For one person, blitz 1 banana and 2 eggs with a couple of drops of vanilla essence. Fry this batter into pancakes. It will remain moist in the pan for longer than a normal pancake. Don't be tempted to flip too soon. Amazingly good. Feels like an indulgence with or without syrup!

Baked chickpeas. Drain out a can of chickpeas and sling em on a baking tray. Sprinkle with plenty of salt, pepper and cayenne or chili flakes. Bake at around 180C for 20-30 mins. For an hour exercise for me - anything between 250-500. However, the exercise I always suspect does me more "good" in terms of strengthening and improving the shape of my body are those which seem to register the lowest calorie burn! (Think weights and ballet barre). I think the only reason I do explicit cardio these days…

I think it also depends on the type of person you are. I actually find the burden of other people's journeys, a bit overwhelming (I've never had an FB, twitter or Instagram account either). I don't want to deal with it and prefer to only dip occasionally into the forums like this, to find my motivation. This works for me…
