Eduardo did put some mixed up beans and lentils on "quick soak" for the chili, so while it was on the standing time, Eddie went out to the grocery. When Eddie got back, Eduardo rinsed the beans and lentils, and got them started in the large Crockpot with some chopped onion, garlic, ground hot red chili pepper, jalapeños, bell peppers, salt, cumin, and black pepper. After all that cooks for 8 hours or so on low, the lentils should have pretty much disintegrated, to add a nice thickness to the chili without needing any other thickener. This has worked well in the past when making vegetarian chili. Tomato will be added at the end, and if needed, any additional water, and adjust seasoning if needed. I think there is plenty of the hot stuff already though.
Now Eddie just needs to clear the sink, and then it will be approaching time for Eduardo to prepare lunch of mostly leftover nacho stuff, just heating a fresh can of refried beans.
Maybe a short nap in between...

Perhaps it would make a better lunch for some, since it is pretty light. I have 2 1/2 ounces cooked brown rice heated with a cut up tomato in the microwave. I also added a wedge of Laughing Cow light Swiss cheese. I put 2 fried eggs on top (fried in non-fat spray) of the rice and tomatoes. A light, delicious breakfast-dinner.0 -

It was showing 42 degrees this morning out the door 10 degrees colder than yesterday for the same time, I walked today for 7.2k steps and No cents. I changed the time on the clocks in the Basement Yesterday, Who said I procrastinate
As I sit here I am copying some DVDs I created several years ago onto a hard drive prior to extracting the music from them to put on my iPod.
Sadly the election being done was not the end of all the election drama

I had some low calorie cooking spray that I have used in the past, I used it so infrequently since I rarely fry however that It started tasting stale and was discarded while still pretty full. SO now I just use a dab of Extra Virgin Olive Oil instead when I do fry. TBH The fried eggs do sound good, I may Scramble one for my mid morning snack and put in in a 60 calorie wrap with a 1/2 slice of Velveeta which is 20 calories.
Since I am a lazy cook what ever rice I use is either cooked in a rice cooker or instant rice AKA generic Minute Rice

Howdy y'all. It's thrilling Thursday!
High predicted of 70 today with zero percent chance of rain.
The quick soak for beans entails bringing the sorted, rinsed beans to a boil in plenty of water (at least two or three inches of water over the level of the beans), letting them boil for 10 minutes, then covering and letting stand for an hour. At this point, rinse, and use as you would have used beans soaked overnight.
The chili, by the way, came out very nicely! Leftover chili will be a nice lunch today.
I was up about 7 this morning, but have been distracted by various recipes on the net. This one sounds easy and tasty, and I might instruct Eduardo to give it (or a slight variation on it) a try.

Ed, I have been reading your mentions of Lenny and Larry's cookies so much I will have to check them out. I think I came back in the middle of a discussion, but it sounded like something ordered over the internet. I think I have to taste them!
Val - I finally remembered what I meant to say the other day (hey, it only took me 3 days to remember. Not bad!). I only get up at 4:35 (yes, that is the time I set on the alarm clock) on days when I have to go to the farther away office. Other days are more reasonable. I have it down to a science: breakfast and lunch made the night before and put in the refrigerator; clothes set out; work bag either pt into the truck, or set out. Remote start on the truck takes just a few minutes to defrost the windows. Up, washed, dressed, put together and out the door in about 12 minutes. And I hate those mornings...
Roger, good morning to you. It looks like this weekend will be chilly, but not yet frigidly cold up here.
Time to keep moving here. I have to pack up for my weekend camping trip, then load the camper onto the truck. I will catch up with you...eventually. Not sure of the internet service over the weekend. Take care everyone.

