If you can recover, and make progress then it's not too much volume. Eating at maintenance, you probably won't gain much muscle, but you can definitely maintain and build strength.

Exercises can vary, but in the big picture they should be the same exercises used to rotate in and out. Otherwise, how do you know what weight to use on the endless array of different/new exercises, and how do you track your performance and know if you're making progress?

See a doctor for proper advice. Focus on nutritious foods and to gain weight eat more calories than you burn. If you don't track calories you won't know if you are eating enough day after day. Lift weights so the weight gained will be nudged toward being muscle and not fat.

Calipers are the best easy way, and they're not that good. Bioempedence or whatever sucks. Unless you are getting those pod scans, or underwater weighing all the time, you couldn't track it acurately. Doesn't matter. Go by the mirror or a trusted second or third pair of eyes to know if you are going in the right direction.

Lift weights. Read a little, lay out a program and stick to it. You will lose a little fat, which is all you have to lose, and gain muscle, which will make you bigger in a good way. Eat more protein too.

There are different situations. Usually you either are employed by a gym, and get paid by them, or are self employed and either train out of a private gym, or pay gyms a monthly fee or percentage of your fees to train people in their gym and in exchange they steer people your way.
