I forgot to say that that's pastured heritage pork, so the meat is darker than conventional pork, and very delicious!4

Baked Meatballs
Modified from "Great Balls of Meat" episode of Good Eats (Alton Brown)
Yield 4-5 servings (20 meatballs)

Total Time 40 min
Ingredients- 1 1/2 lb ground chuck or meat mix
- 5 oz frozen spinach, thawed and thoroughly drained
- 1/2 cup grated Parmesan
- 1 egg
- 1 1/2 tsp dried basil
- 1 1/2 tsp dried parsley
- 1 tsp garlic powder
- 1 tsp kosher salt
- 1/2 tsp red pepper flakes
- 1/2 cup crushed pork rinds, divided (replaces bread crumbs in original recipe)
Instructions- Preheat oven to 400° F
- In a large mixing bowl, combine meat, spinach, cheese, egg, basil, parsley, garlic powder, salt, pepper flakes, and half of the bread crumbs. Mix well with your hands. Mixture can be used immediately or refrigerated for up to 24 hours.
- Place remaining breadcrumbs into a small bowl.
- Using a scale, weigh meat into 1.5 oz portions and place on a sheet pan. With your hands, shape round meatballs, roll in the breadcrumbs, and place the meatballs into individual mini muffin tin cups.
- Bake for 20 minutes or until golden and cooked through.

Brown Butter Cream Sauce
Yield 6 - 10
Active Time 5 min
Total Time 10 min
Ingredients- 4 tbsp Butter salted
- 1 clove Garlic
- 1/4 cup Chicken broth
- 1/3 cup Cream
- 1/2 tsp Salt
- 1/2 tsp Pepper
Instructions- Brown the butter on a pan with swirling it around over medium heat.
- Pour the brown butter into a sauce pot and add garlic, chicken broth, cream, salt and pepper.
- Stir until combined.
- Lower heat down to simmer.
- Stir occasionally until the sauce has thickened, about 5-10 minutes.
- Serve immediately.
It doesn't re-heat particularly well, so just drink whatever you have left!

I'm a sucker for "brown butter" anything... this WOE makes it about much more than just desserts and this sauce sounds totally drinkable. Perhaps goodbye to hollandaise! Thanks for the share!0 -
I made this same recipe for brown butter cream sauce with beef stock instead of chicken, in place of a brown gravy when I had made a rump roast and my guy wanted brown gravy. I was licking the plate and there is still brown gravy leftover in the fridge! Who won that one? I SOOOO did! LOL2

I want to make it and drink it, bulletproof coffee style. I think I might.1 -
This past Sunday for our family meal we made a Ham from Costco. There always lots of leftovers so I diced up a bunch and made individual packs of 50g each then froze them in ziplock bags. The dice is quite small so I can take one out in the morning and they defrost really fast. I add the pack to my eggs for extra calories, fat and flavour.18 -

Forgot to take pic but I did roasted broccoli and shrimp today with grated Parmesan. Mixed evoo with oregano garlic mixed with shrimp and broccoli put on cookie she topped with grated Parmesan2

I made bbq chicken with cauliflower mash today. It was my first time trying the cauli mash and it was delicious! New favorite side dish for sure.3 -
