshades: potatoes, tomatoes, peppers, and eggplant.... but if I eat them on a very regular basis my arthritis pain flares up, so I tend to space them out and avoid potatoes as a side dish most of the time, with tomatoes and peppers more frequent but not every day. (This is partly why I meal plan.) The cruciferous vegetables are largely right out; I can have about a tablespoon of cooked spinach, and about a half a cup of iceberg lettuce, or a leaf of leaf lettuce on a sandwich. I know from painful experience that a few broccoli bits, a few shreds of raw or cooked cabbage in salad or soup, or more than that tablespoon of baby spinach will cause me a great deal of trouble. As it is, if I have a salad with that half cup of lettuce as the base two days running, I'll have issues. Every single cooked bean I have tried gives me grief, as do lentils.

    I cook vegetables for my partners, who like them. I'm good at cooking them. I just wish I could eat them because it would be better for me and there are good dishes that have my forbidden foods in them that I can't eat.

    What about squash, Zuchinni, or pumpkin?....can you eat fruits or do they cause problems, too?...does it matter if the vegetables are fresh or canned?....can you put vegetables in baked goods like muffins or breads?....I find all of this very interesting!...my husband suffers from severe RA and I have been trying to convince him a special diet might help with the pain....thanks for all of your great information!

    interesting how different foods create an inflammatory response in our joints! The nightshade foods don't bother me at all - but gluten - especially wheat - leaves me moaning and groaning getting out of bed the morning after, and knees that feel like they are on fire. I'm not sure about oatmeal because that just puts me to sleep so I avoid it unless I'm needing a nap (and an oatmeal cookie) :)

    I can eat squashes, but I don't much like their texture.

    Fruit is a problem because I'm fructose intolerant. Now, I recently learned that they make a pill that I can take with it, like Lactaid, but I still have the problem that I'm seriously out of the habit of eating fruit (It started giving me a headache and nausea at 13) and often that it's calories that aren't satisfying, especially when I'm trying to eat at 1240 and am having to be careful and get the most of the calories.

    After all the lamb eating of the past few days wanted to go lighter.

    Other than the red on red colour issue I find frozen beet spirals to be the most "al-dente" of the pasta subs I've tried... and tasty.

    Mixed one portion of fettucine (73g) which is like a ridiculous sub-portion of a portion (182g after boiling) with a 357g bag of frozen beets (301g including liquid once nuked)

    Warmed up a jar of Classico Basil Marinara. Added some sriracha. Returned the pasta and the beets back into the port... warmed it all up... and split it 52% to me (about 570g out of 1100). Very simple salad of field greens/spinach with some grated carrots and low cal zesty italian dressing on the side. Oh.... sprinkled 30g of crumbled feta over all my stuff--mostly over the pasta.

    Extremely effective / full for 605 Cal.... for now at least! :blush:

    I've been eyeing those beets - just a few minutes ago even - but wasn't sure how good they would be. A few of the
    different" frozen veggies I've purchased were a real let down. Maybe I should pick some up next time!

    Not exactly like pasta obviously. They Introduce some sweetness on their own so keep that in mind when cooking your sauce. I enjoy that there's actually some chewing, and that they twirl nicely around the fork!!!👍

    When we do pasta I take a zucchini, cut it into chunks, and sear it on a cast iron skillet till all roasty and done. Then Boyfriend has the pasta sauce and cheese over the top of that. He very much recommends this done with alfredo sauce, chicken, and a little bit of bacon, and says he likes it better than pasta.

    I've been using French cut green beans as a pasta substitute - and enjoy the chew of them and the way their furry texture holds sauce - but they don't twirl around the fork! I like the idea of just a feta cheese topping with the sweetness of the beet. Definitely going to try them.

    Don't forget the heat, if you lean that way! Alexandra, I admit, that a long time ago I moved away from white type sauces and into reds due to the comparative calories. You're challenging me to re-explore because for sure color wise the beets would pair better with a white sauce!

    Last night I did a simple pan cooked chicken breast, a baked potato with butter and sour cream, and roasted broccoli. Sometimes simple meals are needed.

    Today I get to enjoy the leftover salmon. So good.

    Breakfast was a bowl of arugula, half an avocado, a soft boiled egg, and salmon.
    Lunch will be leftover grains and greens salad with salmon in a wrap.
    Husband is cooking dinner tonight which is TBD.

    I feel like we've done a solid job re-purposing leftovers this last week, and I'm pretty proud of it!

    Sunday - Adana (spiced ground lamb) kebabs and greens
    Monday - Leftover Adana in a wrap with spinach, with an herbed tahini sauce.
    Tuesday - Grains and greens salad with herbed tahini sauce dressing: Farro, roasted broccoli, sweet potato, and brussel sprouts, arugula, spinach, red onion, tons of fresh parsley and cilantro, and spiced chickpeas.
    Yesterday - Salmon with leftover grains and greens salad.

    Yay!...Yes!.....sounds delicious!...and no foods touching or all mixed up together ( Laurie and Pav8888...lol )...simple meals are my staple....I love to cook but I usually stick to the basics....

    Tonight is our “ free “ night money wise, not cheating....our daughters family that lives with us, do not eat many leftovers....so tonight we have 2 fresh corn on the cob, carrots, asparagus and roast beef!...when we eat their left overs I always call it our free food dinner!

    Today we had pulled pork on buns or wraps to suit individual tastes. I freeze it without sauce and that way he gets his pricey sugar-free bbq sauce and we girls get the much cheaper regular sauce. I can have the tablespoon or so of that that is needed to coat the meat without getting a reaction, so I save money that way.

    But I'm TOM and feel awful so we went to The Local Good Mexican Place and got tacos/burritos. Girlfriend has a chorizo burrito with green sauce, Boyfriend has two tacos al pastor, and I just inhaled 2 lengua tacos. I keep intending to try other things there but the lengua with the chopped onion, cilantro, and lime is SO GOOD that I keep just getting that. (If you're wondering, the texture is like filet steak, the flavor is kind of like lamb.)

Where's the "fun" with that!😹 Next thing you'll tell me is that you wouldn't have spent almost three years trying to make brownie-likes using everything under the sun except butter, flour, sugar or oil!!!!😱 zucchini? Pumpkin? Sweet potatoes? Red yams? Carrots? Various kinds of applesauce? Oat, almond, other weird flours? Absolutely!!!!!!!!

    Still, I suspect you would hit it off with CCCGG who also likes nothing touching her pasta!!!!!!!😹

    No feta....maybe a little salt....but I decided to slice it tomorrow anyway....and then I went swimming before dinner and decided I didn’t want a burger so I had a salad with feta and the potatoe salad with it.....

    Since we finally did taxes today, we treated ourselves to our favorite local pizza place. Usually we split a big pizza, but went with individual ones tonight. He got pepperoni and jalapeno, I got the meatball and garlic. And wings. The best wings. So crispy, so juicy.