I Am still getting a few Raspberries off of the one plant. I suspect that will end tonight as we are supposed to get a Hard Freeze. If I'm right, a shame as it has a bunch of unripened berries on it

Roger, when you use the rice cooker, do you make a big batch for use, and to freeze? That's generally what I do, but I've also been known to buy the handy microwave packs from Seeds of Change...pricy, but good, and Organic.
I don't foresee the election grumbling being over either until he's sworn, or most likely not until he's at the end of his first 100 days...and then I think you'll see him torn to shreds. I don't believe the people are going to let up. I listened this morning to a guy talking for over half an hour, and (he seems 'level headed', and has his brain in order)....he outlined what needs to be done. Reminding people to grieve etc, and to them make a plan over the next 70 days that Obama is still our president. What he said made a lot of sense. I can share his url with you if you'd like.
Salad nearly finished...and then its half hour out with the blower...and least the hour long seminar will be a nice 'rest' before going back out to finish my job.

If I were still using the rice cooker I would gain for that day. What I used to do before deciding to lose weight, Againwas cook it, melt butter into it, and salt it as I ate it. I always meant to put some in the refrigerator, I also always failed at that and ended up eating it all, sometimes as my entire meal and sometimes with meat. Same problem I had when I cooked the entire pound of bacon FWIW.
The ShopRite Grocery stores have Steam in bag White or Brown rice in the freezer section along with their frozen vegetables. All of those items are in 12 ounce bags.
People have the right to grumble. What I have a problem with is when they march and close roads. Spontaneous, I doubt that I wonder who is organizing and paying for it to happen.
I am a wait and see what happens before I leap to conclusions with no proof.

When I joined NS I planned out my days everything, Meals and snacks/desserts for several days at a time. I believe that was a key to it working. I still eat using the NS Skeleton as I work at Maintenance. The main difference is the addition of some extra calories. For example, A extra fruit, or as I did the other day, I bought a 3 pack of Cracker Jacks at the Dollar store, 1 Ounce and 120 empty caloriesor a 250 calorie Dunkin Donut free Donut with the coffee.
They are predicting a wind chill in the 20s tomorrow

High of 69 predicted for today with 0% chance of rain.
I've actually seen signs like that "illiterate" one stating how to contact for classes if you can't read or write English, and heard radio commercials that begin with "If you can't speak or understand English..." and seriously wondered who they thought they were advertising to.
About as brilliant as sending email to all your customers telling them that their internet is down...which I think they would have figured out without the email that they couldn't access.
I've been up for quite a while but distracted by feeding Lilo, breakfast, clearing the sink, getting some beef going in a Crock Pot for barbecue, and the internet!
The Lenny & Larry's snickerdoodle cookie is a double plus THUMBS UP!

Howdy y'all. It's sensational Saturday. Orchid judging today but we don't expect there to be many (if any) pictures required. We'll bring the full setup as usual, but may not put it all up until after we get a better idea whether pictures will be needed.
Lenny & Larry's double chocolate cookie is almost TOO good. Definitely a THUMBS UP but it tastes so rich and seems so filling that it's not one I'd want to eat very often. Definitely one for just an occasional super treat.
Dinner last night was: Salad. Home made salad dressing. Shredded beef with barbecue sauce, lightly buttered steamed broccoli, garlic herb Parmesan Romano roasted delicata squash. Wine Choice: Gosford Reserve Shiraz, 2015, Australia.

It was showing 38 degrees this morning 8 degrees cooler than yesterday for the same time, I walked today for 8.6K steps. It was also somewhat windy when I went out the door. I did not see any signs of frost so that is a good think IMO.
My Plan for today is Pry up more of the old Kitchen Tiles on the floor. Other than that, nothing comes to mind. Laundry was done on Thursday.
FWIW the handle for the Cup came yesterday and I tried it this morning. It was a big help, The cup was a bit heavy until I drank some of the Coffee
I have been a bit short on my steps the last couple of days as my knees were bothering me somewhat. A light bulb went off over my head and I looked at my shoes, Soles were worn out on the outside edge due to the way I walk so I pulled out a new pair and wore them today. Much better

