Food inspiration, or what's for supper?

But come hell or high water she must do this her way - or forever feel she has no control over her own life. Maybe in a few years? Maybe in one year? I'm treading very delicate territory. So my approach will be to offer full out support and be a cheering section. Hopefully she will feel good about herself and be as happy as possible - and thus my son and The Boy will be happy also. They both know I would travel there in a blink. Perhaps that is a problem in itself?
I would wait until it naturally happens for you to travel there and visit, once they're there and established. Visit, gosh, it's lovely, etc. Arrange a second visit in 3-4 months, at the end of that visit, float moving there so you can be local. That way she has time to get settled and have things her way.2 -
Tonight I made a taco salad of great magnificence for Girlfriend, an al pastor with cheese sauce burrito with all the sides for Boyfriend, I had some leftover fried rice with chicken on top cause I saw it in the fridge and WANTED, and Son had himself a pizza that his wonderful mom had made and stuck in the freezer for him.
I'm doing precooking. There was an eleven pound pork butt that got cut in two and done in two slow cookers with onions and black pepper and several bottles of hard cider. That simmered overnight and I got 13 six ounce bags of meat out of that. Those get used for pulled pork wraps and pulled pork sandwiches, and as that is one of the "always available" meals, we like to keep plenty of it around. I find six ounces makes three wraps or sandwiches, and that's an amount that thaws quickly and gets eaten up before it goes bad.
I bought a two-pack of small pork tenderloin ends, and am cutting those into chunks to marinade in a Thai-inspired peanut sauce. I'll grill the pork and boil up the marinade as a dipping sauce when I serve this. Two pork ends are two meals for three of us. (Son is not into Thai flavors. Saturday nights he handles his own dinners.)
I got out my big cast iron dutch oven and cooked up three bags of spinach and one bag of kale into Thai spinach, which I serve as a side with both things like that Thai pork and with curries. Five bags of that, with each bag being two servings.
I made white rice and made it up into both four ounce and two ounce packets, and with the part that was left over made vegetable fried rice for later use as a side dish, packeted that up and froze it.
Currently I have apples rehydrating in hard cider to be put into apple cinnamon muffins for breakfasts. I thought about doing lemon-poppyseed, but right now I am having tooth issues so maybe poppyseeds are not a good idea. I buy the apples in packets freeze-dried. They're meant for snacking, but they're shelf-stable till I want them, and they rehydrate fast and I don't have the trouble of slicing and cutting a fresh apple up. I'll make the muffins tonight, too.
And then I'll clean up, because that blasted peanut sauce gets all over despite my best efforts, and sit and read and drink tea, and then go crash.
There's more to do tomorrow.

Love this, Alexandra. I know now is not the time, but it is always hard just "NOT" to do something. This brings in thoughts of something I CAN do eventually. If it seems like a good idea. Thank you.2 -
Those apple cinnamon muffins….rehydrated in cider😍….sound amazing!
Not sure what tea is going to be tonight ….Any ideas welcome! 🙃💡💡💡
Ah @lauriekallis feel for you and hope moving to be nearer The Boy becomes attainable…that sounds ideal for you all 💝
My oldest came down for a quick visit … I wonder about the feasibility of moving to Edinburgh one day, but have those thoughts of cramping their style & treading on their toes!
The youngest has also shared he has completed his application to live with a family in Japan to dive into another culture! Proud of him, but envious that some other “mum” gets him for a whole year!
I know I am being silly! But I am not looking forward to this next year much…

I know I complain about my family living with us but I might miss them if they were not with us!….although visits 5 or 6 times a year might be nice!2

Hubby decided to make whitefish for dinner since it is much healthier than red meat. I’m not a fish eater at all. I ate a filet. Less than 100 calories so it’s super high protein for very little calories, however it still tasted like fish. Lol He’s on a mission to find a fish that I will like. My poor stomach may not survive.3

Ended up being a veggie burger & bread bun from the freezer! Was alright? Need to do some shopping!3

