Id say Eating bread thin or not and including everything else during the day you won't hit your carb goal of under 50g the thins have around 20g carb each. Most people doing low carb don't use the substitutes either as they want to avoid any inflamation caused by grains.

In the long run it is very unhealthy which is why mfp set the minimum to 1200 calories. Add more high calorie foods to your day like peanut butter.

Possibly as with every other diet. vegan/vegetarion/paleo/clean etc are no guarantee of weight loss....calories are the king with EVERY plan. Edit because of grammar.

I'd double check all of the entries....make sure I didn't add 200lb or 3 m in height and my activity was right and if it was alright then eat what you like in the calories set.