What can I say back in the 80s and 90s when I was driving for a living I used to be able to Shower and get dressed Etc. and out the door in little more than 10 minutes. These days for example I may get up at 5:50AM and not make it out the door before 6:15 so I have slowed down somewhat
Actually I am curious/interested in what Gluten Free bread and what brand the Vegan Cheese that tastes like cheese, melts like cheese, etc. is I like to look these sort of things up for reference, not to mention that I do have to be careful how much Dairy product I use so a option would be helpful as long as the calories are not to high. There's generally not anything for sale at the monthly orchid judging, and not a whole lot at the society meetings either, with a couple of yearly exceptions. One summer auction and one end of year auction are held coincident with the regular society meetings.
The monthly judging is strictly for southeast region national judging of plants brought in by hopefuls. J is the official photographer for this and I'm the photographer's gopher and helper.0 -
Orchid judging went well. We did have more pictures to take than I expected, with some really lovely flowers.
Came home and ate some leftovers along with a potato casserole I made fresh. J ate more of the potatoes than I did of course, as I kept my serving fairly small.
Then we got word from D about how his tooth pulling went in Tucson (we paid for it...but he is supposed to pay us back) and I got to wondering what they were doing for Thanksgiving, with his mother undergoing chemo and not at all up to cooking anything, so I asked.
And ... so D or his stepfather will be picking up the bulk of Thanksgiving dinner at the Whole Wallet ... er Whole Foods about 3 miles down from where they are living. He wants corn but he'll have to pick up some at the WalMart he's working at, as there wasn't any corn available as even an add on side from the Whole Foods. I could have got a dinner quite a bit less expensive from Sprouts, but it said it fed "6 to 8", and didn't specify the turkey size, and there may be 8 people there. A dinner that feeds "6 to 8" won't be enough, in my opinion, for 8 and I would have had to order TWO of them which would have been too much food (and cost more than the one I was looking at on the Whole Foods site)...so I ordered one that says "dinner for 8" from Whole Foods and upsized the turkey (they had three sizes to pick from, I chose the middle size) to make sure there would be enough, added two desserts and told him what was included, when and where to pick it up, and that if he wanted corn or other sides, he was on his own for those.
Either he or his stepfather can pick it up Wednesday, November 23, at 3:00 pm and all they'll have to do on Thanksgiving is warm everything up and cook the stuffing/dressing. As D has to work on Thanksgiving, I'm sure tey can work dinner time around his work schedule...and if not, then he'll just have to have leftovers, but at least his mother and grandmother (who also lives there) and any cousins and aunts/uncles who come will have a nice dinner.

Good Morning Folks,
A bit nippy here at the campground! Fortunately, I am in the camper and not a tent. Actually...there are no tents here this time of year! My camper is "four season," but I think it needs a bit of help to make it more so. I think I will 2 some insulating boards (the big 4x8 rigid boards) and cut them to fit under the bed. While there is some kind of insulating layer, the cold still permeates the mattress. The insulating boards will definitely make it warmer. I might also try to fashion some kind of insulation layer between the head of the bed and the front wall. Again - it is all finished and "four season," but that may be Southern California four season...not PA four season!
Ed, I looked at the Lenny and Larry's web page - they sound so delicious! I am sure they taste good, but at 180-200 calories a cookie, I think I will pass on them. And I am not disciplined enough to eat just one half and save the rest for later!
Val, thanks for the info about the vegan cheese. While I am not vegan, my daughters cannot do dairy...at all. I will pass on the name to them. By the way...I am coming to Atlanta this Thursday to give a presentation - flying in and out on the same day. Any info on the temps? Will I need my parka, or a light sweater? Okay...no parka, definitely, but I do hope no rain, since it will be one of the few times I wear a dress.
Roger, I am quite impressed by the steps. I am a fair-weather stepper. These days it is too cold for me to do the outside walking. I have a gym membership, but it just went up in price (I had a student membership for 4 months, but that was the time limit), and I am not sure I can keep it. I miss the long walks...and long for the warm weather to do them again.

