Hmmm.... Connie... I have a fresh bag of tri-color coleslaw and some pouches of corned beef... I don't think I have potatoes... but I could probably hmmm..... maybe with eggs? maybe on noodles? I also have some bags of shirataki rice in the fridge but that might be too low cal.... still you're giving me ideas! Thank you!0

Oh Connie; its simplez I have pouches of corned beef because they keep! and you can even freeze them! And they taste great with eggs. Not so sure about eggs and slaw... but there's always sriracha!!!!2 -
Today was pulled pork on buns and wraps for lunch. I do my pulled pork in hard cider with onions and black pepper in the crockpot, then pull it to shreds with the stand mixer and put it up in about 8 ounce portions and freeze it. It takes about two minutes in the microwave to warm some up when I need it.
Tonight was baked ravioli. When the ravioli come in the house, I figure out what a portion is and divide them into sandwich baggies immediately, then freeze them. This also lets me do individual things; Girlfriend had spinach and ricotta ravioli with chicken chunks, chopped bacon, and Alfredo sauce. I had sausage ravioli with red sauce and shaved parmesan.
And yes, this sometimes means that when they say "Five portions, that I have five bowls and I'm standing there going, "1, 1, 1, 1, 1. 2, 2, 2, 2...." to count them out. But that way I don't have to do it right before cooking it, when I have no portioning ability cause I'm hungry.5 -

So because Connie frowned at my corned beef solution, and because I already had some crappy ziggy "chicken breast" strips opened and drying in the fridge (and they have a bit too much salt and garlic for me to be feeding them to the poor dog...but they're find for the poor human) I went to plan B which involved nuking a 500g of frozen brussel sprouts (507.50g to be exact ), adding 125g of the "chicken", and a bag of betty crocker garlic mashed potatoes (111g) made with water only (527g, and no it has no calories!)... added garlic powder (4g) and curry powder (2g)... and 103g of greek yogurt... oh go away you high end cooks... it's warm and fuzzy and ready in less than 6 minutes from start to finish AND only one single glass bowl to wash! And sriracha (or jalapeno laughing cow) would make it better... but I am too tired from the dog walk (and possibly the pfiser jab yesterday) to bother... so I'd rather type and whine!3 -

I am reliably informed that brussels sprouts steamed and then tossed with bacon drippings and cracked black pepper are delicious. They smell good.3 -
Since I am taking a pretty much rest day and eating a few more calories today since my energy level is zapped, I slept ten hours last night and ate a pretty high protein and fat breakfast of Greek yogurt and bread with butter....roast beef wrap for lunch and I bought a large boiled fresh shrimp tray for dinner with cocktail sauce....having baked potato with it and butter and light sour creme....snack will be rice cakes and peanut butter and some nuts....yummy yummy day!3

425g of tricolor coleslaw and 125g of delstar corned beef slices have been zapped together and have gone back into the fridge for later use!
Logged the Delstar Sliced Corned beef pouch using the NCCDB database values for corned beef which brings it to 232 Cal instead of the 150 Cal on the package. First of all the 150 Cal for 125g was one of the two lowest values around, only matched by Piller's Sliced Corned Beef. But more importantly, there was an appreciable amount of visible fat on the slices, to the point that I lopped off a couple of small chunks!3 -
Breakfast today was oatmeal with chocolate pb2 and frozen raspberries, and lunch is an Amy's breakfast burrito. I think dinner is going to be an Indian spinach salad with lentils and roasted vegetables. Oh, and probably the 2 chicken thighs I have in the fridge that I HAVE to use today.3

The fishcakes are cod & prawn from Asda, their “extra special range”
( Not sure if the equivalent to that is Walmart if you are in the States?
Walmart brought Asda over here ...if I remember correctly)...
I’ve tried to make fishcakes in the past, but results have been rubbish!
These are probably a bit pricey, but are usually on offer - buy two packs (2 in each) for £4... I only buy on offer 😬
My Chilli relish recipe is made up, but it works!
( I also make it as a sauce to add to cornfloured Tofu & noodles - but as a sauce- bit more water and not as thick as the relish! )
I fry 2 tbsp sesame oil, add a chopped small red onion with 2 garlic cloves and sauté off. Then, approx, 2 cm fresh ginger, then add 1 red chilli to the frying pan, then 1tbs, soy sauce, 1/2 juice 1 lime, vegetable stock cube (made to 125mls, with water), bring to the boil until sauce thickens - heat is quite high to do this and serve with a large handful of fresh coriander on top. Serves about 4.4 -
Today we have chicken fingers for lunch, with barbecue sauce for dipping. Not high cuisine, but it is tasty enough, works with my calories decently, and is the sort of thing I can warm up in two minutes when he goes on break and has time to eat.
Tonight, though, we are having Thai pork skewers with peanut sauce and rice and Thai spinach. Probably it was originally meant to be done with dark meat chicken, but Boyfriend finds that chicken sometimes sticks (he had weight loss surgery) and pork almost never does. The pork tenderloin (nice and lean) was cut up into chunks and frozen in the peanut sauce. Tonight I will take them out and skewer them and grill them, and boil up the peanut sauce to drizzle over them when served, along with some fresh cilantro and a little lime juice to brighten it.4 -
Homemade beef burger with blue cheese in a crusty bread roll, and a salad with basil oil. Heaven! - lots of beef - 100g lean braising steak and 100g lean sirloin per burger ☺️
“Boys” have theirs in brioche burger rolls, without the blue cheese, have fried onion and mushrooms with twice fried chunky chips and a salad.2 -
We went to Chili’s....no margarita, no wine , and no dessert!....I had chicken and shrimp fajitas with no sizzle sauce....ate the tortillas and some toppings but no avacado goo....no rice and only one half cup of the serving of black beans....it was still good without all the extras!4

