Food inspiration, or what's for supper?

Love a bit of rocket. I think you folks call it arugula.
And Victoria sponge is indeed a delicious cake!4 -
I love rocket!3
-
I wonder if I could tolerate arugula. I like spinach on a pizza but it's easy to get too much on and then I suffer the consequences.3
-
Rocket is great value in terms of bulk and taste for calories! Not as much when it comes to $'s where it's closer to rocket fuel Alexandra... I would tread carefully though it is surprising how light dried arugula really is!
Bella... I think a maintenance goal makes sense and I think you will surprise yourself and still find yourself lighter at the end of it. Wow. That's a roller-coaster of emotions. I virtually join you for that glass.
OK. On a happier note... I am off to look up Victoria sponge! My FOMO is asking WHY HAVE I NOT HAD THIS YET?!?!?!?!2 -
I'm sure you've eaten plenty of Victoria Sponges in your time, but you probably just call them something different across the pond. It's just a classic sponge sandwiched with strawberry jam and some form of cream (either fresh cream or butter cream).4

Bavarian cream...... 🐹
WHACK
Got that sucker! 😹1 -
Made my own toasted muesli last night - And enjoying my first breakfast of it now!
Works out to be the same KJ per serving as the store bought one so good there.
My version tastes less sweet than the purchased one, which is good considering I usually eat it with Vanilla Bean yoghurt (which is sweet enough on it's own), and I'm enjoying the crunchiness of my particular blend of seeds and nuts.

Went to the store, slapped some pulled pork on a bun and ate it, because that's about what I can handle after the store trip.
Tonight will be General Tso's Pork, with rice and veggies. Easy enough with the pork bits pre-fried.4 -
Boy (or rather GIRL) you two with home made muesli and cheese making farm to table operation and multiple pork preparation short order kitchen! Err... I have frozen dinners in the freezer!2

You too can make the toasted Muesli Pav! It was actually deceptively easy! I'm happy to share my recipe and notes if you feel like giving it a go..3 -

I too made my own home made butter chicken with rice... and home made peas in (blue menu/reduced fat) butter chicken sauce... u-huh (exactly: I wouldn't believe me either!)... and yeah... it took 14* minutes in the microwave and I had to use scissors!!!
*that would be for two people! For one person, or with two microwaves it would have taken 8... just saying!4 -

I admit to the convenience and that often they are more than good enough, at least for me. But let's not go over-board here! Yes, they are sooooooooooooooo much better than "my first microwave tv dinner". But home made muesli has them beat for taste, quality, and nutrition! By a landslide and a bit!3 -
And Ms Kiwi... still waiting for my Camembert in the mail!!!2

Here's a selection of cheeses I made last spring!
Clockwise from the top is:
Camembert
Jarlsberg (That had been aged in regular wax - non flavoured)
Ibores
Creamy Havarti with Chives
Jarlsberg (That had been aged in natural beeswax - honey flavoured)
Twin Bel Paese cheeses - going into the fridge for ripening

Wow!
How you holding out in the great flood, PAV?3 -
Wow, and double triple wow! Fingers crossed for you that after making them you don't even want to look at them because.... well, I sure DO want to "look" at them❣️😇 and I wouldn't want to be that close to so many calories🐹!
Hey Laurie, thanks for asking. Dog and place are about 50km from the closest flooding so fairly safe and on a hill! And as you may have noticed I'm with the parental unit in neighboring Alberta so no direct personal worries so far.2 -
Now I want all the cheeses! I could not be trusted in the vicinity of that much deliciousness.
Kiwi - whatever happened to Annabelle Langbein? We used to get her cooking shows on our PBS station several years ago. Love the orange lightning cake. Dump it all in the blender and good to go! Can’t find her cookbooks locally although maybe on Amazon.2 -
Good to read, PAV. Don't want you hobbling through mudslides and overturned trees.
To be honest, I had lost track of where exactly you were at...and where parental unit is at...and I kind of stirred them all up in my mind into a revolving "out west" location. Hopefully Mother Nature takes her tantrum further west, rather than east.1 -

That is why I'm not making any cheeses at the moment LOL - they were "definitely" a source of over indulgence! Nice to make some in spring and have for share plates during summer when entertaining - or give as gifts - but haven't had time so far this season.
I saw Annabel on TV just the other night as it happens! She's a few hours south of me and has just written a book. Here's her FB!

500 Cal: 285g of tiny frozen baby peas in 202g of (lower fat) butter chicken sauce with 20g fresh onions and 151g baby tomatoes and extra chili peppers... all NUKED TO PURRfection!!!!
Dad made himself a mixed baby leaf salad, two eggs, prosciutto, tomatoes, fresh onions, and cheddar cheese plus "a little bit" of olive oil and vinegar and a couple of slices of Wasa. I'm taking the OVER option when it comes to betting whether he is below or above 500 Cal for the salad!3 -
What did you put ll the perfection on????1

The bowl and soup spoon I ate it out off?!?!2 -
Dad was way over. Two eggs and a few or more Wasa account for 250 calories. The cheese, oil, and prosciutto takes it waaaaaay over 500. There’s that myth out there that if it’s on a bed of lettuce it must be low cal.4

Dinner tonight - Homemade pizzas!
Have just finished building my recipe in MFP as follows:
Italian Herb Wrap Base (Half the calories and healthier than pizza bases plus makes nice crispy base)
Pizza Sauce (Tomato & Herbs)
Ham (Shaved)
Salami (We just had some made - collected today so naturally have to incorporate it in tonights dinner!)
Mushrooms (Buttons)
Spinach
Cheese (Edam)
1 WHOLE pizza is 2500 Kilojoules (Approx 625KCals).
@Yoolypr The opposite to your lettuce myth is the "if it's pizza it must be unhealthy" myth. Above recipe suggests pizza gets a worse rep than it needs to3 -
We had rib steak from Costco yesterday with Brussel sprouts and carrots and boiled/finished on the grill pan fingering potatoes for dad and the frozen veggie fries and more sprouts/carrots for me.
Tossed the sprout/carrots in 6g butter and managed to coat (very thinly) all 900g (raw) of the mixed veg with sufficient tossing😹 Dijon mustard with the steak and it is not zero cal in quantity by the way!
It was a lot of food in quantity and a lot of cal (mine came in just over 1000) but it had way more staying power than a lot of other meals and I was easily good for 6 to 8 hours without munchies or candy seeking!
This bulletin board re-design... has sucked something out of this 😿 🥺4 -
Last Night's Pizza Dinner..
Gotta agree with you PAV .. this new message board layout and functionality is not user friendly at all. I've given up doing anything community based on my Android app - only ever posting when on the web version

NICE 'zza! The android app community is now connected again. i.e. not blank page...3
