    MmmmMmm, it's the Peaches & Cream corn that's really caught my eye. It's fresh in season here and I'm trying to avoid it if possible because I will make a whole meal out of peaches & cream corn on the cob with lots of butter, salt, and lemon pepper.

    My current goal is 170g protein and 30g fiber at 2000 calories or less. I don't have a goal for fat or carb.

    Miracle rice is a konjac starch product that can simulate rice without all the carbs and calories. If you use it rinse it very well in a sieve because the liquid it's in stinks.     I can't seem to edit today - rinse the konjac rice first before use because it stinks.

    Halloumi salad has long been a staple for me, at this time of the year (spring in New Zealand) I get to make it extra pretty with edible flowers.

    @canadjineh I just mix lemon juice and extra virgin olive oil. Nice and simple :) There's about a billion different flavours going on in that salad already :D

    Greek salad tonight. I marinated the feta in the dressing for a few hours before dinner (eevo, apple cider vinegar, dijon mustard, fresh black pepper, basil, and marjoram (think I went a little heavy on the marjoram)). I've used green olives in my last two Greek salads because they're lower fat and higher fibre than kalamata, but I think I'll switch back. Kalamatas are just better.