We went to a bbq place for a late lunch with a friend. We ordered a ton of food to share...pork belly sandwich platter, a huge beef rib, and a platter with pulled chicken, pork, and some brisket. And a number of sides. Calorie-wise, I did well! I stopped eating when I was full, had unsweetened iced tea, and focused on the lighter sides and mostly ate the pulled chicken and pork. We also shared se pecan and apple pie for dessert. Didn't exactly stay under my sat fat goals today, but hit my calories. Skipped dinner because we were still so full, and have just a few leftovers for tomorrow still.3

Was hungry when I was out and about so I got a Wendy's baked potato (plain) and topped it with a small chili (and their hot sauce and some black pepper!) Also got some diet root-beer--and I'm sorry but paper straws suck in a bad way! It's a favourite combo for about 600 Cal.
Dumped a 500g compliments roasted veggie bag with the rest of that ziggy chicken-like-thing (yeah... finally done with it after using the 232g!) and dug up some konjac rice (300g) that has been sitting in the fridge... it all went into a pot and it was a very close call between using some classico tomato sauce or getting rid of a short dated extremely light (5 Cal per 15ml, used ~250ml) zesty italian dressing. Given the context I thought it might go well with the rest and konjac can always use a sauce... so I went with the zesty italian which also saved me from having to add oil. Again the whole pot is coming in under 600 Cal.
A bit too successful as in I am full and haven't finished half the pot! Left-overs for when I come back from the dog walk! And I just might end up within calories in spite of having started the day with a bit too much Lindt for breakfast!4 -
Made a great soup that has been lunch and dinner all weekend.
Chorizo, lentil and tomato soup. So good. I've given up meat over the last 6 months or so, and this was the first I'd had for a while, but was totally worth it.
I found a recipe on the dish website and just adapted it with what I had in the cupboard. Used 1 chorizo sausage, weighed 100g, and 250g split red lentils. It's done 4 meals and there's still about 2 servings left.4 -

My first meal today will be a fridge cleaner....last bit of kimchee in a jar....last bit of sauerkraut....scrambled eggs....rutabaga....spinach...maybe even a veggie sausage??? add a little shower of sriracha and all good to go!! (have half a can of beer in the fridge too that I forgot about last night when I was being all civilized and drinking beer from a glass too small to hold an entire can - a nice Belgium white unfiltered beer....that might be a fine addition to this first meal (It isn't even noon - perhaps I've lost it? - but the sun is shining and it will be noon by the time I'm eating - and it is my late mom's birthday today so I will raise a toast to her and hear her laugh in my mind).
Making a big big pot of soup too. For a couple of years now every weekend brings "Soup Sunday" - my sons/grandson/sometimes daughter-in-law (when she isn't working) come and we eat soup and other stuff. This past year it has been a backyard event because of various stages of lockdown. And I share this soup with 3 or 4 people in the neighbourhood. I've become a soup lady.
Also going to make a batch of what I call "breakfast dal" - yellow lentils, lots of spinach, pumpkin all lightly spiced with some garam masala, ginger and lemon - portioned and popped in the freezer - perfect to pull out on those days when I'm not really hungry, feel out of time to cook, but know I need to eat well or invite a binge later in the day.
Wow....my kitchen is going to be steamy and a real mess!6 -

Thursday: Lunch: Pulled pork sandwiches/wraps.
Dinner: Fettuccini alfredo with chicken, broccoli, and bacon. Garlic bread.
Friday: Lunch: Patty melts on rye, with chips and pickles.
Dinner: Enchiladas, rice and beans, salad.
Saturday: Lunch: Chicken patty sandwiches, chips, pickles.
Dinner: Lamb curry, white rice, saag. Naan. Kheer.
Sunday: Lunch: Mexiwrap, with chips.
Dinner: Beef stroganoff, seared zucchini.
The current quichecake is pulled beef with seared peppers and Mexican spicing. It will be followed by bacon/caramelized onion/swiss cheese.

I am going to Alexandra’s house....sorry Laurie and Pav!....( except for the lamb! ).... I should make a list of all the food I do not like!....Beer is horrible!....Wendy’s Chili is made with leftover meat patties....I just can’t!....
We are having a huge salad with normal vegetables in it and Public lean ground beef patties....lunch was a Boars Head turkey wrap.....
I was raised in the mid west....our food choices are very basic....meat, potatoes and vegetables!

Didn't finish the konjac rice yesterday, so having it today. Plus yogurt and fresh blueberries and one of two boxed cereals mixed in.... at least that's the plan between dog walks and a bit of work.2 -
If I knew you were coming I'd substitute chicken for lamb, Connie. If it's any comfort, I can't do anyone's chili. It's weird; most of the ingredients by themselves are fine, but combine all and the gut throws a tantrum. (shrugs) I'm a midwestern girl myself, and still am. My partners both grew up in California, so they get their portions heated up with hot peppers and I get mine plain, cause they can take way more heat than I can.
Tonight is chicken a la king on cornbread, which is a pairing I like from childhood. Boyfriend opted to have chicken fingers instead, which is okay. Girlfriend and I will enjoy the chicken a la king.