Howdy y'all. It's scintillating Sunday! High of 67 predicted with 30% chance of rain. Maybe we'll get some!
Lee, you may be able to find the Lenny & Larry's cookies at a store near you, and if you're lucky, even find some 2 oz, single serving size cookies. I would never recommend these things for a daily treat, but with the upped protein, the stats on a single serving aren't so very far off from an NS dessert serving. Maybe a bit high on the carbs, but as a rare treat it fits in OK for me. If I eat the whole 4 oz cookie, it's not a snack, it's the MEAL for me. And even that is certainly not going to be a common thing. I have enjoyed tasting my way through 8 of the cookie flavors and the one muffin flavor that I tried. As the muffins HAVE to be ordered from them, and shipping on the muffins is ridiculous, I will likely not be trying the other three flavors of muffin any time real soon. I still have quite a few, from the dozen pumpkin muffins I ordered, left, in the freezer. Very good, and, again, a whole muffin is a whole breafkast meal. And they don't make the muffins in a single serving size.
I may eventually get around to ordering the other three, when there's more room in the freezer for muffins, and then I'll have enough to last me months! But first I have to get over the sticker shock on the Thanksgiving meal I ordered for the folks in Tucson...
I'm planning to cook a 13.52 pound turkey here, and send some of that turkey home with a guest if he can come, along with a small dish of cornbread stuffing (some home with the guest), perhaps some light gravy, probably steamed broccoli or green beans for a green vegetable, some home made sugar free cranberry sauce or relish, possibly one roasted or baked sweet potato, and I will make a sugar free pumpkin pie to nibble and, hopefully, send most of that pie home with the guest too! No rolls (bread is either my best friend or my worst enemy...) and no potatoes. Stuffing will be the main carb in the meal, and the roasted sweet potato and pumpkin pie will have some carbs too, even with no sugar.
Since for me Thanksgiving absolutely HAS to have turkey and stuffing, and other things are nice but not totally necessary, this modest meal will suffice. Dessert is a plus I added on a whim this year when I saw a pie pumpkin at the hardware store. It was cooked shortly after, and the pulp is in the freezer. It's been years since I made a pie that started with me buying a pumpkin. OK. It's been years since I made a pie AT ALL, but even longer on buying the pumpkin as a vegetable instead of a can of pumpkin puree...
In prior years I have been known to serve turkey AND ham, stuffing AND potatoes AND rolls, candied sweet potato, cranberry sauce, green beans (or green bean casserole) AND broccoli rice cheese casserole, pumpkin pie AND pecan pie...well, you can imagine how stuffed both I and the refrigerator were after those feasts...but I figured out that one doesn't really need all that much food, even for a feast, and worked out what was most important to me in the Thanksgiving meal.

I buy the same brand and shoe as they fit from the start and do not need to be broken in. Now that I have opened the box and put them into use I need to order their replacementI checked, still available

I picked up the pack of Smoked Gouda Style Slices...and its pretty close to what I remember Gouda tasting like. There was also Cheddar, and Mozzarella, and another...Swiss maybe? Next Wed shopping I'll probably pick up the Cheddar.
Stats...one slice is 60 calories

Well, yes and no on the shoes, They are not the cheapest thing around, however having found what works well I am loathe to change to the unknown
It is not the easiest thing to find something that fits my 4E wide feet comfortably.
Today's to-do list, more tile. It is a pain in the neck trying to get all the broken grout off of the floor when I am done. Once it is removed the next stage looks to be a pain, that being the underlayment over the sub floor planks will need to be removed as in places the tiles just fall off, in other parts some of the Underlayment is tearing up too