Hello Gewel321!1

I don't like fish that tastes like fish, either. We handle this by feeding the people who like it fish and the people who don't have something else.
I feel pretty good today, so we'll see what all I can get done.5 -
I love fish, but I am picky about texture. Like, I enjoy Salmon, Red Snapper, Tilapia, Branzino... but I hate the texture of Cod. And I only like tuna either from a can OR raw, but not seared.
Tonight I am making a burrito bowl with rice, chicken, roasted corn, peppers, onions, salsa, sour cream, and avocado.3 -
I just don't know what's for supper tonight. I'm baking a cake for a friend...perhaps that will be supper tonight? Depends on how the calories for the day are going otherwise.
Field of greens salad for lunch - get the bunnies in before I have to rely on those cacao bunnies.2 -
I think you need to plan more bunnies🐇🐰 Laurie, before you touch the 🍫💩🐹🤣2

Last night John wasn’t hungry so I was on my own for dinner…I MIXED shredded chicken, black beans, mexi corn ,diced onions, peppers, tomatoes, and garlic in a pan…broke up 3 Las Bandertas corn tostados, poured my slop on top, added mozzerella cheese and it was so good…I had a huge plate of nachos for less than 500 calories!…was it as good as high calorie cheesy fat laden ones? No but it was pretty darn good probably 1/4 the calories and it filled me up!….we cant always have what we want when we want it!….now that’s a novel idea lol….4

Hey Connie. It has been a while. Back at it. Glad to see you’re still here and living your best life!3 -
Dinner tonight was grilled center cut pork chops, with mashed cauliflower, green beans tossed in bacon drippings with black pepper, and wild rice pilaf for me. Also there were cornbread muffins with butter, and applesauce.
I can handle about two ounces of applesauce with a meal without having too bad an intolerance reaction, so that is good. I'm feeling a little overstuffed, to be honest. But it was all very tasty. I'm just going to sit here for a minute and bask in the glow of yummy food.4 -
Trying to figure out some ideas to put in a salad. Thinking next week lunches will be salads. Chicken will be my protein of choice because I will be having eggs with breakfast. I also am not a huge fan of fruit in salad.2

Garbanzo beans, feta cheese, turkey, skinny girl poppyseed dressing, spinach, romaine, iceberg, walnuts or sliced almonds, shredded cheese, black or red beans, petite frozen peas….I love salad!1 -
Athijade - beans work well for me in a salad. Black, red kidney or mixed. They give it a real substantial feeling.2

Eating at maintenance today. I have a raging sinus infection and my body needs fuel to heal itself. At least that’s what the dr says. Let hubby make dinner while I rested. Chicken bites, Mac and cheese, and baked beans. 🤦♀️ He sure went for broke!4

Picked up one of these for supper tonight - PC Blue Menu Southwest-Style Chili Protein Bowl.
Not too bad. 280 calories 15 g of protein. Tasty. Salty (which tasted perfect to me today.
Brown rice and quinoa, peppers, soy crumble, beans and corn with chipotle sauce2 -

Tonight I am making a soba noodle bowl with shrimp, sugar snap peas, mushrooms, spinach, and green onion tossed with a thai almond sauce.2

Pre arranged schnitzel dinner with friends tonight. Kebab dinner with downstairs neighbors on Friday. What to bring/get for them? Unfortunately on top of multiple days (six out of last seven of basic overeating). Three of which just bad and three really bad. By my count a clear 3,500-4500 over maintenance in total
Have to actually estimate the full fish and chip and Betty Crocker baked downstairs overage before I know how much over in total. Not even hormonally driven (I do recall how that felt in the fall of 2020). Just your basic (tired and slightly stressed) 🐹 fail. Not even the good food aspect that was there only on some of the occasions (half of yesterday for example but not the other half). Actually finally smartenned up and tossed🙀 the extra cake I had asked not to be given in the nice green bin!👍4 -
Bring flowers - can’t eat those! Otherwise I guess the best answer for you PAV is to just control portions if you can’t control the food offerings. Try to resolve the stress as much as possible. Obviously you’ve had plenty of practice in maintaining by now.
Good work on tossing the cake! Sometimes you just have to hang in there and go forward....3 -

PS That was your classic rebound after taking the opportunity to go down five real trending weight lbs during the initial covid lockdown and then hitting the re-opening with dad stress and encouragement just as I should have been clamping down on the rebound tendencies and then straight into Canadian (October) Thanksgiving and Christmas season... which got me, in the end, the closest to the top of maintenance since I started muttering the M word in 2016