A dinner that feeds "6 to 8" won't be enough, in my opinion, for 8 and I would have had to order TWO of them which would have been too much food (and cost more than the one I was looking at on the Whole Foods site)...so I ordered one that says "dinner for 8" from Whole Foods and upsized the turkey (they had three sizes to pick from, I chose the middle size) to make sure there would be enough, added two desserts and told him what was included, when and where to pick it up, and that if he wanted corn or other sides, he was on his own for those.
Either he or his stepfather can pick it up Wednesday, November 23, at 3:00 pm and all they'll have to do on Thanksgiving is warm everything up and cook the stuffing/dressing. As D has to work on Thanksgiving, I'm sure tey can work dinner time around his work schedule...and if not, then he'll just have to have leftovers, but at least his mother and grandmother (who also lives there) and any cousins and aunts/uncles who come will have a nice dinner.

A bit nippy here at the campground! Fortunately, I am in the camper and not a tent. Actually...there are no tents here this time of year! My camper is "four season," but I think it needs a bit of help to make it more so. I think I will 2 some insulating boards (the big 4x8 rigid boards) and cut them to fit under the bed. While there is some kind of insulating layer, the cold still permeates the mattress. The insulating boards will definitely make it warmer. I might also try to fashion some kind of insulation layer between the head of the bed and the front wall. Again - it is all finished and "four season," but that may be Southern California four season...not PA four season!
Ed, I looked at the Lenny and Larry's web page - they sound so delicious! I am sure they taste good, but at 180-200 calories a cookie, I think I will pass on them. And I am not disciplined enough to eat just one half and save the rest for later!
Val, thanks for the info about the vegan cheese. While I am not vegan, my daughters cannot do dairy...at all. I will pass on the name to them. By the way...I am coming to Atlanta this Thursday to give a presentation - flying in and out on the same day. Any info on the temps? Will I need my parka, or a light sweater? Okay...no parka, definitely, but I do hope no rain, since it will be one of the few times I wear a dress.
Roger, I am quite impressed by the steps. I am a fair-weather stepper. These days it is too cold for me to do the outside walking. I have a gym membership, but it just went up in price (I had a student membership for 4 months, but that was the time limit), and I am not sure I can keep it. I miss the long walks...and long for the warm weather to do them again.

FWIW Lenny & Larry's does have 3 flavors of Individual serve 2 Ounce cookies, fewer than the Standard 4 Ounce cookies flavors. For comparison the NS Snack/Dessert Cookies are 1.3 to 1.4 ounce size and around 140 to 150 calories
I hope the insulation helps if you do get it.
The way I look at the walking currently is that it helps me get rid of any weight I might pick up from a Cheat DayOr that it lets me have extra calories each day as well as killing some time each day.

Lunch for us was big garden salads made with curly romaine, bell pepper, tomato, wedges of boiled egg (1 1/2 eggs per salad), bacon bits (real on mine, fake on J's), a small sprinkle each of shredded pepperjack, some cheese&garlic croutons, and the rest of my home made thousand islands style dressing.
Valerie, I just checked out the website for your "cheese" and apparently they market a vegan whole egg substitute as well! On the pictures, of course, it looks great and I'd even be interested in trying that, just for fun. I'm going back to the website now to browse...

Wow. After looking at the site, they do have an impressive array of vegan cheese substitutes. the only issue I can see with them is most don't have much, if any, protein! But they don't seem to be too high in carbs either, so if they taste good and fill the cheese craving, I guess they'll do. At least one could make, presumably, a grilled "cheese" sandwich or even a nice, melty, lasagna. And if you use vegan "beef" crumbles in the lasagna...well, you might even satisfy a carnivore!

Howdy y'all. It's marvelous Monday! Lilo and I have been fed. Leftover beef chuck short ribs make a GREAT breakfast.
I looked for Follow Your Heart "cheese" at my Kroger and there wasn't any, but it's not an enormous SUPER Kroger either, so the larger one down the street may have some. I haven't looked at my Publix yet, which is close than either Kroger anyway.
So how was the pizza? It sounds delicious.
